Detox, sober January, weight loss, gym memberships. . . my blog inbox has been completely inundated with press releases this week, and I have tossed all of them. I’m not one for extremes, especially when they all hit me at once. I am a firm believer that you can eat, drink, and be merry and also maintain a healthy balance.

Our lives haven’t changed much since the holidays, except for the fact that we have tried to work in more movement, more veggies, and a little less wine. Manageable improvements I can fully support.

This carrot salad is the perfect counterpart to a rich roast or some ginger beer pulled pork. It’s bright, tangy, and full of nutrition. It’s also great on its own or with some chickpeas and goat cheese for a little something extra. This salad is a reminder that healthy can be easy to integrate into a lifestyle and it never has to be all or nothing.

Ingredients

2 cups shredded organic carrots

1 cup toasted pumpkin seeds

1 cup dried cranberries

1 large shallot, diced

1/2 cup organic apple cider vinegar

black pepper to taste

Mix it all up and chill.

This salad is as easy as it gets, it lasts for several days, and it’s really yummy.

Happy Whole Grain Sampling Day! Today is a day for appreciating how good and good for us whole grains are, as well as how easy they are to incorporate into your diet. We’ve been swapping out regular tortilla chips for Late July multigrain chips, still enjoying our favorite salsas and guacamole with an added benefit of whole grains. If your diet isn’t rich in whole grains now, you don’t have to do an overhaul overnight! Adding whole grains in is as easy as swapping the type of bread you eat, tossing a healthy whole grain granola in your morning yogurt, or experimenting with different grains as dinner sides. A little olive oil and lemon juice is all it might take to make your new favorite whole grain side dish.

My whole grain recipe for today starts with Goose Valley Wild Rice, a whole grain that is high in protein and fiber. This sample came in my Whole Grain Sampling Day box, and  it’s the perfect base for a one pot meal or healthy bowl.

I simply cooked the wild rice according to package directions, prepping the rest of the recipe while that happened.

The other really important ingredient in this recipe is a spicy Harissa paste. It provides all of the flavor for this healthy and easy dinner.

I chose chopped cauliflower and carrots for this recipe, but any sturdy vegetable will do. I eyeballed measurements, mixing a little bit of olive oil into a can of Harissa, making sure I had enough to coat my vegetables. I then popped the vegetables into the oven at 425 for about 25 minutes. The smells coming out of that oven were amazing.

When the rice was done, I simply topped it with the Harissa veggies and stirred, then added crumbled feta cheese and raisins. I highly recommend these salty and sweet garnishes; they both made the spice pop and gave the dish a lot of contrasting flavors.

This dish is mostly hands off. In fact, I even got a short workout in when it was cooking. The temperatures outside have definitely risen, and I am finally starting to feel awake and alive again! Cheers to healthy eating and whole grains this Spring.

Just in time for the cold’s latest arrival, I have been spending evenings in one of my favorite ways, sitting in bed with lots of pillows and cook books, bookmarking recipes and getting myself a meal plan in place. We have gotten pretty darn bad with the takeout, frozen food, and snacks as dinner, and I am determined to stop that, especially since we had a recent family health scare.

While browsing through one of my magazines, I found a recipe for broccoli and cheese risotto, and I thought the idea sounded brilliant. I love any recipe that lets me sneak a vegetable in while also incorporating indulgent tastes like wine and cheese.

Now I rarely cook risotto the same way twice, and I definitely cook it by eye. If you are not comfortable doing that, following a recipe, especially when it comes to liquid measurements, is always helpful.

I always start my risotto by toasting the arborio rice in oil with a little onion or shallot, before I begin the process of slowing stirring in liquids. In this case, I got a pot of chicken stock boiling next to my risotto, reduced it to a simmer, and then started stirring it into my risotto, ladle by ladle, stirring until each grain soaks the stock up. About halfway through, I start adding little bits of wine, this time around a Shannon Ridge Chardonnay, until I have used about a cup of wine.

The stirring and adding liquid part of making risotto lasts for a good long time, so be sure to pour yourself a glass of that wine too!

Once the risotto is getting tender, it’s time to add in other ingredients. This is when I added in chopped broccoli, then continued stirring and adding liquid in.

When the risotto was to my liking, texture-wise, I added in a grated Kerrygold Dubliner cheese and served the risotto with a cold glass of Chardonnay.

This meal isn’t perfect, when it comes to eating “clean” or healthy, but it was complete and filling and a step in the right direction. Next time I would add a side of steamed spinach or a light salad to get in a little more nutrition.

Now that we are planning on moving to a new home, I am getting excited about holiday decorating and good wine and food at home. Tis the season to be a bit of a homebody, and I am definitely ready!
