Happy Whole Grain Sampling Day! Today is a day for appreciating how good and good for us whole grains are, as well as how easy they are to incorporate into your diet. We’ve been swapping out regular tortilla chips for Late July multigrain chips, still enjoying our favorite salsas and guacamole with an added benefit of whole grains. If your diet isn’t rich in whole grains now, you don’t have to do an overhaul overnight! Adding whole grains in is as easy as swapping the type of bread you eat, tossing a healthy whole grain granola in your morning yogurt, or experimenting with different grains as dinner sides. A little olive oil and lemon juice is all it might take to make your new favorite whole grain side dish.

My whole grain recipe for today starts with Goose Valley Wild Rice, a whole grain that is high in protein and fiber. This sample came in my Whole Grain Sampling Day box, and  it’s the perfect base for a one pot meal or healthy bowl.

I simply cooked the wild rice according to package directions, prepping the rest of the recipe while that happened.

The other really important ingredient in this recipe is a spicy Harissa paste. It provides all of the flavor for this healthy and easy dinner.

I chose chopped cauliflower and carrots for this recipe, but any sturdy vegetable will do. I eyeballed measurements, mixing a little bit of olive oil into a can of Harissa, making sure I had enough to coat my vegetables. I then popped the vegetables into the oven at 425 for about 25 minutes. The smells coming out of that oven were amazing.

When the rice was done, I simply topped it with the Harissa veggies and stirred, then added crumbled feta cheese and raisins. I highly recommend these salty and sweet garnishes; they both made the spice pop and gave the dish a lot of contrasting flavors.

This dish is mostly hands off. In fact, I even got a short workout in when it was cooking. The temperatures outside have definitely risen, and I am finally starting to feel awake and alive again! Cheers to healthy eating and whole grains this Spring.

Can I get a brrrrr? This winter is pretty atrocious, and there is no end in sight. Cooking at home helps; at least if you are near a hot stove you are warm for a bit! Easy recipes that combine fun bursts of flavor are getting us through these cold nights, and I whipped up the below with Chatham cod from Red’s Best that I picked up at the Dorchester Winter Farmers Market. I have been in a huge seafood mood lately, so if you have a favorite seafood recipe, especially one that is hearty, feel free to share it in the comments!

This recipe started with some thinly sliced potatoes and chorizo in a nonstick frying pan.

I added a tiny bit of olive oil, and I cooked the chorizo and potatoes until sizzling. I really wanted the potatoes to have a crunchy crust, and I just about got it. Next time I would definitely cook the potatoes a few more minutes.

Once the chorizo and potatoes were almost done, I added in four crushed garlic cloves and a can of crushed tomatoes, then mad room for the cod in the pan.

I put the whole thing into a 37 degree oven until the cod was flaky and the tomatoes were bubbly. It did not look very pretty, as you can see, but it was a dynamite dinner!  It cheered me up on a particularly blue Sunday. This meal was tasty and filling; I didn’t even want a snack later that evening!

I have been finding myself snacking big time at night, then regretting it, so I am trying to make more satisfying dinners and to stay away from the refrigerator at night unless I am actually hungry. I just want this winter to end. In the meantime, I’ll be hunkering down with food and wine and a fireplace.

This is the week, the week where I lace up my running shoes again, the week where we don’t go out for drinks and apps after work every single night. It’s time to stop feeling icky and lethargic and spending tons of money just because it’s cold and dark all.the.time.

I packed my running backpack in NOVEMBER, and the outfit inside has gone unworn. My intention was to take a couple of weeks off after the New York City Marathon to rest but then to start up running again so that I could capitalize on all of the training I did for my best marathon time ever. What actually happened was I got a week-long stomach flu five days after the marathon. The “I can eat whatever I want because I just ran a marathon” attitude went out the window, because I could eat nothing. Once that was over, Thanksgiving and house buying and work weekend events and a nasty fall on the ice happened. And then it was Christmas and family visiting from Ireland. . .

Now it’s just me recognizing my bad habits and hoping I can turn them around. I crave energy and vibrancy, and I hope I can make some good, healthy changes back toward moderation.

I want my meals to be healthy but also food that I actually want to eat. I’m so tired of things being healthified with powders and potions to the point where they are too gross to stand. I think a few veggies, like red peppers and carrots, added to this pasta would make it a great, healthy and filling meal.

A nice, melty sandwich is perfect for a cold night mid-week. I think these would go great with a spinach side salad.

 

Thursday

Dinner at Beat Hotel! I have been to Beat Hotel for a delicious dinner and again for their great wine list, and I am excited to bring a new friend and wine PR maven there to check it out.

 

Friday

Pizza! I really like Shaw’s Culinary Circle brand pizzas, and a thin crust Margherita with a glass of red and a fire is the perfect way to wind down the week!

 

In addition to the above, we’ll try to get five veggie/fruit smoothies in this week. We have been good about drinking maybe three and then slacking off as we near the weekend. I love the burst of energy I get from smoothies each morning, and heaven knows my body needs the nutrients. Chia pudding will also be thrown into the breakfast mix. Here’s to hoping a refreshed outlook on eating and exercise keep away sickness for the rest of the winter!
