I don’t even want to think about the fact that this is my last CSA Friday in July. That thought literally makes me want to cry, to feel a little panicked. I noticed one night this week that I needed to turn a light on earlier. I am trying to savor each moment of this magical season without thinking of the inevitable hell that is some of fall, all of winter, and much of spring, but it’s hard not to.

At any rate, our CSA share is showing its own love for summer in the bounty we have been provided. The past couple of weeks have introduced tomatoes, potatoes, garlic, lots of squash, and fields full of cucumbers in addition to various herbs and lettuces.

The new potatoes in our CSA last week were some of the most delicious potatoes I have ever tasted. Tender and buttery, they were perfect boiled up, then smashed with sautéed CSA onions, garlic, parsley, and butter. I let them sit until browned in the butter, and we ate them with a big salad. Simple, fresh, and local, this was one of my favorite dinners of the summer so far.

The arrival of heartier vegetables like carrots was more than welcome; these keep for longer than a few days and can still be eaten, lessening the frenzy to eat allthevegetables in one day.

Simple weeknight meals have included CSA carrots and squash mixed in with jarred sauce. I love this Golden Gravy, picked up at Fruit Center Marketplace in Milton. You can read about their amazing wine dinners here.  This butternut squash based gravy helped to turn our field veggies almost into a stew. It was perfect for some cooler nights.

A crazy abundance of cucumbers resulted in easy pickles. I simply cut the cukes into chips and set them aside while I boiled white vinegar, onion, garlic, sugar, and crushed red pepper. Once cool, I poured the vinegar mix over the cucumber chips and refrigerated. The end result was perfectly crisp, tangy pickle chips. The garlic from our CSA is something else. It is sweet and mild and easy to eat all on its own. It lends beautiful depth of flavor to dishes.

Finally, the last few weeks we have been devouring blueberries from our CSA. I planned rustic pies, but these are best eaten by the fist full. Sometimes they don’t even make it home. . .

My husband points out almost daily how my soul shines in the summer, and I am feeling it fully, from the tips of my sunbleached hair down to my bare toes. It’s been amazing to enjoy our CSA and the fruits of local farmers’ labor this year, summer coming inside our kitchen and staying, at least for now!

With so many people giving up carbs (again) these days, I think it’s really important to remember the benefits that carbs like whole grains can offer in our diets. Did you know that eating an average of 2.5 servings of whole grain foods each day can lower your risk of cardiovascular disease by almost one quarter? Or that three servings of whole grains a day can cut blood pressure, reducing risk of stroke by 15-20%? Whole grains are versatile and filling, and they are everywhere!

I am once again partnering up with Oldways and the Whole Grains Council to celebrate Whole Grain Sampling Day which is on April 2. I am working on a delicious, veggie and spice packed whole grain recipe for the day, but in the meantime, Oldways is giving me an amazing whole grains sampler to give away. We received ours a few weeks ago, and it is so full of delicious whole grains products like bread, rice, pasta, and chips, that it is taking us quite a while to go through it. This is the week, the week where I lace up my running shoes again, the week where we don’t go out for drinks and apps after work every single night. It’s time to stop feeling icky and lethargic and spending tons of money just because it’s cold and dark all.the.time.

I packed my running backpack in NOVEMBER, and the outfit inside has gone unworn. My intention was to take a couple of weeks off after the New York City Marathon to rest but then to start up running again so that I could capitalize on all of the training I did for my best marathon time ever. What actually happened was I got a week-long stomach flu five days after the marathon. The “I can eat whatever I want because I just ran a marathon” attitude went out the window, because I could eat nothing. Once that was over, Thanksgiving and house buying and work weekend events and a nasty fall on the ice happened. And then it was Christmas and family visiting from Ireland. . .

Now it’s just me recognizing my bad habits and hoping I can turn them around. I crave energy and vibrancy, and I hope I can make some good, healthy changes back toward moderation.

I want my meals to be healthy but also food that I actually want to eat. I’m so tired of things being healthified with powders and potions to the point where they are too gross to stand. I think a few veggies, like red peppers and carrots, added to this pasta would make it a great, healthy and filling meal.

Wednesday

Cranberry Jalapeno Salmon Melts

A nice, melty sandwich is perfect for a cold night mid-week. I think these would go great with a spinach side salad.

 

Thursday

Dinner at Beat Hotel! I have been to Beat Hotel for a delicious dinner and again for their great wine list, and I am excited to bring a new friend and wine PR maven there to check it out.

 

Friday

Pizza! I really like Shaw’s Culinary Circle brand pizzas, and a thin crust Margherita with a glass of red and a fire is the perfect way to wind down the week!

 

In addition to the above, we’ll try to get five veggie/fruit smoothies in this week. We have been good about drinking maybe three and then slacking off as we near the weekend. I love the burst of energy I get from smoothies each morning, and heaven knows my body needs the nutrients. Chia pudding will also be thrown into the breakfast mix. Here’s to hoping a refreshed outlook on eating and exercise keep away sickness for the rest of the winter!
