Easy, healthy, vegetarian food is what we need right now. I am more than a little bit upset with my weight gain over the last year, and I am realizing it’s true what they say. It’s much harder to lose weight once you’re in your 30’s. Keeping it off in the first place is the way to go, I have learned. My weight and health have been nagging me for most of the summer, but with marathon training, work, and social life, cooking has not been something I have wanted to do.

Figuring out quick, easy meals that offer great flavor is going to be the key to getting myself back on track, I think. I had a packet of Trader Joe’s Teriyaki Tofu laying around in the fridge, and I thought a banh mi would be a nice weeknight treat. I didn’t have to cook a thing!

The most labor-intensive part of this recipe was cleaning and prepping all of the vegetables and creating an amazing cilantro mayonnaise for the sandwiches.

On a crusty baguette, I layered cilantro mayo, sriracha, carrots, jalapenos, and tofu until the sandwiches were nicely stuffed. And that was that. A glass of Cline Viognier and some Real Housewives of Orange County rounded out the night, which began with a long run.

I’m definitely finding that as my training for the New York City Marathon intensifies, I really look forward to little treats like TV and good food at the end of the day.

Raise your hand if you’re a diner fan! Growing up in NJ, where the best diners in the world are, I ate at these cozy, sometimes greasy establishment for breakfast, lunch, and late-night throughout my entire life. When I visit home, I don’t get to diners often enough, but I often crave favorite diner dishes like chocolate chip pancakes, iceberg salads with homemade dressings, and Reuben and Rachel sandwiches.

I don’t crave the not-so-healthy, salty corned beef that results in feeling not-so-great. Enter the Tofu Reuben. Sure, sandwich purists will laugh at this one, but our dinner last night was one to remember. It gave me the same flavors and textures of a traditional comfort food in a slightly healthier version. Served up with mixed greens and a light, homemade blue cheese dressing, it was a perfect meal. All it needed was a big slice of pie from a rotating dessert display.

 

Ingredients

1 block of extra firm tofu, liquid pressed out

1/2 cup Worcestershire sauce

2 cups of red cabbage, shredded

1/2 cup rice vinegar

4 pieces whole grain bread

thinly sliced Swiss cheese, as much as you’d like to melt over your Reuben

1 cup Russian dressing

The magic of this recipe starts with tofu that’s been pressed and drained, sliced into thin slices, and marinated overnight in Worcestershire sauce. When ready to get started on the sandwiches, get a nonstick pan nice and hot, and use tongs to place tofu slices in the pan. You’ll want to hear a nice sizzle.

Let the tofu sit perfectly still on high heat for a few minutes before flipping. The outside should have a nice crust. Once both sides have a nice sear on them, pour remaining Worcestershire over and let it cook down.

While your tofu is sizzling, mix up the cabbage and vinegar and simmer on low until it cooks down. It will be tangy and vibrant with a little bit of crunch.

Before you’re ready to assemble your healthy Reuben sandwiches, you’ll want to make sure the bread is nicely toasted so it doesn’t get soggy. Either  a toaster or oven works perfectly. I let my bread toast up at 375 while I prepped everything else.

The last step is building your sandwiches, tofu, cabbage, Russian dressing, and Swiss cheese slices. I popped these in the oven at 375 for about eight minutes. Swiss cheese melts quickly!

While the sandwiches were baking, I made a delicious, homemade blue cheese just by mixing up buttermilk, Greek yogurt, blue cheese crumbles, garlic powder, and salt. This definitely rivaled any restaurant dressing I have had recently and made for a light topping for fresh mixed greens.

Our Reuben sandwiches were out-of-this world, crazy good. We definitely didn’t miss the meat because all of the flavors were there, and these sandwiches were very filling.

This is another “make this now” sort of meal. If you like lots of flavors, textures, and a sriracha kick of spice, this healthy dish is for you. Luckily it makes lots of leftovers and is even more delicious after it’s been sitting for awhile!

I planned to make summer rolls, but was feeling lazy was really hungry and didn’t want to make individual rolls. Tossing everything together turned out better than I had hoped. I would love to add some noodles to this for a little extra bulk. Otherwise, it was just perfect.

The ingredients:

1 block of firm tofu, drained, crumbled and seared in a pan on high heat until lightly browned

3 cups of grated carrots

2 large jalapenos, chopped

1 cup peanuts, roughly chopped

8 – 10 leaves of mint, shredded

juice of 1 lime

Before I started any other prep, I drained the tofu, crumbed it into a frying pan, and turned the heat to high. This tofu, from Trader Joe’s, was particularly watery, and exposing it to high heat dried it up and made it a lot more firm. If you have time, putting the chopped or crumbled tofu in the oven at a low temperature for a long time is also a good way to dry it out. Or you could buy a tofu press, which I definitely need to do.

Next up, I pulsed the peanuts a few times to get them roughly chopped and prepped my jalapenos, mint, and lime. My dear husband did all of the carrot grating.

When the tofu was nice and dry, I just tossed the tofu, peanuts, mint, jalapeno, and carrots in a casserole dish and squeezed the lime over. Then came the best part, the amazing dressing I made for our gyoza over the weekend and that I now want to put on everything.

1 cup of rice vinegar

1/4 cup or more of sriracha

a few drops sesame oil

chopped cilantro

If you like the above ingredients, you will want to find food to put it on. It is amazing, and it’s kind of how this whole dinner came about.

The salad was seriously tangy, spicy, crunchy and offered a warm and cold contrast between the tofu and the rest of the ingredients. It also brought a little brightness to an otherwise very dreary day. I need the sun!

Meatless Monday is always a fun way to ensure we eat vegetarian eat least one day a week (though we usually do 3-4 days) and a nice time to try a new recipe or whip up something fun on your own.
