Our CSA continues to fill each week with a little bit of excitement and lots of healthy local produce. The last couple of weeks have simply been bursting with summery delights like heirloom tomatoes, peaches, and corn, possibly the best foods in the world (paired with a lovely Rosé, of course)

 

Heirloom Tomato BLT

As is often the case in the warmer months, simple was really our goal in highlighting the beautiful food provided by our local farmers. Big, juicy heirloom tomatoes and crisp local lettuce lent themselves to quick and easy, yet completely heavenly BLTs while green beans were perfect sautéed in a little olive oil, chopped garlic, and black pepper.

Each week brings its own share of greens, and I imagine that will continue once summer ends. Rainbow chard is yummy chopped and cooked down with a little olive oil, a great balsamic vinegar, and some salt and pepper. This would be a great side dish for a good cut of beef and your favorite red wine.

We drooled over the fresh peaches we received, super juicy and sweet. They were more often than not eaten on their own, but once warm night called for a peach and tomato salad topped with goat cheese and a little fig balsamic. Simple and perfect.

Finally, while we did eat plenty of corn from our CSA, the below dish is actually from my beloved Steel and Rye. Their soups are always phenomenal, and this chilled corn soup was one of my favorite dishes of the summer.

Charleston, South Carolina, in just a few short days during a work trip years ago, became one of those places I want to visit again and again. I just haven’t made it back quite yet. It’s beautiful, it was in the 70’s in January, there’s a waterfront, lots of great shopping, and of course amazing food, like the dinner we had at High Cotton. Ever since, I have craved shrimp and grits, fried oysters, and fried green tomatoes.

To whip up an easy, summery meal, I decided the other night to make my own low country boil.

Old Bay

A low country boil could not be easier, and it made for a really full flavored meal that we ate picnic-style on the kitchen floor. I love the ease of summer!

Here’s what I included in my low country boil:

1/4 stick of butter

1/2 large white onion, chopped

2  jalapeños, chopped

1 package turkey kielbasa

3 ears corn, broken in half

20 medium shrimp

enough water to cover the corn

Putting the boil together is as easy as heating the butter in a large pot, adding the onion and jalapeño and letting them cook for a couple of minutes. I then poured in the water and Old Bay and added the corn and kielbasa and waited for it to come to a boil. The shrimp went in very last, and once they were pink, the boil was done. I don’t like my corn too cooked (in fact I nibble it raw sometimes!), so if you are making this, you may want to add a little bit of time after everything starts boiling.

Because I was having a major craving for clams, I also made a bunch of New England steamers and butter as a side. This meal was perfection!

It’s that time of year again; the grills are out, the farmers markets are open, and friends and family are getting together to celebrate the season. It’s the perfect time for easy, fresh food, and I thought the below recipes were worth re-posting. Here are a few of the things I find most delicious in the summer time. Add to these a nice cold beer or glass of bubbly, a steamed and buttered lobster, and some raw oysters, and you have my perfect summer feast. I am very excited about June. I have my annual girls’ weekend at the Cape (Go UMASS!) next weekend, and we are finishing the month off with a family trip to Sanibel Island. Get me to the beach!
