Well happy Friday! I am only working a couple of full weeks in August, and this was one of them. Getting used to taking Fridays off definitely makes the five day work week harder!

Luckily we have some delicious local produce to talk about today. Our Red Fire Farm CSA is bountiful and summery, bringing us tons of joy in addition to a lot of healthy local food. The past couple of weeks have yielded tons of tomatoes, eggplant, blueberries, peppers, peaches, chard, cabbage, lettuce, and more. Each week is such a fun surprise!

In the past week, I used dandelion greens for the first time, both in a salad with a honey balsamic dressing and goat cheese and in a frittata with eggs, local onions,  and parmesan cheese. Dandelion greens are SO good for you but are very bitter. Tailoring the ingredients around them to cut that bitterness makes them a flavorful delight. Aren’t they pretty?

At a backyard BBQ over the weekend, I enjoyed peach margaritas made by my husband’s cousin. The peaches weren’t from our CSA, but they were as delicious as ours. I don’t know that there’s anything more summery than fresh peach margaritas. Here’s a peach margarita recipe from Bobby Flay.

CSA veggies have made their way into just about every meal this week, lots of times in salads or on the grill. Above is from a night out in the garden, just the two of us and some great filets, grilled eggplant, salad, and a Lavau Côtes du Rhône Rosé 2013. It was the perfect summer meal, paired with an incredible wine. More Rhône Rosé love to follow on Wine Wednesday.

Finally, I have been doing a little prep work for life beyond our CSA.  I have made and frozen some tomato and other veggie purees, hoping that sometime in January we can open them up and they will be like time capsules of summer. It’s a nice thought, anyway.

Easy, healthy, vegetarian food is what we need right now. I am more than a little bit upset with my weight gain over the last year, and I am realizing it’s true what they say. It’s much harder to lose weight once you’re in your 30’s. Keeping it off in the first place is the way to go, I have learned. My weight and health have been nagging me for most of the summer, but with marathon training, work, and social life, cooking has not been something I have wanted to do.

Figuring out quick, easy meals that offer great flavor is going to be the key to getting myself back on track, I think. I had a packet of Trader Joe’s Teriyaki Tofu laying around in the fridge, and I thought a banh mi would be a nice weeknight treat. I didn’t have to cook a thing!

The most labor-intensive part of this recipe was cleaning and prepping all of the vegetables and creating an amazing cilantro mayonnaise for the sandwiches.

On a crusty baguette, I layered cilantro mayo, sriracha, carrots, jalapenos, and tofu until the sandwiches were nicely stuffed. And that was that. A glass of Cline Viognier and some Real Housewives of Orange County rounded out the night, which began with a long run.

I’m definitely finding that as my training for the New York City Marathon intensifies, I really look forward to little treats like TV and good food at the end of the day.

I am a huge fan of Zico coconut water, Dr. Praeger’s products, and Artisana (huge fan) already, but I was thrilled to revisit them. I had never tried the acai berry nut butter, and it was amazing. Amazing. I want to fill my desk drawer with little packets of these nut butters for healthy and filling snacks.

I also really loved the Truebar; it was coconutty and delicious, a little dessert a little nutrition bar, all good. The Roots powder was pleasantly surprising. The blueberry really did taste like blueberry, and I felt a little boost in my energy when drinking it in the afternoon. I used to be a devotee to superfood drinks, and I definitely think I need to get back into that. My body deserves it, and my mind needs it.

I tried the seaweed snack, and while I liked it better than most dried seaweed, I will be honest and admit I wasn’t crazy about it. Nothing wrong with the product; I just don’t love seaweed unless it is in sushi! These crumbles might be good mixed up in a salad, especially with cucumber and shrimp, to emulate sushi. In fact, I might try making that this weekend!

Overall, I really loved the selection in the Bestowed box, and I am definitely thinking about joining so that I can try a selection of products every month.
