I camped in the Serengeti. If that was the only thing I could say about travel in 2015, that would be enough. This was, I believe, my most-traveled year of my life. From November 2014 until the end of December I made three trips to Ireland, about seven trips to NJ, two Sonoma trips, a Chicago trip, a Myrtle Beach and Charleston trip, and many New England weekend trips, including Mystic (twice), Newport, Portland, and Cape Cod. Phew. Can I do it all again?

Throughout the year, especially August – November where I flew about every two weeks, I swore I wanted a quiet, homey 2016, but here I am, once again wanderlusting. So much of the world to see and such a short life. I am grateful for each corner of it I have been blessed to see. Here are just a few highlights from my 2015 travels.  Since there are so many photos to share, I am going to break this up into two posts. . .enjoy!

I will never forget the first elephants we saw in Tarangire National Park. Mind, blown. I’m getting a little teary-eyed just writing about it.  I fell in love with the Tanzanian landscape, the food, and the warm welcome of the people. And the kids. I absolutely loved and learned from these little ones.

Between November 2014 and November 2015, I got to visit Ireland three times, which made it feel even more like home. Over the course of the Ireland trips, we got to eat my favorite things and to spend lots of time outdoors.

Seeing Ashford Castle from a boat on Lough Corrib was sensational. Ashford Castle and Cong are must-visits on any trip to the West of Ireland!

Ziplining in Ireland was another step outside my comfort zone. Between camping and zipping, I feel like I was pretty brave in 2015! Ireland visits gave us a lot of family time, something I would like to be better about in 2015. I need to slow down and be present; travel and family make that happen.

Galway was Galway, and with the length and frequency of our trips, I got to spend a lot of time just being there, and I loved it.

In addition to logging international miles, I also zigzagged across the country twice this year to visit Sonoma for work! In June I traveled to Sonoma County to meet a client and to plan for Sonoma Wine Country Weekend PR and Social Media. Combining work and one of my favorite places was, as you can imagine, pretty amazing.

There was obviously a lot of food and wine but also learning and connecting.

I loved the wine at Ram’s Gate and Fog Crest and Cain and so many others. Getting to take not just one, but two trips to the high country at MacMurray Estate Vineyards, a journey reserved mostly for press and other VIPs, was one of the highlights of both trips.

Easy, delicious, and cozy, both of these dinners made it into the week’s meal plan, and they will have a permanent location the rotation moving forward. I’ve been in a major cooking slump for some time, and I am excited to be interested in cooking again and in craving my own food rather than takeout or restaurant meals, which have been happening way too often!

Pesto Shrimp and Pasta –

I had been craving pesto in a major way for a while, and while I usually consider it more of a summer sauce, with basil being in season and all, I have a really great, easy winter pesto that I love. Like most of my “recipes” this calls for mixing things up until they taste good to you. I use a mix of spinach, grated parmesan cheese, walnuts, tons of garlic, and olive oil, which I picked up at the Olive Connection. The pesto would be great on chicken, any pasta and as a side to a gooey wedge of brie and a baguette for a quick and easy Christmas appetizer. This dish could be made vegetarian with the addition of white beans in place of the shrimp. I think that would be a delicious substitute!

The other, absolute must-make, if you love Indian food. This Slow Cooker Chicken Tikka Masala was SO easy and delicious, with a side of Basmati rice and steamed spinach for a bit of green. I used a recipe from The Kitchn; please see below for the recipe I started with. I cooked the onions, garlic, ginger, spices before adding to the slow cooker, and I used a lot more Garam Masala and ginger. My palate loves strong flavors, and when making this again I would add some chili peppers for extra spice. Overall though, this meal was incredible and the leftovers made me look forward to lunch the next day. To make this vegetarian, cubes of pan-seared tofu or chickpeas would sub in really well. Make it vegan with coconut milk. It’s all about the sauce!

Slow Cooker Chicken Tikka Masala

 

Serves 4 to 6

1 to 1 1/2 pounds boneless, skinless chicken thighs
1 large onion, diced
3 cloves garlic, minced
1-inch piece whole ginger, peeled and grated
2 tablespoons tomato paste
1 to 2 tablespoons garam masala
2 teaspoons paprika
2 teaspoons kosher salt
1 (28-ounce) can diced tomatoes
3/4 cup heavy cream or coconut milk
Fresh cilantro, chopped
2 cups cooked rice, to serve

Cut the chicken thighs into bite-sized pieces and transfer them to a 3-quart or larger slow cooker. Stir in the onion, garlic, ginger, tomato paste, 1 tablespoon of garam masala, paprika, and kosher salt until the chicken is evenly covered with spices. Stir in the diced tomatoes with their juices.

If you have the time: Marinate the chicken in 1/2 cup yogurt for up to 6 hours. Shake to remove excess yogurt before transferring to the slow cooker.

→ If you have the time: Sauté the onions and garlic in a little olive oil over medium-high heat in a skillet until softened, then stir in the ginger, tomato paste, and spices until fragrant. Transfer to the slow cooker with the chicken and diced tomatoes. This will give your tikka masala more depth of flavor.

Winter whites. I wish I could wear them, but with me being generally accident-prone year-round, and with the dirty, wintry conditions of city-living,  they don’t make it to my wardrobe. Winter white wines, however, are more than welcome in our home, and I love to have a chilled, hearty white wine with a roasted chicken or other cozy meal. For recipes, please visit my recipe post page.  Today’s wine of the week, like last week’s was enjoyed at my favorite Galway wine bar, Sheridan’s. If you ever visit Galway, definitely give it a try!

Domaine de Coussergues Chardonnay Viognier

Tasting notes for this Domaine de Coussergues Chardonnay Viognier blend actually call it a summer wine, and while I can see that, I think it’s perfect for colder weather. The Chardonnay gives it a crisp acidity and citrusy notes, but it’s the Viognier that makes it stand up, giving it that weighty mouth feel that I love most about Viognier. Baked apricot and mango, big, forward, ripe fruit make this wine pack a flavor punch with a lingering finish. I loved it and loved that, when in Europe, I am better at trying European wines, where at home we tend to drink a lot of wines from the US. One of my favorite parts of tasting wine is discovery of a new favorite in my glass or a new place I want to visit.

Don’t limit your wine pairings to what other people  might find seasonally appropriate; enjoy what you like year-round!
