Ahhh summer. Time for simpler meals cooked and eaten outdoors with friends and family, lingering into the later evening hours to enjoy that extra daylight. It’s also a time for prep-ahead less fuss meals, which makes meat and veggies, marinated overnight, some of my favorites for summer cooking.

Chicken marinated in a mix of yogurt and some sort of herb or spice blend is a favorite. Yogurt makes the chicken super moist and flavorful.

One of our dinners last week was just that, chicken breasts marinated overnight in a mix of Fage 0%, the only Greek yogurt I use these days, and salt-free dill seasoning.

Because I marinated it for over 24 hours, the chicken was super tender and absorbed a lot of the dill flavor. I didn’t grill, was too last to clean the grill pan. Instead, I cooked it in a frying pan and topped with thawed butternut squash at the end. It was a random combination, but I wanted something healthy, and it worked.

Here are a few other great ideas for marinating meat or veggies this summer!

Chicken:

Plain old Italian dressing! It can easily liven up the most boring chicken.

Lime and cilantro: It’s fat free and helps to tenderize the meat. Just don’t put it on too early. Citrus can “cook” proteins (as in ceviche).

Cider vinegar, brown sugar, and tomato paste: A quick BBQ sauce, use some as a marinade and reserve some for dipping later.

Olive oil and garlic: Another simple one, and a favorite for marinating and grilling strips of fresh summer zucchini and shrimp.

As far as beef goes, you know I don’t make it that often, but below is a marinade recipe that has really been a crowd hit in the past. It makes people think I know what to do with beef.

Mouthwatering Steak Tips Marinade

Free range, grass fed steak tips

1 cup Jacob’s Creek Cabernet Sauvignon

1/4 cup extra virgin olive oil

Juice of one whole lemon

4 cloves garlic, minced

pinch of rosemary

liberal sprinkle of freshly ground black pepper

1/4 cup brown sugar

If there was a Maoz in Boston, I would eat there for lunch every single day. Have you been to a Maoz? Prior to our trip to DC, I had only eaten at Maoz in Europe, Amsterdam, many, many times. I stalked Maoz, checking out where new locations opened up, never seeming to be in a place I would be visiting.

As soon as our trip to DC was planned, I had Maoz on the brain. I only wish we had gotten there sooner.

This quick, casual, take out or eat in spot is glistening with cleanliness, bright, and a nice cool break from the oppressive DC heat.

Maoz offers salads, falafel, fries, fresh juices. The menu is small, but focused on high quality vegetarian food. I usually get some form of falafel, either in a salad or in a pita, and then start in on the toppings.

From pickles to olives, seasoned carrots, red peppers, beets, onions, and chickpeas, you can build yourself a lunch that is packed with textures, flavors, and nutrition.

And then there are the sauces. Salsa, clantro sauce, pickled onion chutney, tahini, creamy garlic. . . there are so many, and I usually have a bit of everything.

Maoz is an amazing option for an inexpensive lunch while traveling. The one in DC seemed to be a hot spot for nearby workers. We were there at noon on a Monday, and it was buzzing with takeout orders. I long to be lucky enough to work near a Maoz in Boston. Someone open a franchise, pretty please?

Because it was so hot, we followed lunch in another cool place that I don’t often get to, Pinkberry. Mango fro yo with fresh raspberries. I love that they offer really small portions for people looking for a little treat.

The sun finally came out on Wednesday after many long days of dreary, rainy weather that frankly made me hate Boston. I mean, we survived the winter from hell, craving sunshine and heat, only to enter a spring that has so far involved eight day stretches of rain.

It certainly took its time, but it arrived at the perfect moment, for the Sam’s at Louis patio party. Having already eaten a delicious brunch at Sam’s, I knew that the patio was a gorgeous place to eat, but  what I didn’t realize was that it is THE best place in Boston to watch the sun set. More on that later.

I had plans to meet Daisy at the event, and we found each other just before going in.

How beautiful is this dining space? Sam’s really utilizes their perfect waterfront location with floor-to-ceiling windows all around. There is both a modern, chic, city feel and a light, airy, vacation-y feel to the dining room.

Once outside, we were faced with more gorgeous views, along with cocktails and wine. The signature cocktail for the evening was a mix of tequila, grapefruit, muddled cucumber, soda water, mint, and maybe something else I am forgetting. It was garnished with a salted cucumber and turned out to be one of the most refreshing cocktails I have ever had.

The food started coming and didn’t stop all night. We ate very well! I loved these mini lobster BLT’s. They were perfect for celebrating National Lobster Day!

I also found this quinoa salad to be amazing. I don’t always love quinoa, but the flavors and the ratio of fruit to quinoa was perfect and has me inspired to make something similar at home.

These little pulled pork nachos had a nice kick and a crunch. I could have easily eaten a whole plate of these!

Throughout the event, I also sampled pancetta braised endive with grapefruit and sesame brittle that was absolutely, positively to die for and a crispy jalapeno crab rangoon with plum gastrique.

And then I decided to stay for dinner.

The location, food, and vibe were too perfect not to share with my husband, who had a long day at work and loved the idea of a mid-week date.

He ordered the girliest drink on the menu. And I ate more crab rangoon.

We watched a gas tanker sloooooowly pull out of Boston Harbor, surrounded by police. All of the effort (not to mention how potentially dangerous a tanker full of lng is!) made me really wish we had more sustainable fuel sources, but I tried to block that from my mind.

I went for a healthy option for dinner, garlic grilled eggplant with spicy romesco sauce and toasted almond orzo pilaf. I closed my eyes during lots of bites of this. It was absolutely incredible. Replacing the rice with orzo made me love pilaf, the crunchy almonds making for a beautiful contrast. The romesco was a perfect match for the hearty grilled eggplant. Vegetarians will be very happy at Sam’s!

My husband opted for the burger, which he thought was amazing, and I stole about half of his perfectly crispy fries.

We lingered over dinner long enough to see Boston bathed in light blue and pink, the prettiest I have ever seen it.

Sam’s provided both the group of bloggers and my husband and me with gracious, warm welcomes, impeccable service, delicious food, and a place to really relax. I learned last night that private boats can also pull up on the little marina outside. When our poor, sad boat is back from the mechanic, Sam’s will be our first stop!
