Snow Day

Snow days are good for the soul. I am not known for my love of winter in general, but when snow falls at a convenient time (weekend or holiday) or is enough to keep my husband working from home, I don’t mind it. I just like for it to melt quickly rather than lingering, freezing on un-shoveled sidewalks, and turning filthy.

Saturday was just that sort of day. Last week I completed five pretty intense workouts. I won’t lie; I am super proud of my Boston Marathon training right now. I will never be very fast, but I feel strong and healthier than I have in marathons past. But the workouts make me crave fat and rest.

I also had a bunch of meetings last week with new or potentially new clients. Being a consultant is like constantly job-hunting it seems; putting myself out there so much is something that takes it out of me every time. I’m not naturally outgoing. . . at all.

By the time Friday night rolled around, I was achy, hungry, and exhausted.

The remedy? A snow day.

After sleeping for over 10 hours (!), I woke up to this. With nowhere to go, I read blogs, sipped on tea, and relaxed until I was ready for a spinning workout. I had planned on a day off, but the sleep made me feel so good!

And baking a chocolate chip cookie pie.

And bringing that chocolate chip cookie pie, along with a bottle of one of my favorite wines, Piazzo Barbera, to our neighbors’ house for a lasagna dinner and movie watching.

This Barbera was one of the first wines I ever tried and purchased at The Urban Grape. It was such a solid introduction to their taste in wine, and it is one of the reasons we keep going back.

We watched Bridesmaids, feasted on lasagna stuffed with spinach, mushrooms, and turkey sausage, with a side of a garlicky bread, and followed it up with my cookie pie topped with vanilla bean ice cream.

We made the short, snowy walk home just after 11 pm and had another early-to-bed night. It’s great having neighbors who are also good friends. Despite all of the complaints we have about our actual condo, I love our neighborhood, especially in winter and summer!

I am pretty proud to stay that we have both been doing a really good job of working out 4-5 days a week, eating healthier, and cutting back on the old wine since 2012 started. I know it hasn’t been that long at all, but we feel great, and since we still allow plenty of indulgences (Hello, Old Fashioned’s, grilled cheese, and fries at Eastern Standard), we can keep it up. My health goal is basically not to be kicked down again this winter by the flu while my husband, who drives two hours a day and works for 12-14, is just to move more. However, if I end up a little faster and more toned, I will take it.

As you might have noticed, I have been blogging a little less (five days a week instead of six or seven) and not always about food. I have also felt that by not having to think of blog-worthy meals, I can focus on fast and healthy. If you have any topics that you are interested in reading about, let me know!

This dinner, which I also ended up eating for several lunches, is worth sharing because it was so delicious, quick, and satisfying.

We often order burrito bowls from our beloved South End spot, El Triunfo. They’re basically everything but the actual tortilla, which I rarely like, so they are perfect. In order to save some money, I decided to make our own burrito bowls, also known as salads. Winking smile

My burrito bowl was a pretty easy mix:

Chopped romaine (I so prefer eating salad that is chopped into small pieces)

1 1/2 cups of black beans that had been soaked and slow cooked with chili and garlic powders, canned are also fine

1/2 of a ripe avocado

Homemade lime crema – This is why I am blogging about the burrito bowls. It is my new favorite salad topper and veggie dip. I added the juice of a very juicy lime to a cup of Fage Greek yogurt, added a few teaspoons of olive oil to get a more dressing-like consistency, sprinkled in chili powder. . . and wanted to lick the bowl clean!

It has been a slow work week. Normally this would cause me to freak out that I will never have enough work to keep me busy ever again, but the new, 2012 Meghan has embraced the quiet. I still have a terrible cough and have felt exhausted, plus I worked a ton of hours leading up to New Year’s weekend. I am thinking that if my business does move more toward food, wine, and hospitality, the holidays will always be a busy work time, and my quiet time will come after. I am okay with that. But if you know anyone looking for Marketing help, send ‘em my way.

Despite trying to be okay with a slower work schedule, I get bored very easily. I wanted to go to the MSPCA to walk dogs, but since I literally didn’t feel strong enough to go anywhere, I needed a home project. Somehow, even though our house is a mess, cleaning is never that project; it most always involves food. I decided to break out the Salty Sweets recipe book I received at the Boston Brunchers birthday brunch.

The recipe for the Nantucket cookies, with white chocolate chips and dried cranberries, topped with sea salt, seemed like a good option, and since I had most of the ingredients on hand, I went for it.

The recipe called for dried cranberries, but I split it in half an mixed in dried cherries because I am exciting like that.

The recipe also called for both brown and white sugar; I only had white so I just used half the sugar. I am not much of a baker, but I think doing this is okay, right? I am sure the brown sugar would have added lovely flavor, but I actually liked that the end result wasn’t very sweet.

The real problem with these cookies is that the dough was SO dry. I followed the rest of the recipe, and it just seemed like it needed a little liquid. It was impossible to get the dough into a cohesive ball that wasn’t crumbling all over, and when I went to make individual cookies, all of the berries and chocolate chips were falling out.

I had to push them back in. It was really frustrating to work with, very messy, and I almost called it quits. Who needs cookies, anyway?

I did the best I could, popped the cookies into the oven at 375 for eight minutes as the recipe said, and got started on cleanup. At 8 minutes, they were nowhere near done; they ended up taking about 15 minutes.

In the end, though a bit dry, these cookies were really good. Because of the fruit and white chocolate, they have little bursts of sweet and sour. I am certainly not a baker, so I am sure whatever went wrong with the dough was my fault. If you get your hands on the book Salty Sweets, give them a try, and let me know how it goes for you.

The funny thing was, with fresh-baked cookies in the house, I actually wanted a glass of fresh vegetable juice instead! I have been, in an attempt to rid myself of this everlasting illness, juicing up carrots, apples, and garlic daily and loving it. Garlic and apple taste surprisingly good together!
