Graham cracker crust, a gooey brownie center, and toasted marshmallows make for a crowd pleaser in the Campfire Brownies recipe from Karen Covey’s The Coastal Table. I picked up this book at an event held by the Urban Grape way back in December, on a day where it was unbearable to walk the few blocks to the wine store from my hair salon in the South End. Karen is an absolute delight and lovely writer, and the book, focused on coastal living and eating in Southeastern Massachusetts, was a little bit of hope in a dreadful winter. I spent a lot of time browsing through the recipes and stories of farms and other sources of food and drink in Massachusetts. When I was asked to participate in a virtual potluck to kick off the summer, I didn’t hesitate for a second, though I did have a hard time deciding what to make. In the end, I made Campfire Brownies, a sweet addition to an afternoon of boating with friends. Sharing food and wine with friends out at sea in a New England summer is my heaven, and The Coastal Table is a little slice of that.

The Campfire Brownies start with a buttery graham cracker crust. The smell of the crust baking as I prepared the other ingredients was enough to wake up my husband that Sunday morning. I should get up early to bake more often.

Atop the crust went a brownie batter made of chocolate and more butter, along with eggs, flour, sugar, salt, and vanilla.

I let the brownies bake until still slightly underdone, then added flat marshmallows, which are simply made for these brownies. About 30 seconds under the broiler was all these needed to turn into campfire-like toasted marshmallows.

I still don’t know the strength of my new (but very old) oven, so there were some marshmallows that were a little more crisp than others. Our guests didn’t complain!

The only difficult part of this recipe is cutting through the marshmallows. I waited as long as possible for them to cool, but the marshmallows were still warm and stuck to the knife, making cutting a little difficult. Overall though this recipe was straightforward, even for the worst baker ever, me.

The Coastal Table

The Coastal Table is a visual vacation; you need not be near the sea to feel like you can almost smell the briny air. The book contains gorgeous photos and stories, along with recipes that include cocktails, picnic foods, baked goods, and of course, the beautiful seafood that graces the seas around us.

With so many people giving up carbs (again) these days, I think it’s really important to remember the benefits that carbs like whole grains can offer in our diets. Did you know that eating an average of 2.5 servings of whole grain foods each day can lower your risk of cardiovascular disease by almost one quarter? Or that three servings of whole grains a day can cut blood pressure, reducing risk of stroke by 15-20%? Whole grains are versatile and filling, and they are everywhere!

I am once again partnering up with Oldways and the Whole Grains Council to celebrate Whole Grain Sampling Day which is on April 2. I am working on a delicious, veggie and spice packed whole grain recipe for the day, but in the meantime, Oldways is giving me an amazing whole grains sampler to give away. We received ours a few weeks ago, and it is so full of delicious whole grains products like bread, rice, pasta, and chips, that it is taking us quite a while to go through it. I am a chip-a-holic. True story, if I had to pick a last meal, it would involve chips and salsa and guacamole, a buttered lobster, oysters, and really good fries. And Champagne, obviously.

Chips are a regular part of my diet, so when faced with healthier options I am always curious and sometimes disappointed. That was not the case when it came to the arrival or my Way Better Snacks chips. I was most excited to received this sampler pack of chips because of the Pumpkin Cranberry Tortilla Chips (There’s a bag missing from the below photo!), but I quickly learned that all of the Way Better Snacks chips offer great texture and flavor and stand up to chunky salsa, guac, and my favorite hot sauce. They are also perfect all on their own.

Here’s a little bit about Way Better Snacks’ story:

It all started with a simple vision to create a better snack.  We wondered, wouldn’t it be great to go back to a time when the food we ate was actually nutritious and good for you.  You know, before decades of environmental harm and mega food conglomerate processing wiped out most of the nutrients which used to be abundant in the food your grandparents ate.  To make products you could feel good about eating again and sharing with others.  Well, with that in mind, we decided to do just that.  And we were led to the miracle of germination (you might know it as sprouting).  Now we know that nutritionists and naturalists have been touting the incredible nutritional benefits of sprouting for years.  And we knew how sprouting unlocked all the “good” that is inherent in all grains, seed and beans and brings them back to life (nutritionally speaking).  So we thought, why then couldn’t we combine the powerful benefits of sprouting to a great tasting snack?  You know sort of like those old TV commercials with that guy and girl tripping into each other with their chocolate and peanut butter.  Anyway, you get the picture.

So, supported by the memories of simpler days gone by, we began to craft our products.  And after many tries, we can say we’re proud to share Way Better Snacks with you.  All are high in omega 3’s, antioxidants and other vital nutrients, and all are low in sodium and saturated fat.  Way Better Snacks!  They pretty much named themselves.

First, let’s talk about the Pumpkin Cranberry Tortilla Chips. They are a teensy bit sweet, delightfully salty, a little buttery, and chock full of good ingredients. My sister doesn’t like pumpkin anything, and she loved these. There’s no overbearing pumpkin spice latte flavor here at all.

Way Better Snacks

I love that the ingredients list on Way Better Snacks is short and full of real food. Little bits of quinoa and flax hidden in my chips? Yes, please. I will take a little added nutrition when I am snacking, especially because these don’t taste healthy or cardboard-y like many other healthy products.

My second favorite flavors were the Sweet Chili, which make me think a little bit of Doritos, in the best way ever, and the Sweet Potato, which offer a nice sweet potato flavor and a serving of fiber. Each and every one of the Way Better Snacks has some sort of healthy addition, whether it be whole grains, antioxidants or both, all from natural sources like broccoli and daikon radish seeds. I found myself craving these chips, and if I am good about doling them out into Ziploc bags for single servings at work, I think they make an excellent addition to my daily diet. Maybe notsomuch when my hand, mouth, and an entire bag spend an afternoon together, while I’m icing my ankle prior to the NYC Marathon. . . even healthier foods in moderation!
