The time has come; this is my last post from our November trip to Ireland. Way to drag it out, right? I can’t help but share some of the many photos I took there, and for my wrap up I thought I would share a few photos from our wanders around Galway, including the food.

photo 1

{Prawns Marie Rose at Kettle of Fish in Galway} This was our first time to Kettle of Fish, and we loved that it was fast, fresh, and delicious. It’s a great alternative to fast food chip shops for a quick lunch or snack in between pints.

Ard Bia at Nimmo's

{Ard Bia at Nimmo’s} I love Ard Bia for a romantic date or lunch, but it’s equally as nice for an Irish coffee or glass of wine. I love that Galway has SO many cozy, casual little nooks for drinks and good conversation.

Barna Woods

{Barna Woods} You might not find Barna Woods in your guidebook, but not far from Galway City Center, you will find this magical space, with big beautiful trees, meandering streams, and mossy stones. It’s a great place for a long walk or run. Plenty of adorable dogs are an added bonus!

photo 4 {St. Nicholas Collegiate Church} Once my front yard, this stunning building is a must-visit in Galway for lovers of architecture and history. Its 400 year old baptismal font and 13th century graves are just part of the history of this place, where Christopher Columbus prayed in 1477.

Galway Bay sunset

{Watch the sun go down on Galway Bay} It’s so spectacular that there is a song about it. A Galway Bay sunset is one of this world’s greatest sites, and I try to plan our day around the sunsets so we can see as many as possible.

Spanish Arch Door

{Beautiful doors and stone work at the Spanish Arch} Part of Ard Bia, this door and all about the Spanish Arch is full of charm and beauty and mystery.

Neactain

{Tigh Neactain} This is one of our favorite Galway pubs. There are teeny tiny snugs for sitting in, a warm fire, and often great music. They pour an excellent pint of Guinness as well. Garavans

{Garavan’s} What might be considered an old man bar now has a great selection of whiskey and offers whiskey flights you won’t want to miss.

Long Walk Galway

{The Long Walk} Also made famous by a song, the old long walk is a beautiful, colorful seaside spot in Galway. You’ve likely seen photos of it before; it’s iconic and worth a visit, especially at sunset.

Vindaloo at Kashmir Galway

{Vindaloo at Kashmir} Yummmmm Kashmir. This Galway favorite serves up the best Indian food I have ever had. Don’t miss it if you plan a trip to Galway.

Our next trip to Ireland is in August for a friend’s wedding and some mountain climbing. . . counting the days until we touch down on that beautiful green island once again!

I’ll be perfectly honest and let you know that I want nothing to do with the Super Bowl. I find professional football to be boring (College is way more fun.), and the NFL has really not been a model citizen. . . well anytime in recent history. But I do love snacks and an excuse to get together. This year I will likely cozy up with a fire and a good movie or book, but I wanted to share some of the Super Bowl snacks that have caught my eye as I browse the web (and my own blog, of course).

Guinness Beef Stew

Guinness Beef Stew – I love recipes you can prep before company comes, and this one just gets better as it slowly simmers.

Pulled Pork in Ginger Beer – This is another make ahead of time recipe, with sweet, tangy, and spicy flavors and endless options for topping. Lots of pickles for mine!

Spiced Caramel Bacon Popcorn from ArtBar at the Royal Sonesta – Full disclosure, I work here. This popcorn is relatively easy, and everyone LOVES it. It is an addictive snack, so just double the recipe to be safe.

Buffalo Chicken Sliders by Boston Chic Party – This is one of my new favorite blogs, and since I love all things buffalo chicken, these are perfect.

Habanero Garlic Brushed Calzones from Eat Live Blog – Pizza dough with lots of flavor goes perfect with a good cold beer and a cold Sunday night, don’t you think?

Cashel Blue Cheese Dip from Kerrygold – Cashel Blue is such a delicious cheese, and this simple dip looks amazing.

Chicken Enchilada Dip from BranAppetit – Brandi has been one of my favorite bloggers for years, and this dip looks perfect for the big game.

Beer Mac and Cheese from How Sweet Eats – Beer Mac and Cheese? yes.

Super Bowl Cocktails from We are not Martha – Beer isn’t the only drink welcome at Super Bowl parties! Cocktails pair well with junk food, as does sparkling wine!

Salted Chocolate Turtle Graham Bars from Confessions of a Chocoholic – You have to have dessert, and who better than to choose a recipe from than Bianca!

I don’t know about you, but we have a LOT of shoveling to do. A few feet of snow will result in a few hours of shoveling our sidewalk and driveway, and I hope everyone around us does the same if they can. After all of the falling I did last winter, I am terrified of wandering around on treacherous sidewalks.

I am officially ready for Spring, but if you have to be stuck inside, making and eating dessert is a fun way to pass the time, especially after you’ve burned so many calories shoveling! Here are a few easy and decadent dessert recipes to make on a snowy (or rainy, or any) day.

peanut butter pretzel truffles

Peanut Butter Chocolate Pretzel Clusters – So easy, so delicious!

banoffee pie

Banoffee Pie – One of our favorites!

chocolate and butter in a double boiler

Flourless Chocolate Cake

Guinness

Guinness Ice Cream Floats – St. Patrick’s Day is on the way!

bread pudding

French Toast Bread Pudding – Since there’s always a run on bread, milk, and eggs before a blizzard, French Toast is a must. Turn it into dessert in bread pudding form!

At least in Boston, there’s nowhere to go on days like today! Make something delicious, take a nap, pop some bubbly and enjoy the pause in busy life.

Are you snowed in today?
