We all know that making desserts is definitely not a favorite pastime of mine. While I might enjoy eating sweet treats every now and then, they are not often made in my own kitchen. Every now and then, though, the urge to create something decadent pops up, and the holiday season is definitely a catalyst.

With salty and sweet on the brain this weekend, I took a little bit of time to make a very simple, three-ingredient dessert that would be a perfect hostess gift, snack at an office party, or just something nice to crunch on around the house.

The ingredients:

eight peppermint candy canes, crushed into rough pieces

three cups mini pretzels, crushed into pieces

16 ounces of white chocolate chips

melted white chocolate

The toughest part of this entire recipe was melting the white chocolate, which I did over a makeshift double boiler, making sure not to splash any water into the chocolate. I  added a small pat of butter to the melted chocolate to make it smoother. I always do this, and it turns out fine, but afterward, I read that you are not supposed to use butter because it contains water. Oops.

Once the chocolate was melted, I mixed the pretzels, chocolate, and half of the candy canes and smoothed it out on to some wax paper, topping it with more candy cane for a festive red and white look. Once everything was cool, I broke the bark into pieces and stored in an airtight container, making sure to grab a few bites. It’s delicious, combining some of my favorite seasonal flavors, and it took no time at all. If you find yourself needing to make something yummy and fast this holiday season, look no further.

I spent the entire afternoon cooking dinners and lunches for the week while listening to Christmas music, and at the very end of the day, we decorated our little tree. We used to buy a full-sized tree but found it to be kind of a pain, especially since we often travel for and after Christmas. This little guy is just perfect. It’s kind of amazing how much spirit and light a little decoration can add to the atmosphere of a home. We’re a lucky little family.

Yes, you read that correctly. I am embracing the flavors of the new season, and in an effort to make something cozy and delicious, whipped up Slow Cooker Pumpkin Pudding Cake last night.

I originally started finding pudding cake recipes when I was researching what to make for Megan’s Virtual Bridal Shower. I decided on the Apple Cider Cake then because I thought it would be more visually appealing. That is, of course, until it fell apart coming out of the Bundt pan.

But I digress. It turns out that slow cooker dessert recipes are perfect for me because they result in a gooey mess that you just have to love despite its looks.

Pumpkin is already flying off the shelves at our local store, so in lieu of Libby’s I settled for this banged up can of store brand. Get your pumpkin while you can find it!

The recipe itself is super simple. The first half consists of mixing all of the ingredients except for the warm water and 3/4 cup brown sugar, then putting it in the greased slow cooker.

The second half consists of mixing the remaining brown sugar with water and pouring it in over the batter, being sure not to mix the two halves together. The result did not look very pretty, but I had some faith, set the slow cooker on high for two hours, and got started on dinner.

Before we were ready to eat the pumpkin pudding cake, I made a spiced cream topping, a quick blend of Greek yogurt, sour cream, confectioners sugar, and cinnamon.

I served the pumpkin pudding cake warm with the cinnamon cream topping. The cake itself was definitely a mix of pudding and cake. The edges got lightly browned while the middle was soft, turning the whole thing into a sort of spiced pumpkin caramel. The topping was just the icing on the cake, adding a cool creamy element and cutting the sweet a little bit. All in all, the perfect fall dessert.

Pumpkin Pudding Cake Recipe from BetterRecipes.com

1 cup Flour

1¼ cups Brown Sugar, divided

¼ cup Granulated Sugar

1 tsp Pumpkin Pie Spice

2 tsp Baking Powder

dash Salt

¾ cup Canned Pumpkin

1 tsp Vanilla

1¾ cups Hot Water

½ cup Chopped Pecans

Whipped Cream

Directions:

Spray a 4-quart crock pot with nonstick cooking spray. In a large bowl, combine flour, 1/4 cup of the brown sugar, granulated sugar, pumpkin pie spice, baking powder and salt; stir to combine. Add pumpkin and vanilla; stir well. Pour into prepared crock pot. In a medium bowl, thoroughly stir together remaining brown sugar and the hot water. Gradually pour over batter in crock pot, but do not stir. Sprinkle with chopped pecans. Cover crock pot. Cook on high heat setting for 1 3/4 to 2 hours or until a toothpick inserted in center comes out clean. Serve with dollops of whipped cream.

If we went out to dinner every night of the year, perhaps we could eat at all of the restaurants in the Boston area that we want to try. While our waistlines and budget deny us that frequency of dining out, we definitely do love to try new restaurants whenever we get the chance.

Birthdays are the perfect excuse for going out, and last week my husband decided he wanted to give Erbaluce in Boston’s Bay Village a try. While he often chooses a steak dinner for his birthday, this year the heat swayed his decision, and I was secretly glad. (Though I do love a nice steak house martini and lots of veggie sides!)

I had an idea of where Erbaluce was located, but I was kind of surprised to see just how close it was to other places I had frequented, like Legal Seafoods and MJ O’Connor’s in Park Square, where I worked for over two years. I walked past Erbaluce many times and never saw it!

Bay Village

It is absolutely charming, housed in a brick building with overgrown, bright flowers adding to the homey, cozy feeling of the space. Inside is just as cozy, with a small bar and two small dining rooms. It was so quiet and romantic, in fact, that I decided I did not want to take photos inside and risk interrupting anyone else’s meal. I grabbed a glass of Tenuta Santome Prosecco and waited for my husband at the bar. I loved this Prosecco; instead of having really forward pear and apple flavors like some Prosecco tends to have, it reminded me more of Champagne, with a toasty nose and flavors of brioche, vanilla, and lemon curd.

All was well until a big group with a toddler walked in. The staff at Erbaluce was more than accommodating, but it just doesn’t seem like the place for a child. I definitely didn’t expect to have people constantly wandering around the dining room chasing after a little one!

Once we got past our surprise, we settled in to enjoy some fabulous food, wine, and service. The menu featured many options that we both wanted, and in the end we were so happy with our choices. Above is the sunflower appetizer that we shared, too pretty not to photograph. It is literally the head of a sunflower with the seeds removed. It was topped with ricotta, bread crumbs, and a delicious dressing, surrounded by sunflower petals which taste just like carrots. This was a fun way to start the meal and paired nicely with my Sicilian white, Maggio Vini Inzolia “Pithoi”. I want to go to Sicily SO badly!

For dinner I went with the bluefish, always a favorite fish of mine, and here it was cooked perfectly with a beautiful sauce that included mustard. My husband had the boar ragu and pasta. We polished both plates clean.

When it was time for dessert, we thought about going home to enjoy the cake and fruit sent by family, but when we saw a honey panna cotta, we really wanted to give it a try. Erbaluce also surprised us with their signature cherry chocolate mousse and a candle to cap off the celebrations. The panna cotta was silky and lightly sweetened while the mousse was very rich and flavorful. I loved both; next time I would save more space so that I could finish them!

A strong Arabic coffee infused with cardamom finished off the night and somehow didn’t keep me awake. Every morsel and sip of this meal was perfection.

Erbaluce (minus one toddler) is the perfect date night spot, quiet, romantic, with a menu that changes frequently, tons of seasonal specials, and food that is crafted like art. The wine list, all Italian wines, is impressive as well. I can’t wait to return, maybe for our August anniversary.
