The title is a mouthful, isn’t it? And this easy pasta salad was too, a mouthful of lemony, garlicky, summery flavors, perfect for a late Sunday dinner at sea.

Making food for boating is tricky. It needs to be something that will keep fairly well and that will fit in the small fridge or in our cooler bag. And it has to be enough for a five or six hour trip, usually for four people.  One of the things I learned early on as a little boater was that eating is imperative. It’s actually when you don’t eat that you get more sick. So packing substantial food is key, and being creative is always important to me.

So important that Saturday night I could not sleep because I didn’t know what to make for a dinner outing with friends. We had cheese and crackers, pretzel thins, cookies, and salami, but we needed more. At around 4 am, I finally figured out all of the ingredients for this Lemony Arugula Pesto Tortellini Salad.

While a container of Trader Joe’s spinach tortellini and a half a bag of orrechiette boiled, I whipped up a simple pesto made with several cups of arugula, a cup of baby spinach, garlic, juice of a well-juiced lemon, olive oil, sea salt, and parmesan cheese.

The pesto was just so bright, due to the lemon, and slightly creamy from the parmesan and olive oil. It was bursting with flavor, and my warm pasta drank it in.

To the pasta I added a can of artichoke hearts, rinsed and chopped.

And two cups of sweet grape tomatoes, chopped in half.

Three chicken breasts were chopped, tossed in the pesto, and baked until done. Them using my vegetable scissors, I shredded the meat to top the pasta salad.

Once chilled, the salad was the perfect light summer dinner, packed with protein and flavor, keeping us full as we bobbed along the waves and watched the sun go down over Boston. I am definitely going to be brainstorming more creative pasta salad ideas for the summer, just hopefully not at 4 am.

Chicken salad has become a staple in our weekend boating diet. Simple to pack and bring along to eat with bagels, wraps, crackers, or slices of baguette, it’s a filling meal that staves off hunger at sea. Our friend Jill is a magician in the kitchen and makes one of the best chicken salads, and we have been luck to have her bring it along lately.

Even after eating it several times in a row, I found myself craving chicken salad this week and decided to whip some up using seasonal ingredients I had in the house. What resulted was far different than what I planned on making, but is definitely a new favorite recipe in this house.

I started with a bunch of organic chicken tenders, tossing them in olive oil and curry powder before putting them on a hot grill pan.

Once all the chicken was cooked through, I chopped it finely and set it in the fridge for the afternoon while I got back to work. One of the many joys of working from home.

A few hours later, I chopped half of a small red onion, a few ribs of celery, and a jalapeno and tossed them with the chicken, along with a heaping tablespoon of mayonnaise.

I sprinkled in a bit more curry powder, tossed everything together, then added a sweet ingredient, chopped fresh peaches. The juice mixed in with the rest of the ingredients and made for a nice sweet, soft contrast with the crunchy celery and spicy jalapeno. A bowl of summer was born!

I served the chicken salad in Tortilla Land tortillas which I had cooked and then let come to room temperature and filled with baby spinach. My camera battery died, so I didn’t get a shot.

I am excited to eat this chicken salad for lunch today!

How is your week going so far? Is it crazy that I am already very ready for the weekend? I am taking a half day Friday for a fun food tour, so I am trying my best to get as much work done as possible during the week. It’s a little overwhelming.

I kicked Healthy Recipe Week off last night with a delicious modification of a sometimes-fattening favorite, white chili. The recipe I started with was on the Kerrygold website (psssst check back Monday for a Kerrygold giveaway!). Along the way I added some tweaks and changes and made it healthier but just as satisfying as the original. One step at a time, right?

First, I gathered my ingredients:

1 can white beans, 1 super large chicken breast, 1/2 yellow onion, 1/2 bag spinach, 2 large jalapenos, 1 cup 0% Greek yogurt, and a splash of whole milk

First, I washed the spinach and chopped it up using my favorite veggie scissors. Then I chopped the jalapeno and onion and added all of the veggies to a bit of olive oil to get simmering.

In the meantime, I cooked and chopped the chicken using the same scissors which are perfect for making pulled pork and other chopped meat.

Once the chicken was cooked, I added it and the white beans to the vegetables, then folded in the yogurt.

At the end I added the splash of milk. The original recipe called for two cups of whole milk, so I saved a lot of fat and calories here. The yogurt added the richness and creaminess that I was looking for along with calcium, which I have been lacking in these days.

Once the chili was done, I made room for fun toppings including a sprinkle of Kerrygold Dubliner cheese, some smoky garlic chipotle salsa, and some guacamole.

At the end of a long day visiting with our nieces, shopping, and looking at boats, we had a quick, hot meal, didn’t spend a fortune and didn’t feel gross after eating. I need to remember that feeling more often when I want to go out for an extravagant meal or order something not-so-healthy or worse, skip dinner and end up eating crappy snacks late at night.
