Even though we moved to our new neighborhood a little over a year ago, we are still loving exploring it and trying out new-to-us places. Lower Mills Dorchester/Milton is a GREAT place to live, and we love it. You can read about our earlier Lower Mills adventures here.

Right after we got back from Ireland this December, we found ourselves still having a little wanderlust, and so we planned a little road trip to the Wayside Inn in Sudbury. We needed some sort of to-go breakfast, so we decided to check out The Plate, which is in Milton, not too far from us.

The Plate serves “handcrafted comfort food” and from my first bite of my biscuit sandwich, it was easy to see why The Plate is always crowded. It’s an adorable little shop that serves breakfast, lunch, pastries, and classic comfort food dinners-to-go.I have become obsessed with above biscuit sandwich, which comes with artisan cured ham, cheddar cheese, and red pepper jelly. Their egg sandwich comes in a close second, with its roasted tomato and spicy aioli. One I haven’t tried is their bacon, banana, and Nutella sandwich. . . but I really think I might need to soon!

As you gear up for another cold and snowy Boston weekend (unless of course you are reading from somewhere else, hopefully a warm place), keep The Plate in mind for a satisfying, inexpensive breakfast option. I know we will likely be there one of the weekend days!

Is it Spring yet? I am so over the cold, wind, and snow. I spent the weekend with my family in New Jersey, and while they didn’t have snow, they had plenty of cold and wind. All I want to do until April is cozy up under a blanket, drink red wine, and eat.

Getting away for the weekend was wonderful, made especially so because last week was awful. Between a stressful week at work, no sleep, and being diagnosed with a lung condition, thanks to my neighbor’s insistence on smoking inside, I was ready to collapse with exhaustion on Friday. Lots of sleep and family time later, and I am feeling better. . . but still lacking in energy. I think I just need some warmth and sun.

Healthy comfort food is always a win-win; you get to eat something warm and cozy while also feeling good about feeling your body with nutrients, despite wanting nothing more large quantities of cheese.

I was in the mood for eggs and sweet potatoes, so for dinner last night I came up with a quick and easy sweet potato skillet hash, topped with eggs.

Since my amazing husband braved the snow on Sunday to fully stock the house with groceries, I had a lot of delicious add-ins to make this easy dinner pretty spectacular.

Ingredients:

large sweet potato, grated

2 cups black beans

2 cups frozen pepper strips

1 cup corn kernels

2 eggs

guacamole, hot sauce, Greek yogurt, hot sauce, and cilantro for topping

I threw this dinner together by sautéing the potato, beans, peppers, and corn together in some olive oil until the pan was dry and sizzling at the bottom. The plan was to create a crust with the potatoes.

I cracked two eggs and gently placed them on top then popped the skillet into a 400 degree oven and kept an eye on it until I saw that the whites were fully cooked. This resulted in perfect, slightly runny yolks. Yes.

We added our own mixes of toppings to our bowls of hash; mine included lots of cilantro, guacamole, hot sauce, and a tiny dollop of Greek yogurt.

This made for a delicious dinner that didn’t make me feel bad about my food decisions. It seems that the second I stopping being able to sleep, I lost the excellent workout routine I started with my new job, and poor eating habits followed, which finally resulted in constantly beating myself up over weight gain, something I haven’t done in years.  Time to get back on a healthy track while also being a little easier on myself, I think. It’s also time to start some serious yoga and/or meditation to create a little quiet when everything feels like overwhelming chaos.

What do you get when you combine bacon, caramelized onion cheddar, and almond meal (plus eggs, oil, baking powder, and milk)? The answer is incredible savory muffins just perfect for a post-workout breakfast. Or a lazy breakfast in bed. Or as the base for an egg sandwich. You really can not go wrong.

Ever since my first almond meal cooking experiment, the almond meal pizza crust I made a few weeks ago, I have been a huge fan of almond meal, adding it to yogurt for an extra bit of protein and making cakes with it. I’ve been doing some more weights leading up to the kickoff of my NYC Marathon training, and I have definitely felt the need for protein.

I knew I wanted to bake something else with almond meal, but I didn’t want it to be sweet. A quick Google search brought me to this recipe for Almond Meal Cheese Muffins, and other than omitting the parsley, I followed it exactly.

I decided to use a cheddar with caramelized onions from Trader Joe’s as my cheese. If you see this cheese definitely pick it up. It’s delicious.

I mixed up all of my ingredients, popped the mix into my muffin tin, and let the muffins bake for about 18 minutes. The smell of baking cheese is delicious. When I studied abroad in Ireland, my roommates and I would line baking sheets with foil, sprinkle them with shredded cheese, and make our own cheese crackers since we couldn’t find them there. The smell of these muffins kind of reminded me of that.

When they were ready, I let them cool and then gave one a try. Light, fluffy, savory, these muffins got me thinking about other combinations and additions. These definitely won’t be sticking around for very long. . .

Are you a sweet or savory/salty breakfast person? I personally can not eat things like donuts or Danishes for breakfast; if I do I crash big time and it’s really unpleasant. With all of the protein from the almond meal and bacon, these are just about perfect.
