Happy Thursday! Here’s to hoping the weekend brings better weather than we have had this week. Brr!

I have started to develop a MAJOR travel bug over the past couple of weeks, and I have spent a good bit of time looking through old travel posts, photos, and going online looking for great travel deals. I want to go somewhere!

Luckily, I found some unreleased photos from our trip to Ireland and the Czech Republic this past winter, and as I was reliving fun travel memories, I thought I would share them with you.

I loved walking over the Charles Bridge in Prague, but talk about cold! It was FREEZING while we were visiting as you can probably tell from my getup!

We enjoyed a visit to an underground wine bar where we sampled Czech red wine while warming our toes. It was amazing and a little creepy to be so far underground. I love how old European cities are; if those walls could talk!

Another day, we visited a grand cafe overlooking the Old Town Square and the Astronomical Clock. I enjoyed a real hot chocolate topped with thick, homemade whipped cream.

Back in Ireland, I made sure not to miss any of my favorite food haunts. McDonagh’s Fish & Chips is always a must stop, and I usually skip the fish and go straight for the chips with curry and garlic sauce. What can I say, I love my Irish chips!

Ireland offers 4 seasons in a day, and by the time we finished our chips and were heading toward the Spanish Arch to the car, we saw these kayakers coming in out of the fog. Creeeeeepy.

We have all been there, and some of us spend more time there than others. You know, completely stuck with a house full of somewhat random food, no desire to go shopping, and a growling tummy.

This was me two nights ago. My post-marathon legs did not want to carry me to the grocery store, and my poor husband is working 90 hour weeks, so I didn’t even want to ask him.

Enter the cabinet prowl. I pulled out the trusty old garlic, crushed red pepper, a box of whole grain spaghetti, a can of crab (I know, fresh is better, but I did have this on hand for crab cakes or salad. It’s actually quite tasty!)

I also had some capers left from my delicious Mediterranean bean dip, so I also got those out along with a can of tomatoes and a bottle of olive oil.

Crushed red pepper makes everything better.

Into the pan went the olive oil, several cloves of chopped garlic, and crushed red pepper. I sautéed those ingredients together until the garlic was soft and fragrant, then added the drained tomatoes, drained crab, and capers.

I simmered the sauce for about 10 minutes while I cooked the pasta, then drained the pasta and mixed it into the pan with the sauce so that the flavors could mix and mingle. Topped with crumbled goat cheese that melted throughout, this meal was so delicious! It tasted like something that I had actually planned 🙂 and I would make it again. Zingy capers, sweet crab meat, and garlic went well with the slight acidity of the tomatoes.

Since I recently received a couple bottles of Laurenz V. Grüner Veltliner to sample, I thought that the sunny spring evening we were having would be a perfect time to pop one open.

I chilled this wine for only about an hour which ended up being a really good decision. I have been drinking white wine at a warmer temperature than I used to. Drinking it too cold can hide some of its flavor because it numbs your taste buds. Drinking the wine only slightly chilled allows for all of deliciousness to come out 🙂

When I first opened this bottle I smelled lots of crisp Granny Smith apple. The taste is so lovely, not too acidic and not too sweet. It went well with the pasta and also with the curry crab dumplings that I had the next night 🙂 I think this wine would be excellent with Thai food, Indian, sushi, or even a nice grilled fish this summer.

With the Boston Marathon right around the corner, I am trying to really kick up my good food intake. I absolutely love making chili because of the diversity of ingredients that taste good all mixed together, its easy to make in large quantities and freeze, and its perfect for work day lunches.

I started out this chili with several cups of dried lentils, mixed beans, and split peas. I soaked them overnight and through the work day the next day to be sure that they would be ready for cooking.

One of the key ingredients of the chili, and one of my major weaknesses, pickled jalapenos. They are slightly spicy and pack a flavorful punch, so I like to chop them and add them in the chili, then put them on top as well.

I don’t normally put kale in my chili, but I thought, why not? It offers such great nutritional value and pairs well with lentils and beans.

To start off, I sautéed red onions and garlic in olive oil, then added some tomato paste to bring a nice tomatoey richness to the dish.

I then added in the chopped jalapenos, canned tomatoes, corn, kale, and my spices, cayenne pepper, paprika, cumin, and red pepper flakes. I like it spicy!

Mmmm. This chili was SO good. It felt great eating it too. Just for fun, I decided to use a recipe calculator to see what great nutrition this dish had to offer.

A 1.5 cup serving packs 35% of your RDA of iron, 67% of your Vitamin C, 68% of your folate, and 18 grams of protein, among other things. This will definitely be a repeat creation in our house!
