Our magical time in Puerto Rico seems like it happened years ago. . . I am craving warmth and sunshine in a big way, and Boston is not delivering! The trip was full of relaxation, beach time, and lots of local food, which we tried in all sorts of places, including at Los Kioskos, the kiosks in Luquillo, a must-visit for anyone traveling to the area.

The kiosks are a long stretch of roadside food stands, some small storefronts and others more upscale restaurants, all facing a beautiful beach. The kiosks give you access to about 60 different eating and drinking options with some shops and even a piercing and tattoo studio mixed in!

If you’re visiting Luquillo, you’ll want to visit the kiosks more than once to sample the variety of food there. We loved fresh, tangy ceviche at the Ceviche Hut, along with their peek out at the ocean. This was always a packed spot; you can tell it’s popular and that the seafood flies out of there!

After our hike at El Yunque National Forest, the burgers at the El Jefe kiosk were calling our names, as were their delicious rum cocktails! I loved my Caribbean BBQ Burger with avocado, red onion, and pickles and hand cut fries as much as I loved my rum punch. This would definitely be a spot I would visit again; the menu offered burgers stuffed with chorizo and short ribs, which both sounded decadent and delicious, perfect for a slightly cooler day.

burgers for lunch We also loved that many of the places had happy hours. Tattoo Tavern was great for this as well as for live music later in the evening. I almost got my nose pierced again, but the tattoo/piercing part of the business was closed when we went back. Next time!

One of our favorite kiosks for a more sit down dinner was Terruno, where we found incredible local music, dancing, and dinner, along with really friendly and welcoming service. We didn’t stop smiling the entire time, as we chowed down on fried cheese with guava and shrimp mofongo with a garlic sauce.

fried cheese Seriously, this shrimp was pure heaven. Sharing an appetizer and a main course was enough to fill us up and to get us ready for a night of moving to the music. Such warmth and local flavor to be found by visiting the kiosks!

mofongo empanadas On another night, we did a couple of appetizers at Mata de Platano where again we went with seafood; crab empanadas and salmon skewers, again delicious and served with true Puerto Rican hospitality.

Our final stop at the kiosks was Edelweiss, known for their extensive beer selection and, you guessed it, friendly staff. Edelweiss is the perfect post-beach spot to start your wandering of the kioskos; most places allow you to take your beer to go as a refresher while you browse the other kiosks.

We really only visited a small handful of the kiosks but spent a lot of time wandering up and down the stretch, seeing families enjoying meals, friends out dancing, people on dates, and lots of people just relaxing after work. It’s a great spot to see how the locals enjoy life, one another, and good food.

It was actually hard to find a week in April that I would be home for dinner for three days, between our trip to Maine, family visiting from Ireland, events, and general busy-ness, but I did it! Though my husband doesn’t think it’s dinner without meat involved,  I am trying to help us live longer and be kinder to the planet, so I went with one vegetarian meal (Lentil and Mushroom Shepherd’s Pie), one meat meal (Sliders and Gorgonzola Salad), and one fish meal (Cod with Broccoli and Orange).

I was excited to see our Just Add Cooking box when we pulled up to the house (Placed in the shade, thank you, delivery person!) and tucked right into to see what was inside. As I mentioned in my past post, the packaging is minimal and is recyclable or reusable. The cold bag it came in is even compostable! It’s mixed in with my compost as we speak. And I am using the paper bags and little cheese cups for planting seedlings. The box itself is a cat hideaway.

One of the most fun things about digging through the Just Add Cooking box is seeing what local farms provided ingredients for that week’s meals. I love recognizing names like Fresh Box Farms for my greens and Vermont Creamery for my butter, and I was thrilled to see Red’s Best fish in there as well! I have been a huge Red’s Best fan ever since I went to an event they held years ago.Vermont Creamery

First up was the cod, which was a “hard” recipe. It basically had three components, prepping the couscous, broccoli, and fish separately, but I didn’t find it difficult. I love how Just Add Cooking times the recipe for you so everything is ready at the same time. I also loved that they definitely listened to my feedback. Last time I mentioned that I wish there were more vegetables, and sure enough, we had tons! I even had broccoli left over for an omelet the next day. The orange sauce was so yummy, and I loved the couscous in yogurt with chives. So easy and flavorful! The cod, of course stole the show. It was fresh and perfect.

Red's Best Cod Next up were the Sliders on a Gorgonzola Dressed Salad. This was a very easy one and also provided leftovers. The gorgonzola sauce was heavenly, and I loved the greens and addition of black beans for fiber and even more protein. The only downside in the recipe was that the burgers needed more of a dry binder, maybe some panko crumbs or something, to hold them together. I was really full from this dinner, which was great, because I wasn’t rooting through the cabinets at 10:00 pm looking for a snack!

The third dinner was the easiest of all. We love Shepherd’s Pie, and this lentil version definitely gave the traditional meat option a run for its money. Mushrooms and red wine added an earthy, heartiness to the lentil mixture, and the mashed potatoes had goat cheese from Narragansett Creamery in them. How good does that sound?!

I’m obsessed with asparagus this time of year and loved the simple lemony preparation. Side note: did you know that Hampshire County in Western MA has the world’s best asparagus?

This meal also left plenty of the pie behind for leftovers and was even better the next day.

Having three meals already planned and proportioned out made my life a lot easier and took one worry off my list this week. I love that the company is Boston-based (Dorchester shoutout!) and that the food is so good.

For the love of rosé, is it ever going to be consistently nice out? These crazy temperature fluctuations and dark-as-night rainy days are getting me down!

This weekend in Maine was a gorgeous one, and I discovered a new favorite pink wine, just in time for boat season. I chose the Cuvée PIGOUDET Première from Provence for its ballet slipper pink color. For years I tried to pretend I didn’t love pink; I grew up in the era of grunge, after all! But truly it’s my favorite color, and I am happy to say that loud and proud!

Cuvée Pigoudet Première I tweeted that I was having this wine by the sea while wearing Lilly, a pretty happy moment in my life and one that gave hope for the season to come. The wine is gorgeous; fruity but dry, with a nice acidity, nectarine and lemon notes, and a slight effervescence making it ideal for a picnic celebration or beach day. It’s super refreshing and pairs well with the ocean and seafood but would also be awesome with things like grilled chicken and asparagus with lemon.

Memorial Day isn’t too far off now, but if you love to drink pink year-round, this one is a keeper and definitely worth stocking up on. And at $14/bottle, it’s a great value for the exquisite flavor you get.
