Here comes the sun? I hope? While summer unofficially began on Memorial Day weekend, I am not quite believing it. Instead of summer whites, I’m still cozying up in wool pants for work and hoping a post on some summery cooking will help Mother Nature get the hint.

Fish in a packet – This is nothing new or too exciting, but it’s healthy and delicious and easily done on the stove or on a grill. Last weekend when we had a bit of sun, we fired up the grill and stuffed foil packets with filets of cod, lemons, garlic, tomatoes, and olive oil. The person watching the grill just needs to keep an eye on the fish, checking until it’s perfectly flaky This grilled dinner felt so decadent, but it was pretty health overall.

On the same night we grilled, I also had a huge craving for one of my favorite New England summer foods, steamers dipped in butter. The key to making steamers is making sure they are clean. There’s nothing worse than a bit of grit! I soak them in cold water, which I change two or three times, and I also scrub the shells. Steaming is easy; just make sure the shells are open and you have plenty of melted butter (and napkins)!

One day, it actually is going to get hot (please. . . ), and we’ll be craving cool, light meals. I whipped up the below “Cool as a Cucumber” soup using six baby English cucumbers, an avocado, two cups buttermilk, two cloves garlic, a couple of spoons of light sour cream, a large jalapeno, and a few dashes of hot sauce. Blended together, the ingredients made for a cool, creamy soup with a slight hint of spice. I would add more jalapenos next time to give it more of a kick.

Finally, we have a most excellent summer side dish, designed to use up all of those vegetables from your garden, farm stand, or CSA. This slaw is cabbage, carrots, finely chopped broccoli, cilantro, and thinly sliced jalapenos all doused in rice vinegar and mixed with a teaspoon of honey. It could not be simpler, and since it has no heavy mayo dressing, it all stays crunchy. I could see doing this with summer squashes, kale and other greens, radishes, etc. We joined our first CSA this year, Red Fire Farm, and I can’t wait to see what new recipes we can dream up with what will likely be an overload of produce.

Cool rosé wines, corn, tomatoes, strawberries, seafood, and all things grilled conjure up images of summer dining for me. It’s been so hot out the past few days, and after three solid beach and boat days in a row, sun exhaustion set in. Overall, I’ve kind of lost my interest in cooking and eating lately, but we still have to eat, and summer makes that process a little easier and more fun.   It’s easy to fill a shopping basket with healthier options in the summer time, and here’s what part of my grocery haul looked like this week.

Note to self: pack my own groceries to avoid smushed tomatoes and bruised zucchini.

summer vegetables  I wanted a quick and healthy meal that would last us for dinner and a few lunches this week, so I simply cooked up some quinoa, squeezed in a  very juicy lemon, and added vegetables and fruit. The zucchini and corn I pre-cooked and cooled, while the tomatoes, red onion, jalapeno, and peaches were raw. Topped with some crumbled feta and served at room temperature, this delicious and easy favorite came together in minutes and barely required heating up the kitchen. I have a feeling it will be making repeat appearances all summer long with different vegetables and fruits thrown in as the seasons change.

With the weekend around the corner, I thought I would share some other favorite summer recipes.

This grilled corn salad is absolutely delicious. It is the perfect barbecue side dish.

Grilled peach, arugula, and prosciutto flatbread is a summery twist on an easy favorite. Flatbreads are a great canvas for fresh, local ingredients, and an almond meal crust adds some protein and nutrients.

Not pictured is one of my favorite summer meals, perfect for a weekend: lobster, steamers, buttery boiled potatoes, and corn. Now that I think about it, I don’t think there’s anything better than eating in the summer time. Time to get out there and seize the season!

Sigh. Monday already? Did you have a good weekend? Ours was pretty fantastic, starting with Chefs in Shorts and dinner at Citizen Public House, followed by some boat time, a gloriously early Saturday night (which unfortunately got ruined by work calls), and a day of errands on Sunday. It certainly wasn’t too bad.

Summer Mondays, are always a little more difficult than the rest of the year. This week marks the Summer Solstice, the opening day for our yacht club, and a an exciting new career adventure for me.

What better way to kick off the summer season than to talk about one of Massachusetts’ greatest gifts, Cape Cod?

To kick off your week, I bring you 10 reasons why I love Cape Cod, along with some random pics of my Cape Cod girls’ weekend. Feel free to share your own, add in what you love about your favorite summer place, or let me know what you are most looking forward to this week.

Beaches – This one’s a no-brainer.Cape Cod offers 559.6 miles of coast line, according to the Cape Cod Chamber of Commerce. From the calm, warm waters of Centerville to the swells at Race Point, there is a beach for every age and need. You could spend a lifetime discovering beaches on Cape Cod and falling in love with the shore.

Nature – Beaches definitely fall into this category, but Cape Cod offers so much more. Activities in the great outdoors abound. There are dune tours, oyster farm tours, whale watchesseal tours, and so much more. The Cape is (obviously) a great place to get out on the water. You can rent kayaks, motor boats, paddle boards, or take a sunset sail.

Food – Yes, Cape Cod has amazing local seafood like lobsters and Wellfleet oysters, and clams, and quahogs. . . and I am hungry now! But there are lots of other types of restaurants, food producers, even wineries. Cultural influences from around the world have made for a great foodie scene on the Cape; local ingredients and skilled chefs make it world-class. There are still so many Cape Cod restaurants I am dying to try, places like Pain D’Avignon, Beach House Grill at the heavenly Chatham Bars Inn, Central House, and the Naked OysterTruro Beach

Fried seafood – it deserves its own category, separate from food. I don’t think I have had better fried seafood in the world than on Cape Cod. Sorry, Ireland, but the Cape’s fish and chips might even have you beat. Oysters, clams, scallops, haddock, even fried lobster, make for an indulgent seaside treat. It just tastes like the beach.

seafood shack Art and architecture – Have you heard about the Cape Cod arts trail? There are a ton of artists and artisans along the Cape, and you can use the app to plan your journey. As far as architecture goes, there are the classic gray shingled homes, whitewashed town halls and churches, old captain’s homes; the Cape really captures our region’s history in a way that makes it seem alive and well, and makes living in Massachusetts such a unique and wonderful thing.

There are a million more things I love about Cape Cod; I could go on for many blog posts, and in time, likely will. I’ve been going to the Cape since I was a child, and there are so many special things that keep us coming back.
