Who wants a cocktail? It’s Friday, and I am excited for a weekend in Stowe, Vermont. This week has been absolutely insane. Busy with work = good, A laptop that will only allow me to open one program at a time = a seriously stressful, frantic experience. I rely SO much on my laptop, and with it acting crazy, I have been kind of lost. There have been lots of tears, lost hours of work, and apologies for being out of touch.  I may have thrown a few things. I am just happy to leave it with the Geek Squad for the weekend and to hopefully relax a little.

Last night I decided to make a festive little cocktail utilizing some delicious LA Burdick hot chocolate mix that my friends recently sent. When my nana passed away, I really received an outpouring of love, from cards to the Burdick chocolate and tea, to a gift card to my favorite comfort food place in Boston, Myers + Chang. I’m a lucky girl.

I quickly went through the ingredients I had in the house and decided to make a Peppermint Frozen Hot Chocolate Martini. Sounds festive, right?

Like I usually do, I made the cocktail recipe up as I went along.

The ingredients:

LA Burdick dark hot chocolate mix

vanilla almond milk

peppermint extract

vodka

ice

cocoa powder

vodka

peppermint extract

I started by making the hot chocolate. Perhaps one of the best parts about this gift was the mini whisk that came along with it! I used the vanilla almond milk to make a nice, rich chocolate, then chilled it in the fridge until nice and cold.

When I was ready to whip up the cocktail, I got out two martini glasses and decorated them with a bit of cocoa powder. I love how easy it is to add a decorative rim to glasses. I just coated the edge in peppermint extract and then dunked them into a plate of cocoa powder.

I mixed about 3/4 cup of hot chocolate with a tablespoon of peppermint extract and a couple shots of vodka, added ice, shook it up, and then poured.

Overall, these cocktails were delicious, but I definitely went a little heavy on the peppermint. I would cut it in half next time. Whew, it was minty!

I would love to make these again with crushed candy cane on the glasses and perhaps Baileys as a nice, creamy addition.

Thank you all SO much for your well wishes on the launch of my Marketing Communications business yesterday. It is beyond nerve wracking each and every day, and I have put a lot into it, so I incredibly appreciate the support of the blogging community!

And since it’s Thursday, why not celebrate with a decadent cocktail?

Part Irish coffee part dessert martini, these delicious Godiva Coffee Martinis were made possible by the Foodbuzz Tastemaker program which provided me with two bags of Godiva coffee, Hazelnut Crème and Chocolate Truffle, for free. I am planning a dessert with the Chocolate Truffle coffee, but for now, I bring you a sweet, irresistible treat.

Obviously, a bag of coffee makes you think cocktails instantly, right? Well, that wasn’t the only thing going through my mind. We have actually been thoroughly enjoying the Godiva Hazelnut Crème each morning with a splash of dark chocolate almond milk. It’s delightfully nutty and creamy without being sweet. It’s definitely a little luxury to start the day.

And, as it turns out, to end the day. On Thursday night after a boat picnic, I brewed up a 6 ounce cup of the coffee and put it in the freezer to cool.

While the coffee cooled, I started on the rest of the cocktail ingredients:

6 ounces of Bailey’s original Irish Cream (hazelnut would be good too!)

4 ounces Ketel One vodka

2 ounces skim milk

lots of ice

I shook all of the ingredients up in my water bottle fancy shaker and added the much cooler coffee, some more ice, gave it another big shake. I decided to serve the drinks in our Irish coffee mugs instead of martini glasses, since they were coffee based.

These were definitely dessert cocktails, cold,  creamy, sweet, with a hint of coffee and hazelnut flavor. We enjoyed them on our deck, kicking back to one of our favorite summer soundtracks, James Taylor and Carole King, Live at the Troubador. Something about it says relaxing summer night to me.

A cocktail loaded with antioxidants? Yes, please! When it comes to imbibing, my wine stash far, far outweighs the hard liquor we keep around the house. We usually only have vodka, Irish whiskey, and rum in the house which isn’t too shabby, but I definitely wouldn’t say we have a well stocked bar.

If I am in the mood for a cocktail, which is a pretty rare occasion, it tends to be something simple like a vodka tonic, but every now and then I try to get creative. Who doesn’t enjoy an icy cold cocktail once in awhile? Especially on hot and humid days like today, there is something about a fancy glass and pretty liquid refreshment.

My blueberry lemonade martini was inspired by the bottle of blueberry juice I buy each week at Trader Joe’s. Sometimes I mix it with water, sometimes in smoothies for an antioxidant boost, but I had never tried it in a cocktail before.

The cocktail is simple. I made two, using the following:

4 ounces Ketel One vodka

2 ounces limoncello

8 ounces blueberry juice

lots of ice for shaking, leave in the glass if desired

The vibrant purple color means it is good for you. Winking smile

The limoncello gave the cocktail that refreshing lemonade quality. All of the flavors went together beautifully, and I enjoyed sipping on this as my dessert.
