We all know that making desserts is definitely not a favorite pastime of mine. While I might enjoy eating sweet treats every now and then, they are not often made in my own kitchen. Every now and then, though, the urge to create something decadent pops up, and the holiday season is definitely a catalyst.

With salty and sweet on the brain this weekend, I took a little bit of time to make a very simple, three-ingredient dessert that would be a perfect hostess gift, snack at an office party, or just something nice to crunch on around the house.

The ingredients:

eight peppermint candy canes, crushed into rough pieces

three cups mini pretzels, crushed into pieces

16 ounces of white chocolate chips

melted white chocolate

The toughest part of this entire recipe was melting the white chocolate, which I did over a makeshift double boiler, making sure not to splash any water into the chocolate. I  added a small pat of butter to the melted chocolate to make it smoother. I always do this, and it turns out fine, but afterward, I read that you are not supposed to use butter because it contains water. Oops.

Once the chocolate was melted, I mixed the pretzels, chocolate, and half of the candy canes and smoothed it out on to some wax paper, topping it with more candy cane for a festive red and white look. Once everything was cool, I broke the bark into pieces and stored in an airtight container, making sure to grab a few bites. It’s delicious, combining some of my favorite seasonal flavors, and it took no time at all. If you find yourself needing to make something yummy and fast this holiday season, look no further.

I spent the entire afternoon cooking dinners and lunches for the week while listening to Christmas music, and at the very end of the day, we decorated our little tree. We used to buy a full-sized tree but found it to be kind of a pain, especially since we often travel for and after Christmas. This little guy is just perfect. It’s kind of amazing how much spirit and light a little decoration can add to the atmosphere of a home. We’re a lucky little family.

It’s a holiday weekend! Today I am working a half day and then heading into New York City with friends to spend the night at a swanky hotel in Times Square. I have been to NYC a million times, having grown up not too far, but at Christmas, I love doing the Rockefeller Center tree, Macy’s and other touristy things.

We’ll likely be eating, drinking, and being merry!

When it comes to Christmas, I am all about tradition. For as long as I can remember, we have been spending Christmas Eve, my favorite day of the year (next to Patriots Day) with my Uncle Jack and Aunt Leeny.

In past years, we have gone to visit my nana at the nursing home before church and dinner. It’s sad and strange that we won’t get to see her this year. Christmas is definitely one of those times that makes all sorts of emotions more acute and brings to mind people who are in a far-off place. My father hasn’t been around for nine Christmases now, and it never fails that I hear a song that reminds me of Christmas when I was little and end up crying. I am a giant mush like that.

But remembering people we were lucky enough to have comes hand-in-hand with appreciation for those who are still here. And we are so very lucky. Side note: my nephew has grown to about 10 times the size he is in the above picture, in just a year. He’s a moose!

Our newest tradition on Christmas day is to have dinner at my sister’s house. She is a mini Martha Stewart and always has a fantastic setup. This year, it will be just my immediate family for Christmas dinner, followed by movies, playing with new toys, and relaxing.

Whatever you are doing this weekend, whether you are celebrating a holiday, getting an extra day off, or just enjoying the weekend, I wish you all of the good things life has to offer, family, friendship, warmth, great food, and fun.

I’ve written before about how much I love visiting Europe in the winter time. It is purely magical; slightly chillier and mostly off-season, it feels more special than during touristy times. And then there are the Christmas markets. We have been to the Christmas market in Vienna, but being this is only Galway’s second year doing such a market, this is our first time visiting one here in Ireland.

Christmas markets are very popular in Germany and Austria, and there is certainly reason for this. They bring the most festive foods, drinks, and wares into one central, outdoor location. When you’re bundled up drinking a hot mulled wine while browsing the different stalls, the cold suddenly doesn’t matter. This past Friday afternoon after lunch and a walk, we made our way to the Galway Christmas market. Located in the center of town, Eyre Square, the market completely delighted us, and we will be returning again and again on our visit to Ireland.

The weather in Galway has certainly not been very nice over the past few days, but we got lucky on the afternoon the market opened with a respite from the rain and winds. First things first. I had to get a hot buttered rum from the Winter Warmer truck, just because I could. I don’t get what the big deal is with public drinking in America. We probably have a lot more dangerous activities that are legal. A hot cup of mulled wine or rum while listening to Christmas music and browsing stalls is harmless, and a great way to warm up!

The rum was so delicious, buttery and sweet and definitely hit the spot.

Of course, if you don’t like rum, you can have a hot port, a glass of Beaujolais Nouveau, or another wintry beverage.

The Christmas market features all sorts of food, like freshly made sweet or savory crepes.

It also offers plants of all types, with lots of seasonal flowers and greenery for holiday decorating.

A beer garden makes up a large part of the market and provides the perfect place to rest after an afternoon of shopping.

The markets serve as a great way to stimulate the local economy. Many, if not most, of the vendors featured some sort of local ingredient or craftsperson.

Seaweed is available in huge abundance in Ireland, and it is a popular beauty treatment both over-the-counter and in spas. The carrageenan is also sold to America to thicken sauces and dressings.

In addition to the market stalls, food, and drink, the Christmas market also features a few fun carnival rides for kids of all ages, making it a fun place for a day out for the family.

The Christmas markets in Europe embody the warmth and spirit of the season. They provide festive and often inexpensive treats and make the month of December something really special, giving people that boost to get outside, mix and mingle, and enjoy life, one of my favorite parts about visiting Europe.
