Crazy Rice

Leftovers come to life! Traveling always means cleaning out the fridge as much as possible, saving a little bit of money (NO sushi Thursday!), and trying to get some nutrients in before an indulgent trip.

I am not normally a huge fan of rice, but somehow we often end up getting it as a side at restaurants. On Wednesday I had a horrible headache all day; nothing would make it go away, and by the time the dreary, chilling evening came, I was drained from the pain and needing comfort.

My awesome husband, already having worked a 13 hour day, stopped by Myers + Chang for some hot and sour soup. . . and a few other treats for me. I swear that their hot and sour soup is a cure all. It is a bowl of love.

It was the perfect dinner, and as we often do, we had an entire container of leftover brown rice. Note to self, just don’t get it next time. . .

We also had a giant head of purple cabbage, two habaneros, and half an onion to use up. I started to think about how this would become a meal.

I also added a few spoonfuls of peanut butter and a squeeze of cilantro paste. It was pretty much one of the best meals I have had at home in awhile. It was the perfect peanutty mix of crunch and spice. Everything else jazzed up the rice, and we ended up not wasting a ton of food! Winner!

    Yum! Brown rice and beans is a good combo. Love how creative you are – I would never think of adding peanut butter! Also, I assume it’s a different Bianca who won your contest :p Enjoy the rest of your stay in DC!

    I did a a clean-out-the-fridge meal last night too. It’s super important before going away. And sometimes those types of meals turn out to be the best meals.

    You’re in good company – I did this very same thing before going to New Orleans last week: barley, arugula/spinach pesto, chick sausage and broiled tomatoes. Yum!
