So much for that New Year’s diet, eh? This weekend I hosted family for brunch, and I decided to make a decadent cake featuring chocolate, coffee, and Irish whiskey for the occasion.

With all that’s been going on, I have barely cooked in my new kitchen. Heck, the kitchen, like most of the house, isn’t even fully unpacked yet! We’re getting there though, and normal little things like spending a Saturday morning puttering around the kitchen are starting to make the place feel a bit more like home.

I wanted to make something with a bottle of Slane Castle Irish whiskey that we received as a housewarming gift, and this cake was absolutely perfect.

First, a glimpse at some of the ingredients that made it so stellar. . . I LOVE sour cream in cakes!  Slane Castle is a favorite whiskey, nice and smooth and full of flavor.

Our kitchen is a stark contrast to the modern one in the condo we moved from, but I love its charm and the views into the backyard.

This cake recipe had a number of different steps; it wasn’t super difficult but did require lots of bowls and pots. It also called for a stand mixer to whip the butter and sugar, but I did just fine without.

As with many of my baking escapades, I ended up short on cake batter and was only able to partially fill my bundt pan. I followed measurements exactly, so I am not sure how this happened. I just kept an eye on the cake, and it ended up being finished about 15 minutes earlier than the recipe called for. Unfortunately, while I was tapping the cake out of the bundt pan, it broke into a few pieces, and presentation was not what I had hoped. I salvaged the cake by slicing it into easily servable slices, perfect for topping with homemade whipped cream.

I made the cream simply by whipping heavy cream in my Ninja blender.  I love unsweetened whipped cream, and it is so easy to make!

This cake was dense, chocolate-y, and decadent, like a chewy brownie with a kick of whiskey and coffee. I would not hesitate to make it again for a brunch or other occasion, especially when a chocolate lover is involved!

 

Chocolate Whiskey Cake Recipe

For the cake:
  • 1 tablespoon unsalted butter, melted
  • 4 ounces unsweetened chocolate, coarsely chopped
  • 1 3/4 cups cake flour
  • 1/2 cup natural unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 1/2 cup sour cream, at room temperature
  • 1/2 cup Irish whiskey
  • 1/4 cup brewed coffee, at room temperature
  • 2 sticks (8 ounces) unsalted butter, at room temperature
  • 1 3/4 cups packed light brown sugar
  • 3 large eggs, at room temperature

Look at that cake! It is perfect! And I do believe it’s the first time I have ever baked anything that didn’t end up mangled in some way. Whether I use the wrong pan, don’t grease the pan enough, drop the finished product, something always goes wrong. Not this time!

After making my pizza crust with almond meal a few weeks ago, I have become pretty obsessed with the nutrient dense product. It’s not too expensive, and while I love regular flour, it’s nice to have the added protein once in awhile.

After buying a new bag of almond meal at TJ’s, I started browsing the web for a breakfast type cake/quick bread I could make with the almond meal and found a simple recipe for a banana almond meal cake.

I knew it had to be a Bundt cake because I wanted to use the Bundt cake I got for my birthday. Whenever I say/write Bundt, I think of My Big Fat Greek Wedding. Smile

The original recipe can be found on this beautiful blog. It all started with some rapidly ripening bananas.

And of course almond meal. I also used a half cup of whole wheat flour.

The recipe also includes a half cup of yogurt;; I used my favorite, Fage 2%. It did not include cacao nibs, but I added them for a cocoa crunch and some added antioxidants.

The batter was incredibly simple to make, but my non-stick pan was the real star in this baking effort. As you can see from the first picture, it came out of the pan so perfectly. And to make it even better, the cake is delicious. It’s really more like a banana bread. I’ve been eating it for breakfast topped with more Greek yogurt. Yum.

And so we come to the end of yet another crazy work week. I am NJ bound to spend the weekend with my mom and sister. If you are celebrating a mom, aunt, grandma, or other special woman (or yourself!) this weekend, enjoy.

Chocolate Madness 2012 was an event that I will not soon forget. It was full of sweet delights, delicious appetizers, fun with friends, and all for a good cause. Chocolate Madness is an event that raises money for NARAL Pro Choice Massachusetts and helps NARAL to further its mission of being able to develop and sustain a grassroots constituency that uses the political process to guarantee every woman the right to make personal decisions regarding the full range of reproductive choices.

The event was held at the Cyclorama in the South End, an impressive space that has held a variety of events including Taste of the South End and Wine Riot.

I arrived early, per usual, checked in as a judge and was soon joined by Daisy, Rachel, and Elizabeth for the opening reception.

The reception appetizers were incredible. I was hungry, and Choice Catering put out a beautiful spread. There were little tartlets filled with cheese, pepper, and olives, cucumbers topped with hummus, shrimp salad wraps, chicken skewers and several other options. I am not kidding; I parked myself at that table.

Although I was invited to be a judge of the chocolate, I have to admit that I would take tuna tartare over a cupcake pretty much any day, any time. These gorgeous Caprese skewers were also a hit. I made something similar for my husband’s birthday last year, and they were a crowd pleaser, not to mention so easy.

After the reception, it was time to do our duty as judges. I was at the Heavenly Homemade and Sublimely Sweet table.

Initially, I only saw the judging sheet for four items. I could do this, piece of cake. Winking smile

I liked my first bite  (which ended up being a chocolate peanut butter roulade from Amanda’s Cakes and Things) so much that I ate the whole thing. It was a few bites in that I realized we had an additional four items to judge. Still, the roulade was amazing, especially the frosting, and it was worth being a little full for the rest of the judging.

My other favorite desserts included a peanut butter chocolate fudge brownie from Butter Girl Baking Co. and the chocolate carrot cupcake from Cares Bakery. What a fun combination!

In addition to the category we were judging, we also got to wander the event and taste some of the other amazing treats. Honestly, I was pretty full after judging, but I enjoyed looking at all of the creativity and deliciousness in the room.

I heard that over 600 chocolate lovers eventually attended the event. That’s a lot of chocolate and a lot of support for women’s rights which is pretty sweet.

And now I sign off for the weekend. It will be great to unplug a little, that’s for sure. We have some boat cleaning and waxing to do in preparation for the big launch back into the ocean, and I might try to get a massage. Mostly, I just don’t want to spend the weekend in front of a computer, iPad, phone, or anything else that connects me to the world. I need a break!
