I long for the days when it is too hot to cook, the days where sprawling on a chair near a fan with a cold drink or some ice cream is all you can do. After this winter, I even long for those too-hot nights where it feels like mid-day at midnight. Ask me in August, and I will probably be singing another tune; I don’t love extreme temps either way, but I just feel so ready for heat right now.

As soon as I heard that this week would be warmer, I started planning out no-cook meals for picnics at home. Literally, sometimes we eat on the kitchen floor. It’s fun.

Ever since the Scottish salmon event I attended, I had been planning a night for a smoked salmon platter for dinner, and this Monday was perfect for it.

Crucial ingredients included my favorite Vermont Creamery crème fraiche and some dark pumpernickel bread.

The star of the show was Nova salmon from Trader Joe’s. This comes in at about $7.99, but it lasts for several meals. Since it is such a good source of protein and other nutrients, and finding a protein I like is difficult, I call this a worthy splurge.

Dinner was assembled in about five minutes. I chopped some tomatoes, red onion, and cucumbers. I meant to also include hard boiled eggs but remembered way too late. Next time for sure. We plopped ourselves on the floor and piled our bread high with crème fraiche, veggies, and salmon and caught up on our days. It was a lot of fun and a much-needed relaxed dinner. Sometimes I get so wrapped up in photos and having meals to blog about that I don’t even enjoy them.

We were having guests over late in the evening for the TasteLive! event so I decided to put out some snacks. I whipped up a last minute dip that was pretty spectacular. It was so easy I thought about NOT sharing on the blog, but it was so good I had to.

Three cloves of garlic, a can of white beans, and about three tablespoons of chopped sundried tomatoes, into the blender or food processer.

Blend everything together until smooth. I served it with some whole wheat crackers, and it was devoured. The dip doesn’t need oil because white beans are so creamy, so this is a really healthy, light option. I used the leftovers as a spread for a turkey sandwich.

Once the really warm weather comes, I will be looking for lots of fun, no-cook recipes. Do you have favorites for when the mercury starts to rise?

Boston felt a lot like Scotland last night. With a cold, raw mist and fog swallowing up the skyline, and invading layers of wool, right down to the bone, I could have easily been in the British Isles or in Ireland. For the record, in weather like that, nothing works quite as well as an electric blanket at bedtime. It is the surefire only way (along with some whiskey and a fire) to warm up.

he weather was just perfect for a salmon and Scottish whisky tasting hosted by Scottish Development International at the International Boston Seafood Show, the largest seafood show in North America. And luckily, I was invited.

Yesterday’s spring snow slowed just around the time I was about to leave the house, and I was grateful yet still very cold. As I came out of the Courthouse Silver Line stop, the sound of bagpipes warmed my ears and told me I was in the right place. Smile

The event was at the Moakley Courthouse, an ominous and quite modern building in the Seaport/Fort Point area. FYI, DO NOT walk into the federal courthouse with your camera out and ready. They frown on that sort of thing.

On my way in, I ran into Fiona, and we ended up doing some whisky and salmon tasting together Smile But first up was the Scottish beer. The darker the beer the better, so I went for the Harviestoun Old Engine Oil Black Ale. With bitter chocolate notes and a full body, it was fantastic and perfect for the cloudy and cold evening.

The event space at the Moakley Courthouse is beautiful, and the area was dotted with tables of salmon and herring from a variety of Scottish seafood distributors. There was also a table with an abundance of cheese, dried fruit, and pumpkin seeds. I went straight for the salmon.

The below plate is what heaven looks like to me. Scottish smoked salmon, lemons, red onion, tomatoes, cucumber, eggs, and caper berries all go so incredibly well together.

The smoked salmon, this happened to be from St. James Smokehouse, was simply beautiful. All of the salmon throughout the course of the evening was delicious and lacked that coppery, fishy flavor that some smoked salmon has. It was just rich, oily in a very good way, and smoky.

Each table offered something a little different, though most offered smoked salmon in some form.

Grieg Seafood Hjaltland/Shetland Products offered a variety of flavored smoked salmon. I do believe this was my favorite table. Their orange pepper, pastrami, and capirinha smoked salmon offered tasty twists on the classic fish, and I appreciated the opportunity to try them all.

I rounded the room several times, snacking on bits of salmon and making little sandwiches with rye bread, crème fraiche, cucumbers, and onion. Yum.

No Scottish event is quite complete without a dram of whisky or two. Luckily, Justin was there pouring Highland Park 18 year, 15 year, and 12 year Scotch Whisky. He started us off on the smoothest, the 18 year, and we tasted our way through as we learned more about Highland Park and its home in Orkney in the far North of Scotland. Because of its location and winds, there are no trees in Orkney, and as a result they use peat for fuel to toast the barley. It creates a smoky flavor, and along with the various barrels used for each whisky, sweetness and other secondary flavors like dried fruit or vanilla, depending on the barrel. I have had some harshly smoky whisky in the past, but these were all delightful and dangerously drinkable.

It was actually quite refreshing to have someone who was passionate and knowledgeable pouring a spirit. Often I encounter people who don’t seem to know or care what they are doing, but Justin was the opposite. He seemed to really enjoy sharing his knowledge and the whisky, and that made the evening all the better.

I had a blast at this event. I can honestly say it was one of the best events I have attended as a blogger. It had a festive crowd, but everyone was so polite. The music made me tap my toes, I filled myself with gorgeous food and drink, and left a very happy girl.

Another Valentine’s Day post because I happen to love Valentine’s Day AND because it provides a good excuse to drink Champagne, eat chocolate, and linger over indulgent meals.

With Valentine’s Day falling on a Monday, it is the perfect time to celebrate twice, once with a leisurely Sunday brunch for your Valentine and again on Monday.

You know a meal is good when you think about it for years. The day after I ran the Bermuda International Marathon in January 2004, I had one of the most memorable omelets that I have ever had at the Fairmont Hamilton Princess. I loved everything about the hotel, especially its beautiful waterfront location and the fact that it is PINK, but the post-marathon omelet sealed the deal.

This omelet had flecks of salty smoked salmon peeking out behind ribbons of melted brie all whipped into fluffy, airy eggs. It was the memory of this omelet that inspired my breakfast the other morning, and it is a recipe that could easily wow your beloved this Sunday morning for brunch.

I started with a few pieces of smoked salmon, chopping it into tiny bits. To the salmon I added some grated Kerrygold cheese left over from the bread I made the other day.

For my own omelet, I used only two eggs, but the recipe is easily doubled or quadrupled for brunch for several people. You can, of course also just use the whites for a lower fat omelet. I like the nutrition that comes from the yolks, so I left them in Smile

To the eggs, which I had whipped with a ball whisk, I added the salmon and cheese, about 1/8 up of skim milk, and a small pat of butter, chopped up into pieces. I heated up a tiny bit more butter in my smallest frying pan; I find it easiest to make a pretty-looking and fully cooked omelet in a smaller pan. When the butter was melted and the pan very hot, I poured the egg mixture in, cranked the heat up as high as it would go, and waited until the top of the omelet started bubbling, then solidified.

To get the omelet out of the pan, I placed a plate over the top of the pan, then held on to the plate and the handle of the pan while flipping the pan over. A piece of the omelet stuck in the pan, but otherwise, it came out without breaking! And I was able to fold it over to showcase the golden brown side. Fancy, isn’t it?! Smile I was kind of excited about how nice my meal was. I added a few scoops of homemade salsa which consisted of Muir Glen fire roasted tomatoes, a bit of red onion, two jalapenos, three cloves of garlic, and a little bit of olive oil.

The combination was excellent, filling, and healthy. Interested in making this for a special Sunday brunch? If I was making a Valentine’s brunch for my husband (which I won’t be doing because I am going away and he is working alllllll weekend), I would pair this with some oven roasted potatoes, maybe something sweet like mini cinnamon rolls, and of course a glass of bubbly, maybe a Billecart Salmon Brut Rose? Then, I would take my time eating, drinking, and relaxing for the rest of the day!
