Happy St. Patrick’s Day! As you well know, Ireland has stolen my heart over and over and over again. We don’t do much for the holiday at all, though I am sure there will be a pint of Guinness and a viewing of The Quiet Man at some point. I’ve visited Ireland over 20 times and written extensively about it, so for your St. Patrick’s Day reading, just a few blog posts on Ireland:

Perhaps our celebrating started earlier this month, with a special Guinness Open Gate Brewery Night to view The Brewers Project. Guinness actually brought the real, original recipe book to Boston for the event, and Artists for Humanity was filled with delicious Guinness beers, food, and cheer.

Guinness has had a knack for great advertising since its beginning, and it was fun to browse the colorful pieces and take replica postcards home.

It was also fun to taste the many beers that they had available. We tried Guinness Blonde, Guinness West Indies Porter, and my favorite of the night which isn’t actually available for sale, the 1798 Limited Edition. west indies porter

Guinness quite obviously knows its beer, and they were all really good. I coveted these beautiful Guinness flute-like glasses. Unfortunately they weren’t for sale either.

In time for St. Patrick’s Day, Guinness was showing off some fun special edition cans, and they had an archivist from St. James’s Gate in Dublin showing us the recipe book, which we could not photograph.

Once we made our rounds of tasting and grabbed a pint of the black stuff, we headed to the very generously stocked food table for some yummy snacks including soft pretzels and a variety of toppings. Passes appetizers also kept us fed throughout. cheese and fruit

Guinness knows how to put on a great event, and we really enjoyed a taste of Ireland in Boston.

Spring definitely feels like it’s on its way here in Boston! We had the windows open for much of the weekend, and it was lovely to feel fresh breezes blowing through the windows. I love the change of seasons and the hope that March brings just as much as I love St. Patrick’s Day and my birthday season. Chilly nights still call for warm comfort food, and Sunday dinner was a delicious Guinness beef stew that I put together  without a recipe.

Ingredients:

1,14.9 ounce can of Guinness

1 pound of stew beef

1 cup of beef stock

3 cups chopped red potatoes

2 cups baby carrots

2 cups butternut squash

2 cups peas and pearl onions

3 tablespoons tomato paste

3 tablespoons flour

3 tablespoons butter

garlic powder, black pepper, parsley, and sea salt to taste

I started by marinating the stew beef in Guinness, garlic powder, black pepper, sea salt, and parsley. It smelled so good! While the beef marinated, I prepped the veggies, saving time and money by using frozen peas and butternut squash.

When I was ready to get this all-day recipe going, I started by removing the beef from the Guinness marinade and dusting it with flour. I added the beef to an already-browning roux and cooked the beef on all sides until browned. Then I poured in the Guinness marinade and scraped up all of the beef bits from the bottom of the pan. I layered the veggies in, poured in beef stock, and added the tomato paste, stirred, and cooked on very low for five hours.

The result was a rich, flavorful, filling dinner that went perfectly with my favorite brown bread. The Guinness base of the stew added so much depth; this is definitely a Sunday dinner winner and a great option for St. Patrick’s Day.

I can’t believe it’s Monday already. I’m a little overwhelmed already by my workload for the week but excited because my fantastic father-in-law arrives from Ireland on Wednesday. We’re having a party for him Friday night, and I can’t wait to be with family and friends to celebrate him.

Every visit to Ireland brings a new-to-us discovery. We have our favorite haunts and things, like the Saturday farmers market  and piles of late night garlic and cheese chips at Supermac’s, but we do our best to try at least one new restaurant.

On this visit, we drove along the coast to the village of Barna to wander along Barna Pier and to check out a renowned restaurant, O’Grady’s at the end of the pier.

The below sign alerts drivers to the fact that the road is ending. Point taken.

The views from Barna are gorgeous, and the ever-changing weather makes them even more spectacular.When we arrived it was bright and sunny, but during the course of our meal all of that changed into lashing rain, clouds, and wind.

Luckily, there’s no place better than a cozy seafood restaurant in the West of Ireland to wait out the storm with a pint of Guinness.

Irish prawn salads are one of my favorites, so I decided to go with that, served with fresh brown bread and Irish butter, for my lunch. I love the tangy Marie Rose sauce on the top, and the prawns were amazing, more like lobster than prawns, really. The portion was heaping and had a good amount of salad greens, onions, and tomatoes underneath. I could definitely eat this for lunch daily.

As the weather got worse, we talked over the crackle of a roaring fire and stared out at the boats and windsurfer braving the chilly downpour.

We continued our wait with a couple of strong, sweet, and creamy Irish coffees. When in Ireland. . .

As the saying goes, Ireland experiences four seasons in a day, and by the time we were paying for our leisurely lunch, the sun was out, and getting ready to set. The one big downside of visiting Ireland in the winter is how early the darkness sets in and how late the sun comes up. There were days I woke up at eight, and it was pitch dark out. Barna Pier

The upside of all of that rain? Rainbows, double and triple rainbows that make me squeal with delight every single time. Like so many other things in Ireland, rainbows just add a little more magic.

Our afternoon spent at O’Grady’s was one of our favorites of our entire trip. The restaurant has won many awards for its fresh, creative cuisine, and they are well-deserved. The service was warm and welcoming; we never felt rushed and really enjoyed being on holiday there. If you find yourself in Ireland, definitely spend a few days in Galway and make Barna Pier a stop along your journey.
