Another Valentine’s Day post because I happen to love Valentine’s Day AND because it provides a good excuse to drink Champagne, eat chocolate, and linger over indulgent meals.

With Valentine’s Day falling on a Monday, it is the perfect time to celebrate twice, once with a leisurely Sunday brunch for your Valentine and again on Monday.

You know a meal is good when you think about it for years. The day after I ran the Bermuda International Marathon in January 2004, I had one of the most memorable omelets that I have ever had at the Fairmont Hamilton Princess. I loved everything about the hotel, especially its beautiful waterfront location and the fact that it is PINK, but the post-marathon omelet sealed the deal.

This omelet had flecks of salty smoked salmon peeking out behind ribbons of melted brie all whipped into fluffy, airy eggs. It was the memory of this omelet that inspired my breakfast the other morning, and it is a recipe that could easily wow your beloved this Sunday morning for brunch.

I started with a few pieces of smoked salmon, chopping it into tiny bits. To the salmon I added some grated Kerrygold cheese left over from the bread I made the other day.

For my own omelet, I used only two eggs, but the recipe is easily doubled or quadrupled for brunch for several people. You can, of course also just use the whites for a lower fat omelet. I like the nutrition that comes from the yolks, so I left them in Smile

To the eggs, which I had whipped with a ball whisk, I added the salmon and cheese, about 1/8 up of skim milk, and a small pat of butter, chopped up into pieces. I heated up a tiny bit more butter in my smallest frying pan; I find it easiest to make a pretty-looking and fully cooked omelet in a smaller pan. When the butter was melted and the pan very hot, I poured the egg mixture in, cranked the heat up as high as it would go, and waited until the top of the omelet started bubbling, then solidified.

To get the omelet out of the pan, I placed a plate over the top of the pan, then held on to the plate and the handle of the pan while flipping the pan over. A piece of the omelet stuck in the pan, but otherwise, it came out without breaking! And I was able to fold it over to showcase the golden brown side. Fancy, isn’t it?! Smile I was kind of excited about how nice my meal was. I added a few scoops of homemade salsa which consisted of Muir Glen fire roasted tomatoes, a bit of red onion, two jalapenos, three cloves of garlic, and a little bit of olive oil.

The combination was excellent, filling, and healthy. Interested in making this for a special Sunday brunch? If I was making a Valentine’s brunch for my husband (which I won’t be doing because I am going away and he is working alllllll weekend), I would pair this with some oven roasted potatoes, maybe something sweet like mini cinnamon rolls, and of course a glass of bubbly, maybe a Billecart Salmon Brut Rose? Then, I would take my time eating, drinking, and relaxing for the rest of the day!

Bloody Mary not required, but highly recommended. Winking smile Last night I was feeling very under the weather and wanted some comfort food which, for me, often ends up being breakfast food. I had eggs in mind as I have really been enjoying a diet higher in protein lately. A little extra meat, beans, dairy, or eggs has been helping me to feel full, and with marathon training around the corner, I need that.

I browsed the interwebs for “easy quiche” recipes and was surprised to find a bunch that involved mixing biscuit mix right in with eggs and other ingredients. I was a bit skeptical, but since I was so tired and hoping for an easy dinner, I gave it a go. As always, I used a variety of recipes as a base, then made my own mixture up.

In my mix:

4 eggs

1 cup multi-grain baking mix

1 cup milk

1/2 cup grated Cabot jalapeno cheddar

2 cups chopped spinach

3 pats butter

garlic powder and black pepper to taste

I mixed the eggs and spinach together with garlic powder and pepper, then separately mixed the baking mix, butter, milk, and cheese. Before I poured them into a lightly greased pie plate, I thoroughly blended the two bowls.

Yes, that’s butter floating around in there, but don’t worry, it ends up being a teeny bit over the whole dish.

I cooked this at 350 for 40 minutes, then used the broil setting on high for a few minutes, until the smoke alarm went off. That tells you it’s done Smile

As you can see, the quiche was nicely browned on top and had that yummy brown butter flavor. And much to my surprise, the baking mix sunk to the bottom and made for a light and buttery crust. Talk about a lazy girl’s brunch dish! I served this with multi-grain toast, and we really did have Bloody Marys.

I mix in tomato juice, lime juice, Ketel One vodka, juice from my Mezzetta pepperoncini jar, horseradish, black pepper, and hot sauce. Delish!

I love the ease of this meal, how delicious and filling it is, and that it gave us leftovers for lunch. I simply can’t get ride of my lingering cold and am feeling super lazy!

Today begins the final countdown. . . one week of work left! Wahooo!

I am also very excited about Blogtoberfest and trying Ginger Park tonight.

The simplest recipes start with the best ingredients. Take our dinner the past two nights, for example. A tortilla (frittata?) made with farm fresh eggs purchased from our innkeepers in Norwich, VT on the Boston blogger King Arthur weekend made for a filling and quick post-work and post wine class meal.

I pulled this recipe together in my head based on ingredients we had in the house since we didn’t quite make it to the grocery store last weekend.

Ingredients

6 farm eggs

1 cup roasted red peppers

1/4 cup grated parmesan

3 small potatoes, sliced in very thin rounds

I simply whisked the eggs until fluffy and poured them into a pie plate with the rest of the ingredients, stirred, and put the whole thing in the oven at 350 for about 22 minutes.

At the very end, I put the broiler to high and left the tortilla in the oven for about three minutes, until it was bubbly and brown on top.

I served it with a little dollop of garlic aioli. But that’s not all. . .

I also dug into the bag of delights that I bought at King Arthur and baked a heartland honey sunflower bread. Yes, it was from a box, but I did have to mix all of the ingredients, knead the dough, wait for it to rise, shape it, wait for it to rise again, and bake it.

The bread came out perfectly and made me want to make some bread without a box very soon.

This was one of the easiest and most delicious dinners I have made in awhile, and we had plenty of leftovers. I need to remember to make enough food every Monday so that when I get home from wine class at around 10 Tuesday night we have something easy to heat up. It made all of the difference!

I am having another trying week, but I am trying to stay positive because the Newport Wine and Food Festival with some great friends is this weekend.
