Orange Glazed Plantains

Do you like plantains? Have you ever tried to make them at home? Following a visit to Grenada years ago, making great plantains became a goal of mine. This staple in Caribbean cuisine is versatile, inexpensive, and delicious.

I always like to get ripe plantains at the store. These are not that ripe; I prefer them to browner on the outside, sort of like a banana you almost wouldn’t eat.

I have prepared plantains a few ways, sometimes spiced with jerk chicken. Today’s “recipe” has them glazed in orange juice and served aside black beans. To start, I cut the plantains on a diagonal.

I added them to a little bit of oil on medium heat and left them alone to brown.

I repeated the same for both sides of the plantains and then added about a cup of orange juice and a drizzle of honey to the pan. I simmered them in the orange juice for about fifteen minutes until it reduced a little and the plantains were softer, then served beside some spicy black beans.

I love bringing flavors of vacation home with me, and these plantains were definitely a taste of the islands.

    I love this recipe!! I am often guilty of trying to prepare plantains when they aren’t over-ripe. They are so much better when they are browned on the outside, especially when prepared sweet!

    I love plantains. It’s a staple in some Filipino dishes too. My favorite to eat it is as dessert! Fried to golden brown, then sprinkled with sugar. Yum.

    If you’re in a hurry one day, you can poke holes in a plantain and microwave it for 3.5 minutes. Your home will smell delicious, and when it cools, you can drizzle some flavorful olive oil on it and sprinkle a bit of cinnamon. Yum!

    You can also bake them, but they soak up oil like an eggplant would, and if there’s not enough, they dry out.

    I’ll have to send you my South Indian style recipe. It’s a bit more work, but quite lovely. You have me beat, though, by adding black beans. :0)

    Ooh I have only ever had fried plaintains. This sounds like a flavorful way to prepare them. There’s a soup I had in Hawaii that I wish I knew how to recreate. Guess I will just have to go back…

    I have always wanted to try to make them at home, but I’m too intimidated for some reason. One thing that I do try to replicate often is a typical Costa Rican breakfast – eggs, rice and black beens and cheese on a corn tortilla. I’ll have to add plantains next time!

    I love plantains!! But I have never cooked with them! My trip to portugal totally changed my mind about sardines. I thought they were amazing cooked on the open grill.
