File this recipe under “make this weekend”. The name of the recipe is quite the mouthful isn’t it? The recipe itself is full of flavor, comfort, and nutrition. With the ridiculously cold weather we’ve been having lately, comfort is all I have been craving. Can’t I just eat grilled cheese every day?

In addition to coming up with something cozy and healthy for dinner on a chilly gray day, I also needed to utilize the delicious  tortillas sent to me earlier this summer by the great people at Tortilla Land. Tortilla Land makes fresh tortillas that are great in all sorts of recipes. I’ll admit, I may enjoy them the most heated up in a pan with a glob of Nutella in the middle, but these tortillas are definitely for more than just dessert.

I don’t know where the idea came from, but I dreamed it up when I wasn’t sleeping the other night. Insomnia usually leads to some sort of recipe for me!

It’s an easy one.

Start by chopping and boiling two large sweet potatoes. Toss those, along with a cup of crumbled goat cheese, a teaspoon of cumin, and a teaspoon of paprika into a blender and puree until smooth.

I absolutely love my Ninja blender. It’s not a Vitamix, but it makes purees very smooth in a very short time. You could really stop right here and eat the goat cheese and sweet potato puree. As you can see, I definitely dipped a spoon in just for quality control.

Once the sweet potato is done, add about two cups of soaked lentils to olive oil, garlic, and tomato paste, all to taste. I used a small can of tomato paste because I love the flavor and the lycopene it adds to recipes.

Tortilla Land

Heat a stack of Tortilla Land tortillas in a hot pan until puffy and lightly browned, and then layer ingredients: tortilla, sweet potato mixture, lentils, repeat. Top with enchilada sauce, bake for 15 minutes at 400 degrees and serve with shredded sharp cheddar and salsa.

As I said earlier, this recipe is pure comfort. The creaminess of the sweet potato really makes it so. I love making enchilada pies because the construction is so quick and easy. Fresh tortillas like the ones that Tortilla Land makes add something a little extra special.

It has certainly been awhile since my kitchen has seen any cooking action. Between the heat, events, dinners out, and a wonky appetite, I have avoided cooking in favor of eating something, anything I didn’t prepare.

It was time to get back into it with a little help from my friend Pinterest. I found a recipe for cheesy broccoli bites and decided to make my own take on it.

Ingredients:

4 cups of chopped broccoli

1 cup (dry) of red rice, soaked overnight and cooked until al dente

1 cup shredded cheddar cheese

1/2 cup Italian bread crumbs

3 eggs

This recipe is simple; just mix everything together, preferably with your hands, and form balls with the mix. Pop the broccoli bites into an oven that’s been preheated to 375, and bake for 20 minutes.

Once the broccoli bites are done, they will be a little bit larger due to the melty cheese. This is not a bad thing.

Serve with a creamy honey mustard sauce, mine is about 1/4 cup Greek yogurt, 1/4 cup brown mustard and a blob of honey. Enjoy!

These broccoli bites would be a fun and not-too-indulgent treat for a party or for dinner with a salad. I bet bacon would be a nice addition. . .

This is another “make this now” sort of meal. If you like lots of flavors, textures, and a sriracha kick of spice, this healthy dish is for you. Luckily it makes lots of leftovers and is even more delicious after it’s been sitting for awhile!

I planned to make summer rolls, but was feeling lazy was really hungry and didn’t want to make individual rolls. Tossing everything together turned out better than I had hoped. I would love to add some noodles to this for a little extra bulk. Otherwise, it was just perfect.

The ingredients:

1 block of firm tofu, drained, crumbled and seared in a pan on high heat until lightly browned

3 cups of grated carrots

2 large jalapenos, chopped

1 cup peanuts, roughly chopped

8 – 10 leaves of mint, shredded

juice of 1 lime

Before I started any other prep, I drained the tofu, crumbed it into a frying pan, and turned the heat to high. This tofu, from Trader Joe’s, was particularly watery, and exposing it to high heat dried it up and made it a lot more firm. If you have time, putting the chopped or crumbled tofu in the oven at a low temperature for a long time is also a good way to dry it out. Or you could buy a tofu press, which I definitely need to do.

Next up, I pulsed the peanuts a few times to get them roughly chopped and prepped my jalapenos, mint, and lime. My dear husband did all of the carrot grating.

When the tofu was nice and dry, I just tossed the tofu, peanuts, mint, jalapeno, and carrots in a casserole dish and squeezed the lime over. Then came the best part, the amazing dressing I made for our gyoza over the weekend and that I now want to put on everything.

1 cup of rice vinegar

1/4 cup or more of sriracha

a few drops sesame oil

chopped cilantro

If you like the above ingredients, you will want to find food to put it on. It is amazing, and it’s kind of how this whole dinner came about.

The salad was seriously tangy, spicy, crunchy and offered a warm and cold contrast between the tofu and the rest of the ingredients. It also brought a little brightness to an otherwise very dreary day. I need the sun!

Meatless Monday is always a fun way to ensure we eat vegetarian eat least one day a week (though we usually do 3-4 days) and a nice time to try a new recipe or whip up something fun on your own.
