Ever since the delicious blogger dinner at Vlora last weekend, I have been thinking about the traditional Albanian watermelon and feta combination, and I knew that I would have to try it in some capacity at home. And that’s just what I did for dinner.

But first, lunch. We got off to a late start on the 4th. My husband was kind enough to drive our friend Kari to the airport for her flight to San Diego, and while he did that I went back to sleep. . . until 10:30! I never ever sleep that late, and it felt soooo good.

I woke up, blogged, did some cleaning, and then we headed to Yankee Lobster for a little New England seafood lunch.

Yankee Lobster is a cute little place for fresh seafood down by the Seaport area of Boston. They have great, fresh, cold, Harpoon beer on draught (the brewery is something like .1 mile away!), and in addition to all of the prepared foods, they also sell fresh fish and lobsters to cook at home.

We shared the fried oysters and a lobster roll with fries and coleslaw. The oysters were a hit with a crunchy, light batter, and bursting with briny ocean flavor.

The fries were excellent, but they don’t serve Heinz ketchup. . . next time I will bring my own. The coleslaw was really good as well, but the lobster roll was a little disappointing. The lobster was really dry, and while I used to love my lobster rolls with lobster salad: lobster, celery, mayo, I think I have become a devotee of the hot lobster roll with just lobster and butter. Decisions, decisions.

After hitting up a completely empty Trader Joe’s- apparently grocery shopping ON a holiday is a good idea- we had a relaxing afternoon at home and eventually decided to just stay in for the evening.

I cooked up some tofu hot dogs and then got started on this splendidly simple salad.

Chunks of cool, sweet watermelon, crunchy yellow bell pepper, creamy, salty feta, and a dash of olive oil and balsamic were all I used.

And next time, I think I would leave the olive oil and balsamic out and just let the flavors of the fruit shine through. Maybe a tiny handful of chopped fresh mint? All I know is that I am hooked on watermelon as part of a salad (or eaten by the bowl full for snack), and you will likely be seeing it here again.

After dinner, I ran into the living room to get something and discovered this:

Smuckers and Scout, sleeping together on top of the wine fridge. These two usually play and fight with each other, but I haven’t seen them sleeping together, and especially on such a small surface, in a long time. It was adorable.

Yes, that plate is theirs. They have their own plates in addition to their regular food bowls. Cats run the house, I tell ya.

The rest of the night was spent making chocolate chip cookie ice cream sandwiches and watching Shutter Island: cookies from store-bought cookie dough and Trader Joe’s brand chocolate ice cream which is the best ice cream I have had in a LONG time. I am always disappointed when we go out for ice cream, but this has just that perfect chocolate flavor and rich, creamy texture.

Looking back and feeling rested and refreshed, I am glad we decided to spend the holiday together, at home, relaxing.

Last night our friends Dan and Raquel got married in Gloucester, MA, and they had an absolutely perfect night for it, gorgeous weather, and fireworks all around to boot. Their wedding was at a marina which made an ideal setting for the day that was in it.

Inside the wedding tent, lots of unique little touches made the wedding theirs. Raquel loves elephants, and so the place card holders were little elephants. Each table was named after a book. We were at Slaughterhouse-Five.

The bride also loves the color red, and the simple red rose centerpieces really popped.

Loved my dress, which I bought in Provincetown a few weeks ago, but had a really bad hair day. I haven’t had a chance to get my hair fixed since the nightmare cut and color that I had awhile back. My highlights are ridiculous, like she blobbed on color in random places, and my hair is darker than my natural shade – I had asked to have it lightened. I just need to make the time to go back to my usual hair salon, but it’s hard to sit still doing nothing for a few hours!

Of course no great wedding is without great food. We started with a very fresh and flavorful mix of greens that included a bunch of spicy arugula. It was amazing.

I chose salmon for my meal, and it was grilled to perfection and served with asparagus, creamy mashed potatoes, and a fruit salsa dipping sauce. It was so yummy!

We ended up dancing the night away with a break for chocolate covered strawberry-topped cake.

The bride’s family came all the way from Barcelona, so I got to practice some of my Spanish. I really need to get back into speaking it more as I was definitely rusty!

I love summer weddings, but then again, I love fall, winter, and spring weddings as long as the couple is happy and having a great time. We have another wedding at the end of the summer in the Berkshires, and it is going to be a LOT of fun. We have been looking forward to it for about a year!

It has been a looong week! I have had some great fun, a dinner and a blogger fondue meetup, but everything else has seemed to be difficult. I am having a hard time finding balance right now with so much going on at work, my husband’s Masters and crazy schedule, and blogging.  And I want to keep blogging, fingers crossed!

Luckily, the weekend is right around the corner for a bit of rest!

With the days being longer and the weather warmer, we spend even less time at home and often don’t want to heat up the house  with cooking, so finding fast, cool meals is important. Last night I was tired. I’m talking the tired where I walk into things, forget what I am doing, and doze off when sitting down. So I decided to use a few simple ingredients for a 10 minute meal of bean salad stuffed avocados.

The goods:

1 ripe avocado

1 can black beans, rinsed

1/4 cup finely chopped red onion

1 cup grape tomatoes chopped in half

juice of 1 lime

Cut the avocados and use a small, sharp knife to peel away the skin.

Mix the beans, tomatoes, lime juice, and onion. Top with a sprinkle of sea salt. Fill each avocado cup with the beans mixture.

So simple and so delicious! The healthy fat in the avocados was filling, and the beans, tomatoes, and onions provide some good fiber and other nutrients. Not bad for 10 minutes! After I photgraphed these, I actually added each one to a big bed of butter lettuce and topped with shredded cheese. Yum!

I love the addition of the lime juice to this dish and the addition of citrus juices to meals in general. It is a great way to add tons of flavor and a refreshing zing to food without fat or a ton of calories. I will definitely be making this dish again, and I think I will be adding corn and chopped jalapeno to the mix.
