The title is a mouthful, isn’t it? And this easy pasta salad was too, a mouthful of lemony, garlicky, summery flavors, perfect for a late Sunday dinner at sea.

Making food for boating is tricky. It needs to be something that will keep fairly well and that will fit in the small fridge or in our cooler bag. And it has to be enough for a five or six hour trip, usually for four people.  One of the things I learned early on as a little boater was that eating is imperative. It’s actually when you don’t eat that you get more sick. So packing substantial food is key, and being creative is always important to me.

So important that Saturday night I could not sleep because I didn’t know what to make for a dinner outing with friends. We had cheese and crackers, pretzel thins, cookies, and salami, but we needed more. At around 4 am, I finally figured out all of the ingredients for this Lemony Arugula Pesto Tortellini Salad.

While a container of Trader Joe’s spinach tortellini and a half a bag of orrechiette boiled, I whipped up a simple pesto made with several cups of arugula, a cup of baby spinach, garlic, juice of a well-juiced lemon, olive oil, sea salt, and parmesan cheese.

The pesto was just so bright, due to the lemon, and slightly creamy from the parmesan and olive oil. It was bursting with flavor, and my warm pasta drank it in.

To the pasta I added a can of artichoke hearts, rinsed and chopped.

And two cups of sweet grape tomatoes, chopped in half.

Three chicken breasts were chopped, tossed in the pesto, and baked until done. Them using my vegetable scissors, I shredded the meat to top the pasta salad.

Once chilled, the salad was the perfect light summer dinner, packed with protein and flavor, keeping us full as we bobbed along the waves and watched the sun go down over Boston. I am definitely going to be brainstorming more creative pasta salad ideas for the summer, just hopefully not at 4 am.

There is nothing better after a day in the sun than a leisurely dinner. Inspired by the sea that we spend our weekend days on, this past Sunday we enjoyed a picnic dinner of New England favorites.

The first course was a mix of mesclun greens topped with fresh local peaches, goat cheese, and drizzles of honey balsamic and blood orange olive oil, one of my favorite additions to recipes ever. It was a light, simple  yet totally elegant starter and tided us over until we got the rest of the meal cookin’.

Our next course was lobster, two perfect Maine lobsters boiled and dipped in Kate’s butter with sea salt. Eaten while sitting on the floor, barefoot of course. I love sitting on the floor.

After salads and lobsters, we were full, so we decided to spend some time cleaning up and hanging out on the deck listening to Spotify. Do you guys have it yet? It’s pretty awesome. I could spend hours searching for songs.

Our third course was another simple one, steamers, lemony butter, and a giant soft baguette.

Lots of butter and bread and a couple of Harpoon summer beers later, we were stuffed. . . but not too stuffed for Magnum ice cream bars. Is there any other way to end a summer meal than with ice cream?

It might seem that I am obsessed with summer, and I would say that is perfectly okay.

Summah

I can hardly believe it, but I have been working on back-to-school and fall content for some of my clients. Sob. No really, I don’t ever want summer to end. I don’t know if I can take another winter like the last one. So while I worry about moving to California before the first flake falls, and because it’s Friday, I thought I would share some favorite shots of summer (or summah if you are in Boston).

I also love eating snacks for every meal of the day, maybe not the best for my waistline, but it’s great for the soul.

I love being salty. And dirty, and sweaty, with messy hair, in shorts and a bathing suit. It must be the eight year old in me, but I could live in bare feet and perpetually covered in sunscreen. When Sunday rolls around, as much as I love my job, I just want to stay beachy.

I have said it a million times before, but I adore summer in New England. I just thought I would stop and appreciate it before it slips away.
