When it is this cold out, the only food I want is hot or at the very least warm. We can live on raw salads all summer long, but for the most part, in the winter salads make me feel cold and hungry, wanting more.

As my official entry in the Olivia’s Organics Healthier Holiday Recipe Contest, I decided to make a beet and spinach salad with some fun toppings, wheat berries, toasted, spiced walnuts, and an orange-yogurt dressing.

Ingredients (serves 2)

4 cups Olivia’s Organics baby spinach

2 large beets, boiled, peeled, and chopped into half moons

1 cup shelled walnuts

1 cup wheat berries, prepared according to package directions

3/4 cup European style plain yogurt

juice of 1 orange

1 tsp each brown sugar and cayenne pepper

I started by boiling, peeling, cutting, and setting aside the beets. Next, I toasted the walnuts in a frying pan on low heat for a few minutes, tossing them at the end with a drizzle of olive oil, brown sugar, and cayenne.

While the nuts and beets cooled, I mixed up a simple but flavorful dressing made of plain yogurt and freshly squeeze orange juice. This idea was based on a dressing we had at The Citizen Public House last weekend, and it is now definitely a favorite of mine. So easy!

I had my wheat berries soaking in hot water for the entire day, so I actually didn’t even cook them. I like them to be very chewy, but if you prefer to cook them, the package directions should do the trick.

Once everything else was prepped, I simply wilted the baby spinach in a frying pan with about 1/4 cup of water. I wilted it down for quite awhile, but you can obviously feel free to cook the spinach as little or as much as you would like.  Smile

When it was time to plate, I made a mound of baby spinach and carefully laid the beets across the top, followed by a sprinkling of wheat berries. Around the edges of the plate, I sprinkled toasted walnuts and drizzled the orange-yogurt dressing.

This is a salad that stands up to the cold, tastes great, and offers quite the nutritional punch with lots of fiber, vitamins, and some protein as well. Beets and spinach together really make this a super salad that is made more lively by the creamy orange dressing. If you need a little more flavor, add some honey! This recipe could easily be increased and served on a big white serving platter to be passed around as a starter to a holiday meal, or like we did, eaten as a meal on its own.

Bloody Mary not required, but highly recommended. Winking smile Last night I was feeling very under the weather and wanted some comfort food which, for me, often ends up being breakfast food. I had eggs in mind as I have really been enjoying a diet higher in protein lately. A little extra meat, beans, dairy, or eggs has been helping me to feel full, and with marathon training around the corner, I need that.

I browsed the interwebs for “easy quiche” recipes and was surprised to find a bunch that involved mixing biscuit mix right in with eggs and other ingredients. I was a bit skeptical, but since I was so tired and hoping for an easy dinner, I gave it a go. As always, I used a variety of recipes as a base, then made my own mixture up.

Multi Grain Pancake Mix eggs

 

In my mix:

4 eggs

1 cup multi-grain baking mix

1 cup milk

1/2 cup grated Cabot jalapeno cheddar

2 cups chopped spinach

3 pats butter

garlic powder and black pepper to taste

I mixed the eggs and spinach together with garlic powder and pepper, then separately mixed the baking mix, butter, milk, and cheese. Before I poured them into a lightly greased pie plate, I thoroughly blended the two bowls.

Yes, that’s butter floating around in there, but don’t worry, it ends up being a teeny bit over the whole dish.

I cooked this at 350 for 40 minutes, then used the broil setting on high for a few minutes, until the smoke alarm went off. That tells you it’s done Smile

As you can see, the quiche was nicely browned on top and had that yummy brown butter flavor. And much to my surprise, the baking mix sunk to the bottom and made for a light and buttery crust. Talk about a lazy girl’s brunch dish! I served this with multi-grain toast, and we really did have Bloody Marys.

I mix in tomato juice, lime juice, Ketel One vodka, juice from my Mezzetta pepperoncini jar, horseradish, black pepper, and hot sauce. Delish!

I love the ease of this meal, how delicious and filling it is, and that it gave us leftovers for lunch. I simply can’t get ride of my lingering cold and am feeling super lazy!

Today begins the final countdown. . . one week of work left! Wahooo!

After a few days indulging in wine country and a few more days at home without fresh groceries, I just want vegetables. I feel like the next time I go on vacation, I need to hire someone to do some fresh food shopping for me for when I return! Hmmmm maybe I can start that sort of business? Or has Peapod already done it? 😉

Anyway, a quick, seasonal, and delicious salad recipe is always welcome in my life, and I thought I would share my latest favorite with you.

Only a few ingredients can make an outstanding dinner salad:

1 bag organic baby spinach

1 pint blueberries

1/2 cup crumbled honey goat cheese (from Trader Joe’s, sweet, creamy deliciousness! )

1/4 cup chopped Bermuda onion

I topped this with a mix of 1/2 cup balsamic vinegar, 1 TSP honey, and some ground black pepper and salt. It is summery perfection in a bowl.

I really never get sick of salad. Since I discovered Olivia’s Organic’s, I have loved salad even more, simply because they have great salad mixes AND their salads are always bone dry. The spinach I had been buying from Shaw’s was pre-washed but so wet that it rotted within a day, leaving it pretty much gross and useless, even for smoothies!

Today I plan on raiding the farmer’s market in Copley Square. I want squash, kale, tomatoes, and whatever else they have going on this time of year. And then I want lots of sleep and time to catch up on writing. I have about 15 posts in my head right now, and I just need the time to write them!
