I am pretty proud to stay that we have both been doing a really good job of working out 4-5 days a week, eating healthier, and cutting back on the old wine since 2012 started. I know it hasn’t been that long at all, but we feel great, and since we still allow plenty of indulgences (Hello, Old Fashioned’s, grilled cheese, and fries at Eastern Standard), we can keep it up. My health goal is basically not to be kicked down again this winter by the flu while my husband, who drives two hours a day and works for 12-14, is just to move more. However, if I end up a little faster and more toned, I will take it.

As you might have noticed, I have been blogging a little less (five days a week instead of six or seven) and not always about food. I have also felt that by not having to think of blog-worthy meals, I can focus on fast and healthy. If you have any topics that you are interested in reading about, let me know!

This dinner, which I also ended up eating for several lunches, is worth sharing because it was so delicious, quick, and satisfying.

We often order burrito bowls from our beloved South End spot, El Triunfo. They’re basically everything but the actual tortilla, which I rarely like, so they are perfect. In order to save some money, I decided to make our own burrito bowls, also known as salads. Winking smile

My burrito bowl was a pretty easy mix:

Chopped romaine (I so prefer eating salad that is chopped into small pieces)

1 1/2 cups of black beans that had been soaked and slow cooked with chili and garlic powders, canned are also fine

1/2 of a ripe avocado

Homemade lime crema – This is why I am blogging about the burrito bowls. It is my new favorite salad topper and veggie dip. I added the juice of a very juicy lime to a cup of Fage Greek yogurt, added a few teaspoons of olive oil to get a more dressing-like consistency, sprinkled in chili powder. . . and wanted to lick the bowl clean!

Meet your newest comfort food. I haven’t made a soup I loved this much in a very long time, and ever since I made it last week, I could not wait to share. I’ve made chicken tortilla soup in the past, but I was browsing through the Wine & Food Affair Cook Book (Which is AMAZING!), saw a recipe for chicken tortilla soup that included cornbread mix, and had to add it to my regular old recipe.

I find spicy food to be incredibly comforting, so I started the recipe by chopping 3 large jalapenos, seeds and all. I also chopped half of a white onion and added both to my Le Creuset French oven with some olive oil, letting them sizzle on low for about 10 minutes. Once the onions were softened, I poured in 32 ounces of low sodium veggie stock, Trader Joe’s brand. I love their pre-made stocks and keep a bunch on hand for recipes.

I got the veggie stock bubbling and then poured in the winning ingredient, 1/2 cup of Arrowhead Mills corn bread mix. I was afraid that it would clump, but I quickly whisked it in, and it became one with the stock.

Next up I poured in about 3/4 cup of my homemade salsa, one of my major addictions. I might make salsa every single day.

To the soup, I added three chicken breasts chopped into bite-sized pieces, then brought the soup up to a nice bubbling boil, making sure to stir it so that the corn bread mix didn’t sink to the bottom.

I also tossed in a little bit of cumin and chili powder. I let it all bubble away on a low flame for about 30 minutes until my husband got home, and then served nice big bowls topped with crumbled tortilla chips and cilantro. We later also added scoops of Greek yogurt as topping.

I love chicken tortilla soup, but the corn bread mix made a huge difference in this. It made the broth super rich and much thicker than a regular soup. It warmed me from head to toe, and I could not wait to chow down on the leftovers for lunch the next day.

I am tempted to cook every single recipe in the Wine & Food Affair book, it is that good.

It is so much easier to eat well in the summer! Are you absolutely loving the abundance of fruits and vegetables everywhere? I am. I have been grilling up a storm, and while my focus is mostly on grilled vegetables, a comment from Melissa reminded me how good grilled fruit is.

When I saw this box of local peaches at Trader Joe’s I immediately decided to make some dishes with grilled peaches.

I simultaneously made grilled peach salsa and grilled peaches and yogurt. For the salsa, I started with four peaches, pits removed. I put them on a hot grill and let them start cooking while I diced up a jalapeno.

I also cut about a quarter of a sweet onion and added that, along with the jalapeno to the food processer.

I also grabbed a peach to mash up in Greek yogurt. It was a delicious contrast of hot and cold, sweet and tangy.

Once the peaches were roasted and nicely caramelized, I added them to the onion and jalapeno. In went a squeeze of cilantro from Gourmet Garden, and round and round everything went until I had a nice, smooth salsa.

And it’s all gone. We ate it all in less than an hour. The combination of summery sweet peaches, spicy jalapenos, and sweet onions tasted so refreshing. The salsa was great warm and even better when it had chilled for a couple of hours. This would make an amazing topping for grilled fish or chicken or in tacos. I can’t wait to make more grilled fruit salsas this summer!
