Grill It

Happy wedding day to William and Kate! I can’t wait to check out all of the royal wedding fashion, food, and wine recaps! While the happy couple will never read this, I wish them all of the happiness in the world. I hope the British monarchy doesn’t do to Kate what they did to poor Diana.

If you aren’t William or Kate, I wish you a Happy Friday! Are you ready for the weekend and what looks like a lovely day? What are your weekend plans?

I am hoping to schedule my work day around some time outside, and then I will be getting ready for my nephew’s christening weekend. He has changed a LOT since that post!

As Healthy Recipe Week moves along, I have been doing a very good job of both creating healthy meals and getting myself moving every day. I am happy to report that a pair of pants that was quite snug a few weeks ago is fitting again, and I am overall feeling much more energetic and happier, except for the fact that I have been having horrible nights of sleeplessness. What is up with this humidity?!

Anyway, with the weather getting warmer, I was in the mood for some indoor grilling this week, and what is better grilled than asparagus and salmon?

I thawed a bag of frozen asparagus overnight and blotted them off to make sure they grilled nicely.

For flavoring, I cut up a few of the oranges I bought at Trader Joe’s. You can’t tell from this photo, but they are really pink inside, so pretty!

To get cooking, I rubbed a little bit of blood orange olive oil on a salmon filet and started cooking it skin side up on my indoor grill pan.

After a few minutes, I added the orange halves, face down, next to the salmon and the asparagus to the back of the pan. When the oranges were getting lightly browned, I squeezed two orange halves over the salmon and asparagus.

The salmon was cooked perfectly with lovely grill marks. I served the salmon and asparagus with additional grilled orange halves, discovering that eating grilled oranges is one of the best things ever. The orange pulp was warm and juicy and easily came out of the skin because it had been heated. Give it a try!

We ate this meal with a glass of my favorite white wine, Sheldon La Naris, proving once again that wine is indeed part of a healthy get-in-shape plan Smile

This was such a fresh and flavorful meal that I felt really good about eating. Hooray for brightly colored food all grilled up together!

Trying to drop a few pounds and to feel a little more energetic (hopefully) does not need to be hugely expensive and always labor intensive. I am hoping to set out to prove that over the course of the next few weeks and months while getting back to being the fit girl I used to be.

After our glorious and indulgent day out on Saturday, I spent the evening in bed, propped up with lots of pillows, and surrounded by cookbooks, ready to plan the week’s meals. It was a blissful evening. It didn’t hurt that Sex and the City II was on. I know most people hated it, but I thought it was cute. It was nice to hang with my old friends for awhile.

I got a lot of inspiration from the books, especially a book I reviewed last year, The O2 Diet. My eyes were made wide open to the need for antioxidants, Omega 3’s, whole grains, water, and all of those other things I probably don’t get enough of.

Somewhere in my head, I took about four different recipes I read and created something all our own for a filling Sunday lunch. I started with a favorite cheap ingredient, canned Alaskan red salmon from Trader Joe’s. I initially bought this as a treat for my cats but found myself stealing bites and realizing it had a ton of flavor. It is a bargain and can be the base to salads and pasta dishes.

Other ingredients included a large jalapeno, diced finely, a few teaspoona of non-fat Greek yogurt, a teaspoon of hot and sweet mustard, and a large handful of dried cranberries.

All mixed together to make a pretty pink and green salad.

To serve, I spread the salmon salad on whole grain bread and topped with slivers of Kerrygold Killaree cheese. This cheese has a nutty, salty flavor, and a little goes a long way, making it a top choice for trying to cut back a little while still enjoying real cheese. I just can’t do the low fat stuff.

I popped the open-faced sandwiches in the broiler for a few minutes until the cheese had started to melt. . . then got too hungry and decided we needed to eat them just the way they were!

Sweet, spicy, salty, soft, crunchy, and chewy, all in one meal. A success, if I do say so myself! Ever since the Oldways “For the health of it” event last year, I have been striving to add another salmon meal to my diet every week. With a simple, inexpensive recipe like this, I definitely think it is possible!

A bit of a Whole Foods splurge replaced going out for a birthday dinner, and I have to say I wouldn’t have had it any other way. As I mention in my About page, I truly do feel like the produce section, heck, most sections, of Whole Foods is like beautiful food art.

Among the things purchased? Mango juice for smoothies, sparkling Italian soda for cocktails, and Amazing Grass Kids Super Food, which happened to be on sale. The kids version is much better-tasting, and I am really looking for ways to amp up my nutrient intake.

I also picked up something I have been wanting for some time, a bottle of blood orange olive oil. It smells so beautiful, and I can not wait to make up some recipes that center around it.

Our original plan was to make up a bunch of appetizers for our dinner, but we ended up stopping at just a couple, crostini with smoked salmon spread, followed by Whole Foods’ guacamole, which happens to be one of my all time favorites. The smoked salmon spread idea came to me in the seafood aisle at Whole Foods, and I loved it so much that I had to share!

It started with half of a tub of crème fraiche. I love this Vermont Creamery brand. I also really love the story behind the company.

I added the crème fraiche to my mini food processer with a few slices of sustainable smoked salmon from Maine. It cost a little more, but the more I learn about sustainable fish, the more I want to try to buy from companies concerned with sustainability.

To make the spread, I very simply pureed the salmon with the crème fraiche until completely blended. It really isn’t the prettiest looking spread, but it was delicious. I think next time I would add in a tiny bit of chopped red onion for a bit of flavor and crunch.

While I was making the spread, I had baguette slices, drizzled in olive oil, baking at 400 degrees for about 10 minutes until golden and crunchy.

I whipped out a jar of grated ginger, a Whole Foods purchase from earlier in the weekend. Embarrassed smile

To serve, I topped the baguette slices with some smoked salmon spread and slivers of ginger. The ginger gave it a fresh brightness which paired well and provided a contrast from the creamy crème fraiche and smoky salmon. Chopped red onion, capers, tomato, or sweet/spicy peppadew peppers would also be great toppings. I am thinking the next time I have company, I will have a top your own crostini bar!

I am actually going to a Scottish smoked salmon event tonight, so I will have even more salmon (and whisky) for you tomorrow.

Spending my birthday evening in my kitchen was so relaxing; we even ate these picnic-style on the floor!

I think some people might think it strange that I wanted to prepare my own birthday feast; do you prefer to go out for special occasions, or do you have some great memories of preparing a special occasion meal in the comfort of your own home?
