Weeks before our trip to Sanibel Island, I learned that there were secret lunch plans in the works. My niece Isabella told us that there was a special place she was taking us for lunch, but she wouldn’t tell us where. It turns out that on their last trip to Sanibel, when she was not yet three, she enjoyed the whimsical Captiva restaurant, The Bubble Room.

After a morning at the pool for Isabella and a morning of boating for us, our group reunited for lunch. On the way to the restaurant, we were told we were going to a very boring place with no desserts and only alligator soup on the menu.

The Bubble Room is a great place for a family lunch. There is a LOT going on, from the second you pull into the parking lot. The restaurant sits on one side of the lot, and The Bubble Room Emporium gift shop sits across the way.

The outside of The Bubble Room is splashed with a rainbow of color on every surface, with music blaring from speakers. It provides quite the welcome.

Inside, the walls are decked out with photos of classic Hollywood stars. There’s barely an empty surface at The Bubble Room.

Due to the fairly extreme heat in Sanibel and Captiva, we were thirsty, and I cooled off  and refreshed with a deliciously fruity rum cocktail, a Captiva Cooler.

We were also starving and ready for some quick food. Our peppy and sweet waitress recommended Carolina Moons, a Bubble Room favorite made up of homemade potato chips, cheese, and bacon.

For lunch, I decided to have a bowl of gumbo. Spicy, rich, full of seafood and okra, and served with crunchy toast, the gumbo was exactly what I was hoping for and more. It really let me enjoy some of the flavors of the South and made me want to try to do some more regional cooking.

The Bubble Room is famous for its desserts, slices of cake the size of my head, in a variety of different flavors and types. While our waitress explained each cake to us, my one-and-a-half  year old nephew gazed at the tray lovingly. It was adorable.

We were full and ready for some beach time, so we brought home a giant piece of cheesecake and one of The Bubble Room’s signature orange crunch cake,  yellow cake with orange icing and an almond and brown sugar crunch. We dug into those much later in the day after dinner at Gramma Dot’s.

While waiting, my niece gave us a tour of the restaurant. One of her favorites is this festive Christmas room, a little creepy if you ask me!

There’s a lot going on, and touring each room of The Bubble Room made the short wait for our food go by quickly. The food was great, and the restaurant definitely provided a memorable place for a family meal. I have a feeling we will be back.

One of the places I have fond memories of visiting is Four Seas Ice Cream in Centerville, MA. Eating ice cream on hot summer nights, running into Kennedys, and taking walks down to Craigville Beach define those Cape Cod summer nights.

It’s that time of year again; the grills are out, the farmers markets are open, and friends and family are getting together to celebrate the season. It’s the perfect time for easy, fresh food, and I thought the below recipes were worth re-posting. Here are a few of the things I find most delicious in the summer time. Add to these a nice cold beer or glass of bubbly, a steamed and buttered lobster, and some raw oysters, and you have my perfect summer feast. I am very excited about June. I have my annual girls’ weekend at the Cape (Go UMASS!) next weekend, and we are finishing the month off with a family trip to Sanibel Island. Get me to the beach!

Our first meal of 2012 was brunch at Papagayo. It was fabulous, and contrary to what  I said about writing about food this year, I did take pictures, and I will be blogging about it. A make-your-own Bloody Mary bar is worth writing about.

Unfortunately, brunch, followed by shopping for new running shoes, followed by grocery shopping, was too much for my illness-worn body, and by the time dinner rolled around on January 1, I was back in bed. At 6:00.

Thank goodness for Sex and the City marathons to pass the time. Oh yeah, and Homeland and Midnight in Paris. Clearly, I had an active weekend. I pretty much did nothing for three days, but I don’t feel at all relaxed. Does that even make sense?

Anyway, I woke up Monday with my 10th day of a sore throat but feeling better. I was determined to make something delicious for dinner, even though my appetite was still missing.

I started by cleaning a whole chicken and popping it into a large tupperware container for brining. On my way home from Ireland, I watched a Jamie Oliver Christmas special on the plane, and I had been thinking about his jerk ham brine ever since. I used some elements of it as inspiration for my own brine.

I coated the chicken in salt and let it sit out in the open air while I mixed up its bath for the day.

Ingredients:

About 1 cup of Brugal white rum – I planned to use more, but I think it evaporated because most of the rum was gone.

A ton of spices – fresh black pepper, garlic powder, cayenne pepper, chili powder, paprika, cinnamon, and more salt

I added the spice mixture and rum to the chicken, rubbing it on with the back of a spoon and filling the cavity with some of the mix. Then I poured in enough water to cover the chicken, added more salt, some cumin, mixed it all up, and then put the sealed container in the fridge for about six hours.

Before I was ready to get cooking, I set the oven to pre-heat to 375 and got started on some veggies. I found these beautiful sweet peppers at Market Basket, and they were the perfect thing for roasting, along with some yellow onions.

Once the chicken was out of the brine, I stuffed it with a few pats of butter and let it cook for about an hour and 20 minutes until crispy and golden. In the meantime, I mashed up a bunch of sweet potatoes with SO Delicious coconut milk. I highly recommend.

The chicken smelled amazing, and the peppers cooked down really nicely. Apologies for the mangled drumstick, I went to check it, and it fell off.

Yum. I served the chicken atop the sweet potatoes and alongside the peppers and onions, topped with a simple homemade gravy. It was such a satisfying, delicious, and somewhat healthy meal and a great way to kick off the New Year. Lots of leftovers mean lunch for both of us today!
