After a long boat day, easy meals are key. Usually, we end up ordering from Shanti, our favorite Indian restaurant, stopping by Savin Bar + Kitchen, ordering sushi from Van Shabu, or just eating random stuff around the house.

Lately I have been on a mission to eat better and to spend less on takeout that we sometimes don’t even really want. Planning ahead for meals that require a few ingredients and minimal preparation is key. This past weekend, after a long hot day out, I headed home and after a little shower and rest, I put together a pretty spectacular meal, if I do say so myself.

All it took were a couple of beefsteak tomatoes cut into thick slices, a red onion, also cut into thick slices, a handful of gorgonzola cheese, a splash of balsamic from our trip to Eataly, and a good steak from Whole Foods.

Since it was raining, we pulled out the indoor grill pan and threw on the steak, simply seasoned with pepper on both sides. Next up, I grilled the onion, just so that it was a little soft on the outside. I like onions to still have a little bite when cooked.

Finally, I put the tomato on the grill pan for about 30 seconds before taking everything off and assembling stacks of tomato, steak, and onion, topping each with a handful o gorgonzola and a drizzle of balsamic.

This dinner took less than 20 minutes, but it felt like a fancy restaurant meal. Good ingredients, simple preparation, and flavors that go well together all made for a delicious dinner. I love summer.

It has certainly been awhile since my kitchen has seen any cooking action. Between the heat, events, dinners out, and a wonky appetite, I have avoided cooking in favor of eating something, anything I didn’t prepare.

It was time to get back into it with a little help from my friend Pinterest. I found a recipe for cheesy broccoli bites and decided to make my own take on it.

Ingredients:

4 cups of chopped broccoli

1 cup (dry) of red rice, soaked overnight and cooked until al dente

1 cup shredded cheddar cheese

1/2 cup Italian bread crumbs

3 eggs

This recipe is simple; just mix everything together, preferably with your hands, and form balls with the mix. Pop the broccoli bites into an oven that’s been preheated to 375, and bake for 20 minutes.

Once the broccoli bites are done, they will be a little bit larger due to the melty cheese. This is not a bad thing.

Serve with a creamy honey mustard sauce, mine is about 1/4 cup Greek yogurt, 1/4 cup brown mustard and a blob of honey. Enjoy!

These broccoli bites would be a fun and not-too-indulgent treat for a party or for dinner with a salad. I bet bacon would be a nice addition. . .

Charleston, South Carolina, in just a few short days during a work trip years ago, became one of those places I want to visit again and again. I just haven’t made it back quite yet. It’s beautiful, it was in the 70’s in January, there’s a waterfront, lots of great shopping, and of course amazing food, like the dinner we had at High Cotton. Ever since, I have craved shrimp and grits, fried oysters, and fried green tomatoes.

To whip up an easy, summery meal, I decided the other night to make my own low country boil.

Old Bay

A low country boil could not be easier, and it made for a really full flavored meal that we ate picnic-style on the kitchen floor. I love the ease of summer!

Here’s what I included in my low country boil:

1/4 stick of butter

1/2 large white onion, chopped

2  jalapeños, chopped

1 package turkey kielbasa

3 ears corn, broken in half

20 medium shrimp

enough water to cover the corn

Putting the boil together is as easy as heating the butter in a large pot, adding the onion and jalapeño and letting them cook for a couple of minutes. I then poured in the water and Old Bay and added the corn and kielbasa and waited for it to come to a boil. The shrimp went in very last, and once they were pink, the boil was done. I don’t like my corn too cooked (in fact I nibble it raw sometimes!), so if you are making this, you may want to add a little bit of time after everything starts boiling.

Because I was having a major craving for clams, I also made a bunch of New England steamers and butter as a side. This meal was perfection!
