So simple. So delicious. The easiest way to quickly answer almost any dessert craving.

After missing the desserts at Tico on Tuesday, I had a nagging craving for peanut butter and chocolate. Add that to a random cheesecake craving and the inability to leave the house, and you have one hungry, bored, brainstorming blogger.

I don’t even remember where I got the recipe, but last year at one point I made Oreo cheesecake bites, simply by mixing cream cheese and crushed Oreos in the blender. May sound gross to some, but I am a cream cheese fiend, and it certainly did the trick for me.

Enter the peanut butter chocolate cheesecake bite.

Start with one package of cream cheese, left out at room temperature until really softened.

Grab a few spoonfuls of peanut butter.

And as many chocolate chips as you desire.

And mash it all together in a bowl or mixer. Believe it or not, in my current flu-induced state mixing this made me tired.

Once the ingredients are blended to your liking, give it a few tastes to make sure there is enough of everything. This recipe is so easy because it is totally up to your palate to decide.

Refrigerate the mixture for at least an hour so that it is nice and firm, and then start scooping. I used the measuring spoon from the Foodbuzz swag bag. It made a neat little ball that was easily popped out. You could also use a small ice cream scoop or melon baller or even just your hands.

After I was done, I thought these little cheesecake bites might look better if I rolled them in the chocolate chips, rather than mixing them in. But, we were the only ones eating them and they were good enough for us.

These cheesecake bites are not super-sweet, but if you preferred them sweeter I am sure a little confectioner’s sugar would do the trick. I am also thinking these would be great with Nutella instead of peanut butter, rolled in cocoa powder instead of chocolate chips. The possibilities are endless!

What are your favorite dessert combination? I have so many, including lemon and raspberry, chocolate and orange, chocolate and raspberry, chocolate and coffee, and, of course, chocolate and peanut butter.

As soon as I saw Blog is the New Black’s Peanut Butter Chocolate Chip Biscotti, I knew it wouldn’t be long before I was baking some of it in my own kitchen.

And as soon as I made the biscotti, I decided it would be the perfect guest post for Meghan. If you’ve followed Travel, Wine, and Dine for a while, you may have noticed that Meghan has recently stepped up her baking a lot. I like to think I’m partially to blame for that! You see, my love for baking has no boundaries. There isn’t a day that goes by that I don’t think about heading into the kitchen and throwing together some delicious baked goods. I think sometimes that passion can be infectious. And I think that after our trip to King Arthur Flour together, Meghan caught a little of that passion too. So, that said, it’s only appropriate that I do a baking guest post for her.

Peanut Butter Chocolate Chip Biscotti (adapted from Blog is the New Black)

Ingredients

3 cups flour

2 teaspoons baking powder

½ teaspoon salt

6 tablespoons unsalted butter, at room temperature

¾ cup creamy peanut butter (Note: I used half this amount — 3 ounces — and then dipped the biscotti in a pb-chocolate mixture)

1 cup sugar

2 teaspoons vanilla extract

3 large eggs

1 cup mini chocolate chips

Preparation

Preheat the oven to 350˚ F. Line a baking sheet with parchment paper or a silicone baking mat.

In a medium bowl, whisk together the flour, baking powder, and salt.

In the bowl of stand mixer fitted with paddle attachment, combine the butter, peanut butter, and sugar.

Beat on medium-high speed until fluffy and smooth, about 1 to 2 minutes. Blend in the vanilla, and beat in the eggs one at a time, scraping down the bowl between additions.

With the mixer on low speed, blend in the dry ingredients just until incorporated, and then mix in the chocolate chips until evenly distributed.

Divide the dough in half. Shape into logs on the prepared baking sheet, about 11-by-3 inches in size, spacing at least 3 inches apart.

Bake for 25 to 30 minutes. Remove the pan from the oven while maintaining the oven temperature. Let the logs cool for 10 minutes.

Slice the logs diagonally into slices about ½- to ¾-inch thick.

Lay the slices, cut side down, on the baking sheet.

Bake, turning the pan once, until the slices are slightly crisp, about 20 to 30 minutes more.

Transfer to a cooling rack and let cool completely.

Optional: Melt about 3/4 cup of bittersweet chips (or milk or semisweet chips if you prefer) in a wide, shallow, microwave-safe dish, and stir a heaping tablespoon of peanut butter into the melted chocolate.

Dip one side of the biscotti in the chocolate peanut butter mixture, and place chocolate side up on a cooling rack or piece of wax paper. If the chocolate starts to thicken, pop it in the microwave for 10 seconds, stir it up, and continue dipping.

Place the biscotti in the fridge to allow chocolate to harden.

Serve with coffee or hot chocolate.

Who else is completely snowed in? We are thankful to have made it home safely from Christmas in NJ yesterday. My plan was to stay in NJ until this afternoon, but with the doomsday forecast, the husband and I decided to leave at 8 am yesterday to make sure we beat the storm. The traffic was mad, and we beat the storm by about 15 minutes. Unfortunately, we didn’t have the time to do our weekly grocery shopping. After days of eating cookies, meat, cheese, and consuming wine and beer, we also needed some vegetables, so I spent a few minutes browsing the refrigerator and got a little creative.

I started with an entire onion, sliced into rings and a habanero pepper, seeds removed, sliced into tiny pieces, and added to some extra virgin olive oil in a hot pot.

While those softened, I cut cauliflower and carrots into bite-sized pieces and dried out some kale that I had frozen last week.

I added those veggies to the olive oil to sauté for a few minutes. For the soup stock, I pulled out some frozen turkey stock made after Thanksgiving and thawed it quickly in the microwave. Having homemade stock in reserves is handy and delicious!

After I poured the stock in, I brought the veggies up to a boil for a few minutes, then lowered it to a simmer and added a can of rinsed black beans and a can of fire roasted tomatoes in adobo seasoning, given to me by my friend Megan.

All together now!

Everything simmered together while I did some kitchen cleanup, and then I served up the soup with a key ingredient, a spoonful of peanut butter! I was watching Top Chef: All Stars, and inspired by Carla’s spicy groundnut stew, I decided to use what I had to make my own version!

The spice, combined with the salty, peanutty peanut butter flavors made this dish a winner. The plethora of veggies was just what my body needed to refuel after eating so many indulgent treats.

Alongside the soup, we each had a piece of whole grain bread topped with Kerrygold Red Leicester cheddar cheese melted in the oven.

We also followed up with some Christmas cookies. It IS still the holiday season! Growing up, we considered it to be Christmas until the Epiphany, January 6, and I stand by that rule for celebrating to this day.
