Cannellini beans are my current obsession. I love how creamy they are; they TASTE fattening and rich but are very low in fat, high in fiber and protein and mineral-rich. They are the perfect addition to or base for many fall recipes.

With Whole Grains Month on the brain, I started out with a base of whole wheat pasta and built a delicious, simple sauce that was ready in less than half an hour.

Ingredients:

2 cups chopped tomatoes, the last of my heirlooms

1 small red onion, chopped

1 whole head of garlic, smashed and diced into tiny pieces

1 cup sweet garlic red peppers

1 can Cannellini beans, drained and rinsed

1 box whole grain rotini (makes enough for at least 3 leftover servings, perfect for lunch!)

25 medium shrimp, cleaned

4 cups baby spinach

I started by simmering the red onion in olive oil on low for about 5 minutes to make sure that it was cooked through before adding the garlic, tomatoes, peppers, and shrimp. When the shrimp was pink on one side, I flipped them and then added the Cannellini beans to the mix

Everything simmered together for a few minutes, and I tossed in some crushed red pepper, garlic powder, and black pepper. Then I added in the spinach and just let it sit on top of everything to wilt ever so slightly. When the shrimp were cooked through, I took a scoop of pasta and a heaping ladle-full of shrimp and sauce and mixed them together in a bowl.

SO GOOD! All of the flavors melded together, the sauce thickened a little bit, and the pasta had a nice bite to it but quickly soaked up the remainder of the sauce.  This meal was so warm and hearty and so tasty, the perfect thing for a dark and rainy night. I will be making it again.

I have been spending quite a bit of time in the kitchen lately. I think since I have so many weekends away coming up, I am just enjoying hanging around the house and cooking up a storm. Earlier this week, I had the bright idea to make homemade ravioli, perhaps a lofty goal for a weeknight after a day of work, a run, and some blogging, but it turned out okay.

I looked at a bunch of random online recipes and got the gist of the ingredients involved. Since we only had wheat flour in the house (I will remedy that soon!) I was stuck making wheat pasta.

I used three cups of flour, two large eggs and enough water to turn it into dough. It was a messy mess.

I used my fanciest of rolling pins, an empty wine bottle, to roll out the dough. I do have a pasta maker, but I didn’t set it up for this venture. Probably a bad idea. . .

I let the dough sit for awhile while I mixed up a quick, simple filling of goat cheese, shrimp, and garlic powder.

I added scoops of filling along the dough, placed the other layer of dough on top, and used a glass to cut the ravioli out. Finally, I used a fork to seal the ravioli, making sure the filling didn’t fall out.

Totally rustic, right? My dough was a little too thick, and I will  most definitely use the pasta maker next time and probably more water. It kept ripping when I tried to get it thinner 🙁

I planned on making a homemade heirloom tomato sauce for the ravioli, but by the time I was done rolling out the pasta dough and all, I decided to use another of the samples that Lucini sent me, Spicy Tuscan Tomato Sauce. It ended up being the perfect choice. Once the ravioli were cut open, the goat cheese and spicy sauce sort of combined to make a nice, creamy sauce.

As we get closer to the holiday weekend, I will be taking a break from my kitchen adventures. I am exhausted!

I am going to a wedding in the Berkshires for our friends’ wedding this weekend, and I can not wait to break out of the office Friday at 2. It has been quite the week!

I love my Boston blogger friends. There’s nothing quite like a night out eating and drinking with them, and when you add in a delicious, hospitable North End restaurant like Villa Francesca, you have the best Monday night ever.

I left work on a very humid, cloudy evening and wandered over to the North End in what ended up being our first rainy evening in quite awhile. As a result, I was early for the event, just to get out of the rain. I ran into Alicia and Michelle at the bar which was a perfect way to kick off the night.

Kristen soon came up to meet us, and as organizer of the event, she was a fantastic hostess. The downstairs setup was pretty sweet with oysters and Prosecco waiting for us.  Two of my favorite things!

I ate several deliciously briny oysters washed down by a glass and a half of Prosecco, all while checking out Villa Francesca’s beautiful wine cellar. It’s quite wonderful to find such a wine cellar in Boston. . . it looks like it should be in a Tuscan villa.

After mingling with some of my favorite bloggies like Katie, Megan, Daisy, Lara, Renee, and Twitter friend Justin, we sat down for a dinner of never ending delicious food and wine.

I had started upstairs with a Nero D’avola and kept sipping that downstairs while also trying a sample of the white which was a pale in color, grapefruit-y delight whose name I can’t remember.

We all shared a family style antipasto, and the spicy salami was the perfect counterpart for salty cheese and fresh tomatoes and basil. The vegetarian in me looks away when antipasto is served. . .;)

I thought we were all set with appetizers when we were EACH served this Fettucine con Gamberi, homemade pasta with shrimp in a light, flavorful tomato cream sauce. I could have been done eating here, satisfied with delicious homemade pasta. . .

But there was more! Sole served with some of the best potatoes and escarole I have ever eaten. Everything tasted so delicious and delicately flavored. I was stuffed by the time my plate was taken away. . .

But homemade, filled to order cannolis were next. And who am I to say no to a cannoli? Especially one made to order. I had mine with ricotta, chocolate chips, and powdered sugar, filled by the owner of Villa Francesca himself.

I loved meeting Bill, Villa Francesca’s owner, and hearing about the restaurant’s quality, homemade ingredients. Dining in the North End can be overwhelming with so many choices, so being able to try out a new restaurant at last night’s event was pretty amazing. I for one can not wait to explore their wine cellar more and to eat their food again. It was a delicious evening that I was privileged to be part of.
