Because it’s Monday, and somehow Mondays during the holiday season are extra hard to get through, I’m sharing a few holiday wine and food ideas. Whether you’re entertaining for 10 or more or just having a quiet night for one or two, it’s worth treating yourself to something special this season.

And let’s face it, we’re all preoccupied with food, wine, and fun this time of year, and you’re already counting down to the weekend despite the fact that it’s only Monday (and I have to work 8:30 – 4:30 on Sunday; Saturday is still a day off!).

Greet your guests (or just sit back and relax with a special someone) with oysters and little glasses of your favorite dry bubbly or wine of the sea.  The Martín Códax Albariño is really perfect for any seafood your serve but would work especially well with a chilled seafood platter of oysters, shrimp, and smoked salmon.

Serve your oysters with something a little different, perhaps a chipotle mignonette (my favorite!) or an apple ginger mignonette. Just because it’s cold doesn’t mean everything has to be heavy and overdone; the zip of a mignonette with some gorgeous briny oysters are a welcome brightness in the dead of winter.

While you’re mingling and listening to your favorite festive music (Harry Connick Jr.’s When my Heart Finds Christmas and Bing Crosby’s White Christmas are two great options.), have your main courses already on their way to perfection.

The below photo probably looks familiar, since I blogged about this red wine gravy roast not too long ago. Another way to make a rich, delicious roast is by first marinating it in espresso and spices, which I did this weekend. Gourmesso sent me lots of samples of their Nespresso machine friendly pods, and I have been loving their coffee in my cup as well as in recipes. I cooked my most recent roast in the slow cooker on low all day with some beef broth and three shots of espresso, along with spices like black pepper and garlic powder. Toward the end I added pearl onions and butternut squash and served with a sweet potato mash and a carrot salad (recipe coming later this week). A roast is an easy thing to set and forget, and it’s a fun place to play with bold flavors like strong coffee or a big Cabernet.

Broccoli Cheddar Casserole is a must-make side dish, no matter what your main course is. For Thanksgiving, I used Tiffani Faison’s recipe, which was featured in Spirit Magazine. Here’s a similar recipe; I used fresh broccoli and didn’t have lemon juice in mine but otherwise this is pretty close. Everyone at Thanksgiving was raving about this dish, and I will be making it for Christmas. It would go perfectly with a roast prime rib, which is what we normally eat on Christmas Day. A casserole topped with Ritz crackers and butter might not be fancy, but it is good.

Brussels sprouts are a great side to a beef roast, and they are particularly delicious when mixed with some form of bacon. Roast your sprouts until soft with thick cut bacon, red onion, and a splash of cider vinegar for a salty, tangy treat.

‘Most people think of cranberry sauce as a side for turkey, but I love a spiced ginger and orange cranberry relish with just about any protein. A cranberry cocktail is just as delicious; add a scoop of cranberry relish to the bottom of a glass and top with whisky or rum and soda water and ice. Instant sparkly, strong holiday cocktail!

If you’re like me, you’ll let your guests bring dessert. I am not one to care about or fuss with sweets, and it’s always good to have a dessert lover share his or her favorite!

Everyone is talking about the 4th of July, and rightly so. It’s our nation’s birthday, a day for celebrating, and it happens to fall on a Friday this year, giving many of us a glorious long Summer weekend. We’ll be escaping Boston for the Berkshires and James Taylor; seeing him at Tanglewood has been a dream of mine for years, and my wonderful husband got me tickets this past Christmas.

The 4th of July is a great time for parties and BBQs, and festive food and drink (Hello, blueberry/strawberry American flag cake.) are all a part of it.

The brand I work for, Sonesta Hotels, reached out to its US full service hotels for 4th of July cocktail recipes, and they posted a great round up of cocktails. I have included a couple below in my own roundup, and you can view all of the cocktail recipes here.

Boston Tea Party Cocktail – by ArtBar at the Royal Sonesta Boston

1 ¼ ounce tea flavored vodka
¾ ounce St. Germain
Splash of lemonade
Splash of iced tea
Combine and stir.  Served over ice with lemon garnish

 

Summer “Thyme” – by Sonesta Fort Lauderdale (a new location)

1 oz fresh pineapple
1 oz fresh Key Lime juice
1 oz St. Germain
1 oz simple syrup
2 oz Cazadores Tequila
Garnish: Key Lime twist and sprig of fresh thyme
Muddle fresh pineapple and key lime juice in shaker. Add St. Germain, Simple Syrup, Tequila and Ice and shake.  Strain and serve over ice, top with Key Lime twist and sprig of thyme

Happy Christmas Eve! It’s one of the most wonderful weeks of the year for many, and it often includes lots of delicious and festive food. Last weekend, as I watched the snow fall out our kitchen windows, I pulled together a silky, simple soup that would make a great Christmas side dish. It’s one of those make-to-taste types of soups where adding your favorite ingredients just makes it better. roasted butternut squash

Mine started with roasted butternut squash; I love how roasting brings out the flavors! Once the butternut squash was roasted, I set it aside and prepared my Granny Smith apple and onions, which I sautéed together in a little olive oil.

I love the tart/sweet flavors imparted by a Granny Smith in the soup! To mix in even more flavor, I added a few generous shakes of Hot Madras Curry Powder. You know I love my curry!

When the onion and apple were soft, I added in the butternut squash and enough chicken stock to cover everything, allowing it to bubble for a little before I tossed everything in the blender to blend until smooth and creamy. The final touch for the soup this time was a splash of cream. However, the soup is great and creamy without, if you wanted it healthier. Just sub veggie broth and leave out the cream to make it vegan. The flavor in this soup definitely comes from everything but the cream!

Butternut Apple Soup

I ended up enjoying this soup reflecting on the past year and all of its blessings and challenges. I am long overdue on a post, but our new home definitely captures blessing and challenge in one place, on a daily basis! We absolutely love it, but it also always seems like there’s something to do!

Still, it’s a great place to cozy up; I can’t stop looking out the windows, where we have so much more open space than we are used to. Though I am not a fan of snow, I can’t help but marvel a little at the Winter Wonderland around us.

And getting up in the morning is a little easier with this view. It’s made me stop each day to be thankful that I get to see another sunrise, even when I am groggy and the last thing I want to do is run through a full day again. Boston sunrise

I am spending tonight as I spend every Christmas Eve, with my family at my uncle’s house; I can’t imagine doing it differently. It is definitely one of those blessings I count on every year and am so grateful for.
