A few weeks ago, I received an email asking me if I would be interested in trying some recipes from The Secret Ingredient by Sally Bee. Never one to turn down recipes, especially ones that are both healthy and delicious, I jumped at the chance.

Sally Bee’s cookbook is unique in that, at a very young age, Sally suffered several heart attacks. Some information from her About page is below:

At the age of 36, Sally was in the prime of her life, she successfully juggled a career as a writer and TV presenter, as well as looking after her three young children. Her life seemed perfect.
Then in 2004 Sally suffered three major heart attacks in the space of only one week. Unbeknown to her she was born with a major heart defect that had the potential to kill her at any time. The main artery which feeds her heart had become entirely dissected (SCAD) With Sally’s life hanging in the balance, doctors asked her husband to come and say his final goodbye. It was a huge surprise to doctors when Sally managed to survive three precious hours, astonishingly she also survived until the next morning!
Five years on, Sally appears to be glowing with health. Unfortunately there is no medication that can ever cure her but in spite of this she tries to live her life to the full and be as healthy as she can possibly be. She is a big believer in living life actively and in not making a distinction between ‘tasty food’ and ‘healthy food’. Sally is nothing short of a miracle and continues to confound doctors’ expectations.
Sally is a fund raiser for heart charities and is a trained therapist giving regular talks to heart rehabilitation groups. She is also an NHS ‘Expert Patient’ having completed the expert patient programme through Stanford University, USA.

 

I didn’t have time to do much research before I received the book, and I was surprised at how vibrant it is and how “normal” all of the recipes seem. I guess with the author being a heart patient, I was expecting really restricted eating. Not in this book. In fact, as many of the recipes are such hearty comfort food, I will definitely be using it often in the fall and winter. Things like Guinness Beef Stew and Magnificent Moroccan Chicken will definitely be making blog appearances!

The Secret Ingredient by Sally Bee

Since I had an abundance of tomatoes and bell peppers from the farmer’s market, I decided to make the Italian Blushing Pasta which required me to roast grape tomatoes, red bell pepper, and a whole head of garlic, topped with garlic powder, oregano, black pepper, and crushed red pepper. I changed up the spices a little to make it spicier for my heat-loving palate 🙂

As the veggies roasted (for about 50 minutes at 375), I cooked up some multi-grain pasta. We eat pasta pretty rarely, but over the years I have definitely stopped buying white pasta altogether. There are so many great options out there that offer great whole grains with a delicious extra bite. This was from Barilla.

Once everything was cooked, I combined the ingredients, added a bit more crushed red pepper, and served the pasta, topped with a little bit of goat cheese that may have not been part of the original recipe. 😉

We also had an Olivia’s Organics mixed herb salad with fresh farm tomatoes and a little basil oil that I made by throwing a huge bunch of basil in the food processor with some EVOO. Yummy.

The recipes in The Secret Ingredient are simple but also offer a wow factor that make many of them perfect for entertaining as well as for every day. They are broken down into Soups & Starters, Salads, Sides & Vegetarian, Chicken, Fish, Beef, Lamb & Pork, and Desserts. Each recipe is marked with Everyday or Treat, showing just how each one fits into a balanced diet. Sprinkled throughout the book there are tips for eating better, whether it be better fast food, including a rainbow of veggies, or learning proper portion sizes.

I am excited that many of the recipes in this book will be perfect for fall and winter weather, we all know we get enough of that in Boston, and staying in with some good homemade food and wine is the best way to get through it. I have to say while I enjoy summer, I look forward to those chilly nights. . .

If you could create the perfect season what would it be? Mine would include farmer’s market produce year round, warm, sunny days, and really chilly nights. Actually, that already exists. . . Northern California 😉

After the week that I had with 2 dinners out (Bin 26 Enoteca and Stephi’s on Tremont) and 2 wine tastings (Boston Wine Exchange and Vino Voyage), all I wanted was some healthy food and some rest. I found the below post, which was a guest post I shared on Simply Life awhile back, and decided to use it as inspiration for some of my upcoming quick, warm weather meals.

I wanted to share with you a few simple, go to ideas that we return to again and again for quick, delicious, after work and gym bites that are filling, inexpensive, and versatile. Maybe they will even inspire your grocery shopping list this weekend? 🙂

Wraps

Nothing is easier than tossing a wrap together at the end of a long day. This one is a brown rice wrap from Trader Joe’s spread with about 2 TSP of tomato paste, homemade pesto, ¾ ball of ooey gooey burratta, and baby spinach. All of the ingredients can be found at Trader Joe’s, and each wrap cost a couple of dollars at most. I love tomato paste’s super concentrated flavor. It adds lycopene to your diet, and provides a lot of deliciousness for about 15 calories a teaspoon.

Mexican night!

I love the flavors of Mexican food, but all of that cheese and sour cream can be fattening and make you feel sluggish. My favorite at home dinner of all time is a taco salad made with a huge bed of greens, lentils that have been spiced with cayenne and chili powder, jalapenos, a satisfying sprinkle of shredded cheese, 0% Greek yogurt, and a handful of chopped avocado. This meal is like eating at a restaurant, and it can be put together in about 15 minutes, especially if you pre soak the lentils with all of the spices over the weekend.

We eat a LOT of soup and sandwiches in our house. Making a veggie packed soup is so easy, and they can be made low fat and vegan by using light coconut milk or almond milk. This particular soup is a blend of fire roasted tomatoes, garlic, roasted red peppers, and almond milk, topped with a generous shake of red pepper flakes. On the side, I like to serve multi-grain bread with a soft cheese like goat cheese. It feels so decadent, and yet so easy to make, high in nutrients, and is a good way to use up things you may already have in your pantry. Other homemade soup favorites include butternut squash and green chili lentil chowder. tir fries

Another delicious mix of flavors, textures, and best of all, nutrients, stir fries are a must at least once a week. Whether its shrimp with broccoli, ginger, garlic, soy sauce, and red pepper flakes as in this photo, or beans stir fried with corn, peppers, and sweet potatoes for a succotash-like dish, stir fries are another way to have dinner on the table in under a half an hour while still feeling good about the food that you are eating. Take that fast food!:)

Crudite

Sometimes I like to eat like I am at a cocktail party. It’s fun to have a little bit of this and that, some veggies, whole grain crackers, shrimp with spicy cocktail sauce, hummus, olives, etc. This is especially nice for really hot nights where you can’t bear to cook. Pull up a blanket on the kitchen floor, open a bottle of vinho verde, and relax!

The added bonus of all of these meals is that they can be doubled or tripled and packed up for lunch. With another busy week ahead including an opening party for Basho, a new restaurant in Boston, and a Healthworks blogger bash (I am SO excited for this one!), I want to make sure I have plenty of healthy staples on hand to keep my energy up!

Ever since our heavenly dinner at Menton I was craving macarons, so I did some googling and found out that Aroa, a chocolatier that I pass on my way home from work, had really good ones.  After a horrendous dentist appointment Tuesday morning, a really bad start to the day, I decided to pick up a treat to eat while watching Lost, and I ordered 4 salted caramel macarons and 4 chocolate macarons to share with the hubs. I arranged them in my nana’s crystal cracker dish when I got home, and they fit PERFECTLY.

After icing my poor knees for awhile, I got started making shrimp and corn fritters, a recipe from Secrets of a Skinny Chef that I have been eyeing for quite awhile. Once again, Jennifer Iserloh’s recipe did not disappoint!

I started out by cleaning and deveining a bunch of shrimp, then chopping them roughly and setting them aside.

I didn’t have fresh corn, but the next best thing is Trader Joe’s frozen roasted corn, also known as an amazing addition to any dish. I absolutely love this stuff and try to keep a bag on hand at all times. Its great in a black bean and corn salsa.

I was surprised at how easy this recipe was. I unfortunately can not share the recipe, but if you have a copy of Secrets of a Skinny Chef, it is in there! It may also be on the book’s website where you can find lots of great recipes.

The flavors of smoky roasted corn, sweet shrimp, and the spicy curry powder I used all went really well together. Since these are cooked quickly in a tiny bit of olive oil, then put into the oven at high heat, they have a nice fried food tastiness and satisfaction, but they aren’t  really your typical fried food. I was pretty proud that I made something with a batter that didn’t fall apart!

I served these fritters with roasted potatoes for my pre-marathon carb loading and some salad to fit in a serving of greens. It was a perfectly filling, balanced, and most importantly, delicious meal!
