Clean Eating

Now that the Christmas holidays are over, I am back from vacation in Ireland, and I have a few days off of blogger events, our focus has turned a little more to “clean” eating. I sometimes wonder, when I am writing a lot about wine, big meals, events, and baked goods, if people think I am just on one big unhealthy eating spree after another.

In reality, about 90% of our diet is pretty healthy, but there are definitely those times we overindulge and don’t feel great as a result. My renewed focus is on eating foods that provide us with tons of energy; I do have the Napa Marathon in less than a month, in addition to a few exciting work-related things keeping me busy.

For me, clean eating is not about choosing the foods lowest in fat or calories, but it is about adding as many nutrients as possible into what we eat for each meal while also making sure things taste delicious.

Most days, though I don’t photograph it Smile I eat oatmeal for breakfast. I have many variations, but it usually starts with a fantastic Trader Joe’s mix of barley, oats, and rye, mixed in with Silk Vanilla Almond Milk (the only almond milk I can drink on its own, SO good!) and topped with some sort of fruit and/or peanut butter. Part of my clean eating goals is adding antioxidant-rich foods into the mix, so we stocked up on frozen blueberries this week. Oh, how I long for fresh blueberry season!

Breakfast is usually a one-two punch. I follow my oatmeal, maybe an hour later, with a green smoothie. Depending on the day’s activities, I may or may not add almond butter and oats to the smoothie, but a typical day includes almond milk, banana, microwaved spinach, a little bit of water, and a glug of flax seed oil.

My favorite peanut butter is from Trader Joe’s. Their Valencia Peanut Butter with Roasted Flaxseeds is roasty and a little bit salty, making it perfect for my smoothies but also an AWESOME topping for vegetables, along with some sriracha.

And speaking of Trader Joe’s favorites, their Organic Flax Seed Oil is, as I have mentioned above, is not only a key ingredient in my smoothies for those Omega 3’s, but it has become my all time favorite moisturizer. My skin is AWFUL in the winter, extremely dry and dull, and putting this oil on twice daily, including on my face, has made my skin feel so much better. I swear by it.

Lunch can be pretty random. In the case of yesterday, which is when I photographed all of these meals, I went for a 20 mile run. After I run, I am often nauseous, and eating can be difficult. Yesterday, all I wanted were nachos, so I whipped up some healthy ones using Trader Joe’s flaxseed tortilla chips (seeing a trend here with TJ’s and flax?!), a bit of shredded Kerrygold cheese, Greek yogurt, homemade salsa, jalapenos, and hot sauce. the nachos didn’t stand a chance and sadly did not make it into a photo Smile I was just happy to have an appetite after running for so long!

For dinner, I always try to have a good mix of vegetables and protein. I don’t always succeed; there are definitely nights where roasted potato wedges and ketchup are all I can muster. But with the warm weather we have been having, and inspired by all of the gorgeous salmon we ate in Ireland, last night’s dinner was a super energy salad, dubbed such because of all of the healthy fats in it.

This beauty featured baby spinach, avocado, red onion, and smoked salmon, topped with a lemon juice, olive oil, and sea salt dressing.

It was delightful. When it is warm enough out, clean eating means lots of salads with great, varied toppings so they never get boring. I can not wait until salad season!

And what would a great, healthy dinner be without an antioxidant-packed glass of red wine? I love Pinot Noir with salmon, and a small glass of Michel-Schlumberger Dry Creek Valley Pinot Noir was just the thing to pair with the meal.

The original plan for last night’s dinner was to continue using up every morsel of food we have in the house. With a swag bag full of beautiful Muir Glen tomatoes from the Garden at the Cellar/Muir Glen Vine Dining event and chicken drumsticks in the freezer, left over from my chicken adobo night, I set out to make a sort of hunters stew like the stew from Nigella Lawson’s Nigella Express.

I started by thawing the chicken and decided to cook it in vinegar as I did for the adobo recipe. Unfortunately, the chicken looked really wrong when it started cooking. Let’s just say there was a lot of blood, and it just kept coming. . . and so my stew became vegetarian.

The ingredients: 1 can of tomatoes, 3 cloves garlic, crushed, and chopped finely, 1 can of white beans, rinsed, about 20 teeny tiny potatoes, and about 1/2 cup of orzo

I know, two different starches in one dish; I was feeling physically pretty blah by the time I started cooking last night. I have been having a lot of fun with my really hard workouts lately, but as a result I don’t think I refuel enough.

I seriously chowed down on this dinner.

It was quick and simple. I boiled the potatoes in about a centimeter of water until the water was almost boiled away. To that I added the tomatoes, juice and all, a bit more water, and the garlic and cumin. Once everything was at a nice boil, I dropped in the orzo so that it could soak up the tomato goodness. At the very end, I mixed in the white beans, topped with crushed red pepper, and served myself a giant bowl.

Alongside a glass of Travessia Urban Winery Jester, a red blend made right here in Massachusetts, this meal was perfect comfort food and just what I needed to brighten up an exhausted day. Except, I really wanted nachos, and I still do.

Baked Potato Bar

Oh healthy day! If you are like me, you have had your fair share of cookies, cheese, wine, beer, and gravy over the course of the winter so far. And if you are like me, there will probably be some unhealthy “hibernating” food as we get snowed in tomorrow yet again. 

I love to eat creamy soups like the corn and crab chowder I am working on, indulge in cake like the flourless chocolate cake I am making this evening, and taste all sorts of delicious wines, but I only enjoy those things because of a careful balance. Healthy weekday meals are a major part of that balance. While I find my breakfast and lunch usually a little too mundane for blog fodder, I am pretty excited about some of the easy, healthy dinners that we have.

One recent, make ahead meal was a baked sweet potato bar. I knew we were going to be out of the house all day and until about 8 pm without a chance to grab dinner, so the night before I baked two large sweet potatoes all the way through. When dinnertime came, I just popped them in the microwave to heat up.

As you would imagine, baked stuffed potatoes of the regular variety are pretty big in Ireland, where they are called jacket potatoes, and some of my stranger baked potato combinations are actually things I have eaten there. One Galway restaurant I love to visit is called Couch Potatas, a cozy café where you can get potatoes stuffed with everything from curried vegetables to coleslaw, beans, and cheese. For some reason, there is a LOT of coleslaw in Irish cuisine. I generally like it, but it’s a bit much when you order the salad plate and every salad on the dish is covered in mayo. I have learned to ask over the years Smile

On this particular evening, I did decide to make my baked potato with the coleslaw, baked beans, and aged Kerrygold cheddar combination.

I pre-purchased the coleslaw from Market Basket which was a bad idea; it is much better to make this sort of thing on your own.

In my potato, I also used half of a can of vegetarian baked beans and a handful of shredded cheddar.

I also ended up sneaking in a couple of scoops of homemade hummus, my own very simple blend of chickpeas, tahini, lemon juice, and garlic.

Baked potato bar nights are a favorite in our house because of the versatility of the toppings. From grilled chicken, to vegetarian chili, to tuna melt potatoes, baked potatoes are a fun, quick, and cheap way to get in a healthy meal after a long day.
