Trying to drop a few pounds and to feel a little more energetic (hopefully) does not need to be hugely expensive and always labor intensive. I am hoping to set out to prove that over the course of the next few weeks and months while getting back to being the fit girl I used to be.

After our glorious and indulgent day out on Saturday, I spent the evening in bed, propped up with lots of pillows, and surrounded by cookbooks, ready to plan the week’s meals. It was a blissful evening. It didn’t hurt that Sex and the City II was on. I know most people hated it, but I thought it was cute. It was nice to hang with my old friends for awhile.

I got a lot of inspiration from the books, especially a book I reviewed last year, The O2 Diet. My eyes were made wide open to the need for antioxidants, Omega 3’s, whole grains, water, and all of those other things I probably don’t get enough of.

Somewhere in my head, I took about four different recipes I read and created something all our own for a filling Sunday lunch. I started with a favorite cheap ingredient, canned Alaskan red salmon from Trader Joe’s. I initially bought this as a treat for my cats but found myself stealing bites and realizing it had a ton of flavor. It is a bargain and can be the base to salads and pasta dishes.

Other ingredients included a large jalapeno, diced finely, a few teaspoona of non-fat Greek yogurt, a teaspoon of hot and sweet mustard, and a large handful of dried cranberries.

All mixed together to make a pretty pink and green salad.

To serve, I spread the salmon salad on whole grain bread and topped with slivers of Kerrygold Killaree cheese. This cheese has a nutty, salty flavor, and a little goes a long way, making it a top choice for trying to cut back a little while still enjoying real cheese. I just can’t do the low fat stuff.

I popped the open-faced sandwiches in the broiler for a few minutes until the cheese had started to melt. . . then got too hungry and decided we needed to eat them just the way they were!

Sweet, spicy, salty, soft, crunchy, and chewy, all in one meal. A success, if I do say so myself! Ever since the Oldways “For the health of it” event last year, I have been striving to add another salmon meal to my diet every week. With a simple, inexpensive recipe like this, I definitely think it is possible!

Muahahaha. . . would my husband notice if I replaced the chicken in our chicken salad with Quorn meatless chicken cutlets? Would I notice a huge difference? Let’s find out!

As many of you know, I am a former vegan and vegetarian who has, in recent years, discovered the deliciousness of humanely raised, organic meat. But, for our health and the environment, I have been returning a little to my vegetarian ways and have been looking to get enough protein while eating more meatless meals.

With a plan to make a sweet and spicy chicken salad in mind, I decided to just substitute Quorn chicken for the real stuff.

For my salad, I started with about a cup and a half of grapes, cleaned and cut in half.

I also cleaned and chopped three stalks of celery, including the leaves.

And about two tablespoons of ginger

I mixed up the faux chicken, celery, ginger, and grapes with a sprinkle of salt, several spoonfuls of curry powder, and about a cup of Greek yogurt.

I served the salad on homemade focaccia bread, the easiest yeast bread I have ever made, and one that I will be making again and again, maybe even several times a week. Interested in the recipe? Read my afternoon post!

The sandwich was, perhaps, a little unseasonable for a snowy night, but it was delicious.

The look? Just like chicken salad. The taste? Pretty darn close. With all of those ingredients mixed in the chicken took a back seat. It provided a nice, chewy texture and mild flavor and I had to ask my husband later if he noticed anything different about the chicken Smile To his credit, he had worked over 14 hours after four hours of sleep, so I can’t blame him for missing the change. I have to say, I might have been fooled myself!

It’s going to be a great week. I have a lot of fun events coming up as well as a few interesting meetings, so I am looking forward to the week ahead. Still, I am tired. This weekend we went to visit my family in NJ, and due to my husband’s crazy work schedule, were only able to go for one day. We left before 8 am on Saturday and left my mom’s at 11 on Sunday with five hour car rides on both sides.

As a result, I am pretty tired, but it was so worth it!

I was treated to some great birthday gifts including an Anthropologie gift card to get this dress and some great new cooking and baking stuff which was wrapped in wrapping paper decorated by Isabella.

The weekend also brought cupcakes from a local bakery.

We had dinner out and spent the weekend just hanging out. It was perfect.

But when we got home, both tired from the long journey, we did not feel like grocery shopping. I had to get creative to get something together for lunch for the next few days.

Enter, three cups of black beans we had soaking over the weekend.

And a little gift from my friend Megan, charcoal wheat which had also been soaking over the weekend.

I grabbed a few green bell peppers that were on their way out and chopped them up, along with a habanero and half of a red onion.

Sautéed the vegetables in a little bit of oil

Then I added in the beans and charcoal wheat, a few sprinkles of cumin and garlic powder, and stirred.

We’ll both be eating this for our next few lunches, most likely cold, as a salad, so I am glad that it tastes good and is healthy! Smile
