Cool rosé wines, corn, tomatoes, strawberries, seafood, and all things grilled conjure up images of summer dining for me. It’s been so hot out the past few days, and after three solid beach and boat days in a row, sun exhaustion set in. Overall, I’ve kind of lost my interest in cooking and eating lately, but we still have to eat, and summer makes that process a little easier and more fun.   It’s easy to fill a shopping basket with healthier options in the summer time, and here’s what part of my grocery haul looked like this week.

Note to self: pack my own groceries to avoid smushed tomatoes and bruised zucchini.

summer vegetables  I wanted a quick and healthy meal that would last us for dinner and a few lunches this week, so I simply cooked up some quinoa, squeezed in a  very juicy lemon, and added vegetables and fruit. The zucchini and corn I pre-cooked and cooled, while the tomatoes, red onion, jalapeno, and peaches were raw. Topped with some crumbled feta and served at room temperature, this delicious and easy favorite came together in minutes and barely required heating up the kitchen. I have a feeling it will be making repeat appearances all summer long with different vegetables and fruits thrown in as the seasons change.

With the weekend around the corner, I thought I would share some other favorite summer recipes.

This grilled corn salad is absolutely delicious. It is the perfect barbecue side dish.

almond meal pizza with peaches, arugula, goat cheese, prosciutto

Grilled peach, arugula, and prosciutto flatbread is a summery twist on an easy favorite. Flatbreads are a great canvas for fresh, local ingredients, and an almond meal crust adds some protein and nutrients.

Not pictured is one of my favorite summer meals, perfect for a weekend: lobster, steamers, buttery boiled potatoes, and corn. Now that I think about it, I don’t think there’s anything better than eating in the summer time. Time to get out there and seize the season!

I would love to hear about your favorite summer recipes. Please feel free to share links in the comments!

I long for the days when it is too hot to cook, the days where sprawling on a chair near a fan with a cold drink or some ice cream is all you can do. After this winter, I even long for those too-hot nights where it feels like mid-day at midnight. Ask me in August, and I will probably be singing another tune; I don’t love extreme temps either way, but I just feel so ready for heat right now.

As soon as I heard that this week would be warmer, I started planning out no-cook meals for picnics at home. Literally, sometimes we eat on the kitchen floor. It’s fun.

Ever since the Scottish salmon event I attended, I had been planning a night for a smoked salmon platter for dinner, and this Monday was perfect for it.

creme fraiche

Crucial ingredients included my favorite Vermont Creamery crème fraiche and some dark pumpernickel bread.

The star of the show was Nova salmon from Trader Joe’s. This comes in at about $7.99, but it lasts for several meals. Since it is such a good source of protein and other nutrients, and finding a protein I like is difficult, I call this a worthy splurge.

Dinner was assembled in about five minutes. I chopped some tomatoes, red onion, and cucumbers. I meant to also include hard boiled eggs but remembered way too late. Next time for sure. We plopped ourselves on the floor and piled our bread high with crème fraiche, veggies, and salmon and caught up on our days. It was a lot of fun and a much-needed relaxed dinner. Sometimes I get so wrapped up in photos and having meals to blog about that I don’t even enjoy them.

We were having guests over late in the evening for the TasteLive! event so I decided to put out some snacks. I whipped up a last minute dip that was pretty spectacular. It was so easy I thought about NOT sharing on the blog, but it was so good I had to.

white bean sun dried tomato dip

Three cloves of garlic, a can of white beans, and about three tablespoons of chopped sundried tomatoes, into the blender or food processer.

Blend everything together until smooth. I served it with some whole wheat crackers, and it was devoured. The dip doesn’t need oil because white beans are so creamy, so this is a really healthy, light option. I used the leftovers as a spread for a turkey sandwich.

Once the really warm weather comes, I will be looking for lots of fun, no-cook recipes. Do you have favorites for when the mercury starts to rise?

Trying to eat more veggies, but tired of the same old dishes? I was feeling this way over the weekend, so I dreamed up a recipe for a roasted vegetable salad with feta that ended up being out of this world.

roasted vegetables

I started with a giant sweet potato, a yellow onion, a peeled eggplant, a bunch of carrots, and some butternut squash chunks, cutting and peeling everything as needed. After tossing them in oil, I put the carrots, sweet potatoes, and butternut squash into a 420 degree oven to get started while I prepped the dressing.

red pepper flakes, coriander, cumin

The dressing was really full of flavors and textures which made this veggie dish so enjoyable. I used about a teaspoon of red pepper flakes, a teaspoon of coriander seeds, crushed, and a half teaspoon of cumin. I absolutely love coriander, so I kept some of the seeds whole, roughly crushing them in a bowl with the back of a spoon.

One of the other key ingredients in the dressing was a fig jam that was in my swag bag from the Boston Food Blogger launch party.

To a little bowl, I added a teaspoon of the jam, the spices, and about a half cup of balsamic vinegar. Then I streamed in olive oil until the dressing tasted just right.

When the veggies were soft and browned, roasted to perfection, I scooped them into bowls and poured some of the dressing over them, tossing to coat all of the warm vegetables.

I cut up a bit of Athenos feta to sprinkle over the top.

And sat down with a glass of wine and a really satisfying dinner. I planned on heating up some chicken sausage with these veggies, but I ended up pretty full from them.
