So easy, so delicious, so healthy! Fish cooked in a foil packet means a juicy, flavorful, healthy meal with very little cleanup and little to no butter or oil required. Winning! (Did I just write that? For the record, there are few people I can say I hate, and Charlie Sheen is one of them. What a jerk.)

Anyway, back to the good stuff. I have been resisting tomatoes all winter. They are all grown so far away or are just not very good in the winter that I don’t bother. But I have been craving summery recipes in the worst way, so I decided to take the leap and buy a box of cherry tomatoes over the weekend.

I built the rest of the dish around them. A beautiful filet of haddock from my favorite little local, Dorchester Market, played the part of the healthy protein. I simply laid it in the foil and surrounded it by juicy tomatoes.

Then I topped it with three cloves of garlic, cut into thin slices. Well, as thin as my patience allowed. To that, I added a drizzle of blood orange olive oil. You could leave this out and just let the fish steam in its own juices, but I am obsessed with blood orange olive oil, and I knew it would make this dish super fancy. Smile

I topped the fish with slices of lemon and some black pepper, wrapped up the foil tightly, and popped it in the oven at 400 for 17 minutes.

I should mention that I cooked the fish from frozen. I bought it fresh, but when I realized we wouldn’t have time to eat it for days, I put it in the freezer. It was very thin, so the cooking time was perfect. Discovering the ability to cook fish from frozen and still end up with something so fresh is a miracle.

I served this dish with a great veggie side, which I will share in tomorrow’s post. It was a meal that not just tasted really great, but it also felt really good. Now if we could just get some spring weather, and I am talking 60 degrees or higher.

I made an amazing dinner last night, if I do say so myself. My kitchen creativity has been off with my health, somewhere where I can’t seem to catch it, but last night I definitely felt it coming back. Now if only I could feel better and find my energy. Last week the doctor said I could expect to be exhausted for 10-14 days, but honestly I am over looking forward to bedtime at 11 am, coughing, and feeling achy all day long.

But I digress. Dinner last night. My original plan was to make traditional turkey meatball subs with mozzarella cheese, onions, peppers, and red sauce. After a quick survey of things I needed to use up before California, I decided to make a Greek-inspired dinner, starting with half a block of Athenos feta.

I started by chopping and crumbling the feta until it was in small crumbs. I mixed it with a container of ground turkey, an egg, a teaspoon of oregano, and about a cup of panko bread crumbs.

Feeling un-well, I was totally grossed out by making the meatballs, but I rolled up my sleeves and got to work, placing them on a baking tray and then putting the meatballs in the oven at 375 until they were starting to brown.

At the very end, I turned the oven to broil which was a nice finishing touch.

To top the meatballs, I used some of the abundance of Fage 2% yogurt that we have to make a quick sauce. It couldn’t have been easier. I popped four garlic cloves, peeled, a jalapeno, a handful of cilantro, and some ground black pepper in the food processor.

Then I added about a cup of Fage, whirled it all around, and had a tangy sauce for the meatballs. Despite the jalapeno, it wasn’t spicy, just really flavorful.

I served up the meatballs in romaine lettuce leaves, topped with the yogurt sauce, with a side of Trader Joe’s naan.

I actually added more lettuce and sauce after the photo shoot, but thought this was kind of pretty Smile We do usually eat more than what is in my photos.

Miracle Broth

Old Man Winter, I am lookin’ at you. Never in my life have I had two major illnesses in one year. The endless snow and below-freezing temperatures in this relentless winter are surely to blame.

After a few days of feeling achy, feverish, stuffy, and with a deep cough, I finally made my way to the doctor’s yesterday, where it was determined I have a virus that could leave me feeling down and out for 10-14 days. No antibiotics, just rest, fluids, and over the counter medicines. Boo. Every inch of my body hurts from the inside out.

I am incredibly grateful that I already decided not to run the Napa Valley Marathon. Otherwise, this would definitely have finished me. I guess what’s meant to be. . .

I feel pretty awful, and other than meds that knock me out, I knew there was only one thing to make me feel better yesterday, my Miracle Broth. This is not for the weak of palate, but it can definitely be tweaked for those of you who are spice-phobes.

The Miracle Broth is four simple ingredients, habanero, ginger, garlic, and organic vegetable broth.

Basically all you need to do is finely chop a few cloves of garlic, a habanero pepper, and a knob of peeled ginger and to cook them in two cups of veggie broth until nice and warm.

Allow to cool enough to drink, and then sip slowly, reheating as needed. It will make you sweat, clear your sinuses, soothe your throat and might even spark a missing appetite. In the past couple of days I have not eaten much, pickles, a carrot, a cookie, and some tortilla chips, and the broth brought me back to life enough to eat dinner.

And then go back to bed.
