Buying food is one of my favorite things to do, right up there with tasting wine and visiting places where wine is made (or where food is made!). Saving money on day-to-day things so that I can do the above is also a favorite of mine, so I am always on the lookup for bargains and often compare prices from store-to-store.

Back in October, the Target in the South Bay Shopping Center in Dorchester got all fancy and became part-grocery store. South Bay is not one of my favorite places; it can be downright chaotic, but it’s close, and as much as I love me a small, local store, I do love Target.

And their grocery section is good! They have a lot of great deals, especially for their Archer’s Farms brand. A favorite this time around? Strawberry Cheesecake yogurt. It really tasted like cheesecake and made for a nice little Monday breakfast with some walnuts.

Target had some of my favorite things, including these addictive sweet peppers.

While I was making dinner, I kept washing and eating them raw. I had to make myself save some for the chicken, which turned out to be skillet chicken with sweet peppers, tomatoes, and goat cheese.

I was happy to see that Target offers some humanely-raised chicken. It was a little more expensive, but this is one of the places I am willing to spend more.

Here you see the chaos of my cooking station. I try to get lunches and dinner done at the same time. And eat olives while I cook.

The chicken was a really simple preparation. I threw it and a lot of olive oil into a pan and got it cooking. I wanted to make sure the outside got golden brown.

When both sides were cooked, I added in grape tomatoes that were getting to that wrinkly point and the chopped sweet peppers. I topped it with a little more olive oil and some garlic powder and let it cook away while I made some spinach with lemon and garlic to go underneath.

It always amazes me how spinach cooks down. An entire bag of fresh baby spinach made two teeny servings. It was good, but I want more spinach!

Once the chicken and vegetables were cooked I put them on top of the spinach and then topped the whole thing with goat cheese which started getting nice and melty with the heat. After feeling icky for days, this bright meal was just the thing to help boost my energy. I am having daily freak-outs about my inability to run, with the marathon coming up more quickly than I would like. I am hoping some good eating and a little more rest will have me back to normal soon!

Hel-lo Monday! First off, I have to start with a HUGE thank you to all who came out Saturday for our Boston Marathon ALLY Foundation fundraiser! Thank you, thank you, thank you! We raised $2,000 from your generosity. Also a special thanks to the wonderful Connie from The ALLY Foundation for bringing a special prize that included tickets to the Flip Flop Regatta and for calling the raffle for us.

I took a half day of work on Friday inadvertently after deciding it was a good idea to take Theraflu night time at 1:00. I have had a really bad sore throat and cough, and I needed some pain relief. I thought I could work through it, but it turned me into a zombie.

On Saturday morning, the last thing I wanted to do was to get ready for an event, but we had errands to run. After getting some grocery shopping done, and picking up the raffle cookies from Cow & Crumb, we decided to head to Kendall Square for brunch at Area Four.

But not before literally almost blowing away and also almost losing the car door due to wind! It was so windy that the wind flung my door open. The sound it made was not pretty.

Area Four has a great vibe, and I am already looking forward to returning to hang out at their bar. I was feeling pretty awful, so I skipped the usual brunch beverages and had a green tea lemonade.

With comfort for my throat on my mind, I skipped all of the other delectable sounding menu items and went with the mushroom soup. It was a simple soup, but it was a perfect choice. The texture was velvety, and the flavors really earthy. It was delightful.

My husband had the breakfast sandwich which looked amazing. He ate every last crumb,

Saturday flew by, and it was soon time to head to Savin Bar + Kitchen to set up raffle items and to get some dinner. I enjoyed a germ-killing Beekeeper’s Bourbon with some mac and cheese, one of my favorite dishes at Savin.

And then it was party time! We had so many wonderful friends and family come to the party, and many of them brought friends as well. It was fun to meet new people, mingle, and raise money for a very important cause. The night went by so quickly, and it just made me want to spend more time with everyone!

I literally spent all day Sunday sleeping or laying in bed watching TV. I had planned on a day of work to help get in gear for the week, but a late night and my illness knocked me out. I guess sometimes it’s good to literally not be able to do anything.

I am also still really excited about CHLOE’S KITCHEN. It was 100% the inspiration for our Pancake Tuesday dinner, though I didn’t quite follow the recipe. I made them un-vegan. That’s actually another one of the things I love about the book; it’s easy to mix it up and adapt the recipes.

For my cornmeal jalapeno pancakes, I started by chopping up three large jalapenos.

I added the jalapeno to two cups of cornmeal, along with a pinch of salt, mixed it all up, and then added in a cup of milk, a half cup of cream, and two eggs.

I then mixed it all up, added a little more cornmeal to thicken, and cooked it in a skillet on the stovetop until the top was bubbling. At that point, I put the skillet into a 350 degree oven until the top was firm.

I served the pancake with a simple salad of spinach and grated carrot. We actually topped these pancakes with a little butter and maple syrup, and the sweet and spicy contrast really made this dish. The pancake was  a little dense, but the flavor was wonderful, and it made for a nice, filling meal.

This week has been another doozy. . . I just can’t sleep which has thrown off my focus and my running, making everything seem difficult. Luckily I get to spend tomorrow night with so many fun people raising money for a great cause!
