A recipe so simple I almost didn’t post it, these swordfish skewers with pineapple salsa are the essence of summer. They require very little prep and very little cleanup, but they pack a healthy, flavorful punch that will impress any barbecue guest.

As I mentioned a few posts ago, a project I was working on unexpectedly ended, leaving me with some extra time on my hands. I HATE down time, so not having enough work is never a good thing. I’ve been trying really hard to fill those extra hours with fun things, so on a sunny day last week, I went for a run that ended at the grocery store. (Um, never, ever a good idea.)

I knew I wanted to make something bright and healthy, so I gather ingredients for an easy pineapple salsa: pineapple, red bell pepper, white onion, cilantro, and lime juice. If you are not a lover of spice, this salsa is for you. I simply blended all of the ingredients together to make a smooth salsa that we could use to dress the main dish.

The swordfish kebabs took just a few minutes to assemble and cook. Fresh swordfish and multicolored bell peppers went together very nicely, grilled to perfection, and topped with a generous portion of salsa. Next time I might add chunks of pineapple to the skewers as well; I can’t get enough of it! The best thing about meaty fish like swordfish is that it is super satisfying and filling without feeling heavy. This dinner felt like a spa meal!

The run and the dinner (which I packed up to eat on the boat) cheered me up and helped me to enjoy the slowdown a little. You never know when things will pick up again! (I hope it’s soon).

Well hello there!  It’s been quite a few days since my last post; I don’t think I have gone this long without posting since I started blogging! I took a work and blogging break for my annual college roommates trip to Provincetown and Truro, and while I am simply exhausted now, I am energized and ready to get back into things.

There is no place in the world like Cape Cod. I’ve said it before, and it’s true, no matter where I live in the world, Provincetown and the Cape will always be places I come back to. While I get back into the swing of things, I leave you with a few photos of my favorite things on the Cape. Our weekend included lots of time in the gorgeous sun, lots of good food and wine, a brief trip in a kayak (where I lost my sunglasses and found them when they washed ashore the next day!), and of course, dancing. I can’t wait to do it again next year.

My top five favorite places in the world include Provincetown, Galway (Ireland), Sonoma, Boston, and Vienna. What are yours?

What do you get when you combine bacon, caramelized onion cheddar, and almond meal (plus eggs, oil, baking powder, and milk)? The answer is incredible savory muffins just perfect for a post-workout breakfast. Or a lazy breakfast in bed. Or as the base for an egg sandwich. You really can not go wrong.

Ever since my first almond meal cooking experiment, the almond meal pizza crust I made a few weeks ago, I have been a huge fan of almond meal, adding it to yogurt for an extra bit of protein and making cakes with it. I’ve been doing some more weights leading up to the kickoff of my NYC Marathon training, and I have definitely felt the need for protein.

I knew I wanted to bake something else with almond meal, but I didn’t want it to be sweet. A quick Google search brought me to this recipe for Almond Meal Cheese Muffins, and other than omitting the parsley, I followed it exactly.

I decided to use a cheddar with caramelized onions from Trader Joe’s as my cheese. If you see this cheese definitely pick it up. It’s delicious.

I mixed up all of my ingredients, popped the mix into my muffin tin, and let the muffins bake for about 18 minutes. The smell of baking cheese is delicious. When I studied abroad in Ireland, my roommates and I would line baking sheets with foil, sprinkle them with shredded cheese, and make our own cheese crackers since we couldn’t find them there. The smell of these muffins kind of reminded me of that.

When they were ready, I let them cool and then gave one a try. Light, fluffy, savory, these muffins got me thinking about other combinations and additions. These definitely won’t be sticking around for very long. . .

Are you a sweet or savory/salty breakfast person? I personally can not eat things like donuts or Danishes for breakfast; if I do I crash big time and it’s really unpleasant. With all of the protein from the almond meal and bacon, these are just about perfect.
