My Kind of Dessert

I love a dessert that requires no flour, baking soda or powder, pre-heated ovens, or even baking. Through my time poking around Pinterest, I have found dozens of recipes for everything from cocktails to dessert to healthy meals in between. I kept coming across Chubby Hubby truffles, and since they are the perfect marriage of salty and sweet, I decided to combine the Chubby Hubby idea with the haystacks I made as a child (peanut butter, chocolate, chow mein noodles, and sometimes butterscotch chips) and made chocolate peanut butter pretzel stacks.

I started by crushing a cup and a half of pretzels. Crushing things after a long day is fun, so this was one of my favorite parts.  I set aside the pretzels while I got to work on the main part of the dessert, the peanut butter mixture.

It contained:

1/2 cup creamy peanut butter

2 teaspoons light brown sugar. . . after my last baking snafu I finally bought some!

3 teaspoons powdered sugar

1 tablespoon softened butter

a pinch of salt

Once the peanut butter mixture was whipped up, I folded the crushed pretzels in and then made little stacks out of the pretzel peanut butter mixture.

I let these chill in the fridge for a few hours and then added the final touch, a dollop of melted chocolate on each stack.

Once chilled, these were a delightful two bite treat. They don’t look like or contain as much chocolate as the traditional Chubby Hubby truffles, and I didn’t intend them to. I just really liked the flavor combination. And my not chubby hubby did as well! I think he preferred me calling them something different, to be honest. Winking smile

I am pretty proud to stay that we have both been doing a really good job of working out 4-5 days a week, eating healthier, and cutting back on the old wine since 2012 started. I know it hasn’t been that long at all, but we feel great, and since we still allow plenty of indulgences (Hello, Old Fashioned’s, grilled cheese, and fries at Eastern Standard), we can keep it up. My health goal is basically not to be kicked down again this winter by the flu while my husband, who drives two hours a day and works for 12-14, is just to move more. However, if I end up a little faster and more toned, I will take it.

As you might have noticed, I have been blogging a little less (five days a week instead of six or seven) and not always about food. I have also felt that by not having to think of blog-worthy meals, I can focus on fast and healthy. If you have any topics that you are interested in reading about, let me know!

This dinner, which I also ended up eating for several lunches, is worth sharing because it was so delicious, quick, and satisfying.

We often order burrito bowls from our beloved South End spot, El Triunfo. They’re basically everything but the actual tortilla, which I rarely like, so they are perfect. In order to save some money, I decided to make our own burrito bowls, also known as salads. Winking smile

My burrito bowl was a pretty easy mix:

Chopped romaine (I so prefer eating salad that is chopped into small pieces)

1 1/2 cups of black beans that had been soaked and slow cooked with chili and garlic powders, canned are also fine

1/2 of a ripe avocado

Homemade lime crema – This is why I am blogging about the burrito bowls. It is my new favorite salad topper and veggie dip. I added the juice of a very juicy lime to a cup of Fage Greek yogurt, added a few teaspoons of olive oil to get a more dressing-like consistency, sprinkled in chili powder. . . and wanted to lick the bowl clean!

Bright, colorful, delicious, and full of vitamins, protein, and filling fats – the perfect meal for me.

Kicking the New Year off with a leisurely brunch has become a tradition of sorts with us. In past years we have cooked at home or gone to Masa; this year I decided to mix it up and put the Boston brunch question out on Twitter. I received a few responses, but when Susie mentioned that Papagayo had a brunch buffet for $20.12, all you can eat, I was sold.

Papagayo is within reasonable walking distance to our home, so the initial plan was to walk over, being that New Year’s Day was warm and all. My bronchitis or whatever I have had forever had other ideas, so we opted to drive. The best thing about New Year’s Day? Boston was SO quiet, there was plenty of street parking, and we easily got a table at brunch. My only gripe with Papagayo during our great experience was that, in an empty dining room, they seated us right next to another table. I understand not wanting to have a server run around too much, but giving us even one table as a buffer would have been nice. I like my space.

Papagayo, located in Boston’s Fort Point neighborhood, is brightly decorated, and they use the high ceiling, urban space very well. Exposed brick and pipes overhead give it a cool, industrial look, while all of the paint and pictures make it feel like a fiesta. I loved it.

Our waiter was incredibly friendly and helpful. First up were our orders for Bloody Marys. The brunch included a make-your-own Bloody Mary (or Bloody Maria) bar, so instead of ordering a drink, you just ordered vodka or tequila, and it was brought out over ice in a pint glass. I got the vodka, and my husband got tequila, and we were off to mix up our drinks!

The bar featured tomato juice or V8 or a special house Bloody Mary mix, which we both went with. There was also horseradish, a large variety of hot sauces, veggies like carrots and jalapenos for garnishing, and a spice table with garlic powder, celery salt, and other add-ins.

I added a heaping spoonful of horseradish to my drink, along with some hot sauce, garlic powder, jalapenos, and a squeeze of lime. It was so much fun to be able to make our own drinks, and they were delicious!

The brunch buffet was beautiful and replenished with fresh food a couple of times during our meal. I grabbed some of the chicken chilaquiles, Mexican eggs Benedict (YUM), chipotle potatoes, and of course, the Alote a la Parilla, grilled corn with salty Mexican cheese. This plate was more than enough for me, but I also had a couple of bites of slow cooked, tender short ribs topped with fresh salsa. Everything was delicious.

I would definitely return to Papagayo for brunch, but I do hope they offer the option to order off of the menu. As someone who fills up fast, all you can eat doesn’t really appeal that much to me. We caught a glimpse of their tableside guacamole and tequila bar, and we are definitely interested in checking that out.

All in all, Papagayo was a fantastic experience, and I would highly recommend it for brunch in Boston.
