Eggplant Lasagna

There’s food in our kitchen again! Summer definitely kicked my love of cooking out the door for awhile, but I have been slowly meal-planning again, looking forward to spending time in the kitchen chopping, combining flavors, and looking forward to something delicious.

I’ve also been trying to create meals that are both comforting and healthy. As I round the bend to the final stretch of NYC Marathon training, I am feeling exhausted, and I could just chow on fries for all meals. Add in some coffee and maybe a little cake, and I would be all set.

Thankfully, there are lots of great blogs to inspire me. I’ve been loving the Detoxinista, and recently I made an eggplant-based lasagna based on her eggplant and goat cheese lasagna.

The cheese filling in this lasagna, a goat cheese and cauliflower puree, is the creamy, delicious highlight, sneaking in nutrients and fiber without taking away any scrumptiousness.

I started by prepping my eggplant. I cut it into thin slices (they should have been thinner), and marinating them in balsamic vinegar.

Next up, I prepped my “meat”, chopped mushrooms sautéed with garlic and onions with a bit of pepper and salt.

Then came the goat cheese and steamed cauliflower, which I mixed with oregano, basil, and garlic. Then I had a big spoonful before adding two eggs to bind the mixture together. I think these would make a great pancake appetizer with the eggs or a great veggie side dish on their own.

When all of the pieces were ready, I started to layer, first some Bobby D.’s Angry Sauce (which was not at all spicy, sad), then eggplant, cauliflower cheese, mushrooms, sauce, repeat. I baked the whole dish at 425 degrees for about 50 minutes, keeping an eye on it until the sauce was bubbling nicely. The final layer of cheese on the top should be nicely browned; if not a few minutes under the broiler can help.

A side note about the above sauce: after getting soaked on a bad run, freezing to death in the air-conditioned grocery store, and ruining my phone and a paycheck in the downpour, I was walking home with this sauce and it crashed through my grocery bag and hit the ground.

Thankfully it didn’t break; the bottom cracked and the lid was crushed. The worst part? The college kids walking behind me laughed at me! The day of this dinner didn’t start very well, but luckily it ended with a cozy dinner.

This lasagna is definitely something I will be making again. Even though it was noodle-free, the cheese and mushrooms really made it satisfying and filling.

I had a great meal planned for last night. Slow cooked ginger scallion pork was to be turned into pan fried dumplings with crunchy sesame cabbage. That dish will happen, perhaps tonight. But the two of us were so under the weather, that even the thought of the smell of the pork made me want to faint. I didn’t feel like eating anything with meat in it, and my poor husband could not fathom the thought of food at all. So instead of making cute little dumplings, I instead dug into my Wine & Food Affair cook book once again, and came out inspired by a recipe for ratatouille with lemon pepper polenta.

I decided to make it with lemon pepper quinoa and veered off on my own, making a massive pot of food that will be good for us, once our appetites are back. In the interest of full disclosure, I should tell you that while I was cooking, I may have snacked on a Syrah chocolate cupcake and ruined my appetite for dinner. The fudgy goodness was worth it.

My ratatouille was a simple mix of chopped eggplant, zucchini, and red pepper, a bunch of dried herbs and spices, and a can of diced tomatoes, juice and all.

Since I abhor eggplant that is not cooked all the way through, I started it sizzling by itself in my Le Creuset French oven, coated by a generous drizzle of olive oil. As you would imagine, the eggplant started soaking up the oil, and after awhile, I just had to add some wine, leftover Syrah from the cupcakes. Wine always comes in handy.

I cooked and cooked the eggplant, then poured in the tomatoes and cooked it for about 20 more minutes, slowly adding dried oregano, garlic powder, and this Napa Valley herb mix that includes lavender and dried lemon peel.

I added in the zucchini and peppers, stirred it up, and then let it simmer for 30 more minutes. Somehow, the eggplant still was not cooked enough for my liking!

While the ratatouille simmered, I started on my quinoa. I simply made it according to the package directions, then, at the end of cooking, added the juice of one juicy lemon and about a teaspoon of freshly ground black pepper.

I served a ladle of the ratatouille atop the peppery quinoa and garnished it generously, very generously with kalamata olives. I could eat olives with everything. These kalamatas from Mezzetta are incredible.

There you have it, my Meatless Monday meal. It was nice to get a bunch of veggies and grains in. Fingers crossed I will not follow suit with the rest of my family and many of our friends who have been stricken with the stomach flu. I will stick with a regular old sniffles, cough, aches and pains flu, thankyouverymuch.

Last year, I participated in Med Month with a delicious recipe that pulled together some of my favorite parts of the Mediterranean Diet Pyramid including salmon, olives, tomatoes, and of course, wine. When asked to participate again, I jumped at the chance and hope to have several recipes and maybe even a couple giveaways for Med Month.

Last night’s dinner was centered completely around Med Month. I will be posting the main course tomorrow morning, but thought I would share this easy, delicious dip that I also served.

It started with a large eggplant which I sliced into disks, generously salted, and set aside for about 30 minutes to get rid of the bitterness.

While those were hanging out, I started getting my grill pan hot and placed on it 3/4 of a yellow onion, in thick slices. I also gathered the rest of my ingredients, cumin, a red chili pepper, and olive oil. Lots of olive oil.

Once the onions were grilled, I rinsed the eggplant, rubbed a bit of olive oil on the slices, and grilled them until soft. Grilled eggplant is amazing.

To make the dip, I waited until the onions cooled, then added them, along with the red chili pepper and a teaspoon of cumin and 1/4 cup of olive oil to my food processor.

I pulsed it until the onions were completely pulverized and then added the eggplant. A minute of pureeing later, I had a creamy, spicy eggplant dip that was perfect with our dinner.

This dip would be great for a Mother’s Day dinner, served with pita chips and veggies or atop grilled chicken or vegetables in a sandwich.
