Planning your St. Patrick’s Day menu? Below you will find an easy dessert that consists of just four ingredients (more, if you like add-ins like raisins and nuts), and requires no baking. It’s a bit lumpy and bumpy which makes me love it all the more; it’s Irish biscuit cake, a popular favorite in Ireland and the groom’s wedding cake for the royal wedding of Prince William and the lovely Duchess Kate.

Before we dive into the biscuit cake, here are a few ideas for your St. Patrick’s Day feast.

As long as you don’t call anything a car bomb, you’ll be all set.

Back to the biscuit cake, which could not be easier. I used a recipe from Kerrygold, omitting the hazelnuts because I forgot to buy them.

First you’ve got chocolate.

And then there’s golden syrup. I got this in the Irish section at our local grocery store. I am guessing that grocery stores across the US don’t have Irish sections (which makes me even happier to live in Dorchester), so you can also use honey or corn syrup. I’d recommend finding golden syrup though, as it has a lovely, slightly burnt caramel flavor. Someone had to lick the spoon. . .

The final two ingredients are Kerrygold butter and rich tea biscuits. Thankfully, the recipe only used about half the sleeve, which means we have biscuits for tea for the rest of the week.

To make this dessert, you simply need to melt the butter, chocolate, and golden syrup together, either in the microwave or over a double boiler, then fold in broken biscuits. You can also add nuts and raisins, depending on your preferences. It’s that simple.

Once the ingredients are combined, pour into a wax paper lined container, and let cool until completely firm.

After a long boat day, easy meals are key. Usually, we end up ordering from Shanti, our favorite Indian restaurant, stopping by Savin Bar + Kitchen, ordering sushi from Van Shabu, or just eating random stuff around the house.

Lately I have been on a mission to eat better and to spend less on takeout that we sometimes don’t even really want. Planning ahead for meals that require a few ingredients and minimal preparation is key. This past weekend, after a long hot day out, I headed home and after a little shower and rest, I put together a pretty spectacular meal, if I do say so myself.

All it took were a couple of beefsteak tomatoes cut into thick slices, a red onion, also cut into thick slices, a handful of gorgonzola cheese, a splash of balsamic from our trip to Eataly, and a good steak from Whole Foods.

Since it was raining, we pulled out the indoor grill pan and threw on the steak, simply seasoned with pepper on both sides. Next up, I grilled the onion, just so that it was a little soft on the outside. I like onions to still have a little bite when cooked.

Finally, I put the tomato on the grill pan for about 30 seconds before taking everything off and assembling stacks of tomato, steak, and onion, topping each with a handful o gorgonzola and a drizzle of balsamic.

This dinner took less than 20 minutes, but it felt like a fancy restaurant meal. Good ingredients, simple preparation, and flavors that go well together all made for a delicious dinner. I love summer.

I have a confession. I really like Sandra Lee. Don’t stop reading, please! I know she is the love-to-hate of the Food Network, and I once thought I found her annoying. That is until I learned about how much charity work she does after growing up in pretty intense poverty. And then one day a couple of months ago, I was on JetBlue watching Food Network when I watched her show and found inspiration for a few great recipes that were fairly healthy, involved fresh ingredients, but that were not perfectly, completely, spend your whole evening in the kitchen homemade. Feeling pressure sometimes to do it all, I appreciate her 70/30 store bought/fresh combo every once in awhile

And when I found out her influence on her boyfriend, NY Governor Cuomo, helped to seal Marriage Equality deal for the state, I loved her even more. I am now officially a fan.

In that particular episode I was inspired by a recipe for sugar snap peas with red pepper, and Thursday night I used that inspiration to make a quick, healthy, and completely flavorful dinner.

I started by cutting the little end pieces off of the peas and pulling off those pesky strings.

Then I chopped up a small jar of roasted red peppers and got the ingredients for my sauce together. It was a spicy, salty, sweet mix of tamari soy, habanero hot sauce from Trader Joe’s (according to them 11 on scale of 1-10 in hot), honey, and sesame oil.

I quickly chopped two chicken breasts left over from the tortellini salad, and I tossed everything in a pan to get cooking.

Once the chicken was fully cooked, I tossed all of the ingredients and let them simmer in the shallow sauce for a few minutes. It thickened nicely and smelled of the nutty sesame oil in the pan.

Holy spicy! I can take the heat, but I may have overdone it with the habanero sauce. . . nah not really. I may have made the hubby sweat, but I love a dish that can make my mouth burn. It was perfect, the honey being a great balance to the hot.

I’ll be looking for more easy dishes like this as life keeps getting crazier, and a lot of my inspiration just might come from Sandra Lee.
