Planning your St. Patrick’s Day menu? Below you will find an easy dessert that consists of just four ingredients (more, if you like add-ins like raisins and nuts), and requires no baking. It’s a bit lumpy and bumpy which makes me love it all the more; it’s Irish biscuit cake, a popular favorite in Ireland and the groom’s wedding cake for the royal wedding of Prince William and the lovely Duchess Kate.

Before we dive into the biscuit cake, here are a few ideas for your St. Patrick’s Day feast.

As long as you don’t call anything a car bomb, you’ll be all set.

Back to the biscuit cake, which could not be easier. I used a recipe from Kerrygold, omitting the hazelnuts because I forgot to buy them.

First you’ve got chocolate.

And then there’s golden syrup. I got this in the Irish section at our local grocery store. I am guessing that grocery stores across the US don’t have Irish sections (which makes me even happier to live in Dorchester), so you can also use honey or corn syrup. I’d recommend finding golden syrup though, as it has a lovely, slightly burnt caramel flavor. Someone had to lick the spoon. . .

The final two ingredients are Kerrygold butter and rich tea biscuits. Thankfully, the recipe only used about half the sleeve, which means we have biscuits for tea for the rest of the week.

To make this dessert, you simply need to melt the butter, chocolate, and golden syrup together, either in the microwave or over a double boiler, then fold in broken biscuits. You can also add nuts and raisins, depending on your preferences. It’s that simple.

Once the ingredients are combined, pour into a wax paper lined container, and let cool until completely firm.

So simple. So delicious. The easiest way to quickly answer almost any dessert craving.

After missing the desserts at Tico on Tuesday, I had a nagging craving for peanut butter and chocolate. Add that to a random cheesecake craving and the inability to leave the house, and you have one hungry, bored, brainstorming blogger.

I don’t even remember where I got the recipe, but last year at one point I made Oreo cheesecake bites, simply by mixing cream cheese and crushed Oreos in the blender. May sound gross to some, but I am a cream cheese fiend, and it certainly did the trick for me.

Enter the peanut butter chocolate cheesecake bite.

Start with one package of cream cheese, left out at room temperature until really softened.

Grab a few spoonfuls of peanut butter.

And as many chocolate chips as you desire.

And mash it all together in a bowl or mixer. Believe it or not, in my current flu-induced state mixing this made me tired.

Once the ingredients are blended to your liking, give it a few tastes to make sure there is enough of everything. This recipe is so easy because it is totally up to your palate to decide.

Refrigerate the mixture for at least an hour so that it is nice and firm, and then start scooping. I used the measuring spoon from the Foodbuzz swag bag. It made a neat little ball that was easily popped out. You could also use a small ice cream scoop or melon baller or even just your hands.

After I was done, I thought these little cheesecake bites might look better if I rolled them in the chocolate chips, rather than mixing them in. But, we were the only ones eating them and they were good enough for us.

These cheesecake bites are not super-sweet, but if you preferred them sweeter I am sure a little confectioner’s sugar would do the trick. I am also thinking these would be great with Nutella instead of peanut butter, rolled in cocoa powder instead of chocolate chips. The possibilities are endless!

When it comes to rice pudding, I feel as though people either love it or hate it. I happen to love a well-made rice pudding, one that isn’t too sweet or too overwhelmingly creamy. Since I have been experimenting with different dessert creations as of late, I decided this week to make a little rice pudding utilizing coconut milk and Basmati rice, two ingredients that I had in the house. It started with two basic building blocks and then took on a life of its own.

Into the pot went a cup of Basmati rice, 13.5 ounces of coconut milk, a teaspoon of sugar, a dash of fresh cinnamon, a dash of fresh nutmeg, and a bit of water. I brought it all up to a boil, then turned it down and let the rice simmer, tasting it as I went along until the rice was done to my liking. I enjoy it slightly al dente, but if you prefer creamier rice, you can always add a bit more liquid and cook longer.

When the rice was just about done, I poured in a shot of rum, stirred thoroughly, let the rice simmer for another minute, and then turned off the heat. Right before I turned off the heat, I added in a handful of golden raisins. I am almost out of these, and I need to stock up!

Mount Gay Rum

The rum cooks off leaving just a hint of flavor that goes marvelously with the coconut milk. Since there is very little sugar in the recipe, the pudding isn’t very sweet, but what it lacks in sugary sweetness, it makes up for in delightful tropical tastes.

I had a small bowl of this rice pudding with my kale smoothie and some almonds for a pre-workout breakfast, but it is also delicious as a dessert, warmed and topped with dark chocolate shavings.

Not bad for a “clean out the pantry” sort of recipe!
