Carb loading? Why yes, yes I am. It’s Boston Marathon season, and the best part of carb loading is the beer  pasta!

I’m actually not a huge fan of carb-y things in general. I skip the bread basket and don’t go crazy for bread or pasta unless it’s really good and usually homemade. But every now and then I get a pasta craving, and a chilly Sunday afternoon was the perfect time to let a pot of sauce bubble away.

As I mentioned earlier in the week, I unexpectedly ended up having a VERY frustrating work day on Sunday, and going into the kitchen to chop onions and pound chicken tenders was the perfect release. It’s been a week of business lessons for me, the main one being, get everything in writing. Everything.

I wanted to make a really rich and delicious tomato sauce so I started with some anchovies. This was actually my first time cooking with anchovies, and I was surprised that they didn’t smell at all.

I melted them down in a bit of olive oil with a ton of garlic and onions. Ahhh. . . the sizzling sounds and the garlicky, nutty smells. They truly transformed me from my funk, at least until I checked my email again Smile.

When the onions were soft, I poured in a can of crushed tomatoes and added a few spoons of tomato paste. I also added a few pinches of salt and a hefty shake of crushed red pepper.

Next came the chicken. I wanted chicken cutlets, but I accidentally bought these tenders. They were just fine; I took some of my frustration out on them to get them the same thickness, then dunked each one in flour, egg, and Italian bread crumbs.

After browning them on each side, I popped them in a 350 oven to cook through while I got my pasta going. I love these little pasta nests.

My chicken came out golden brown, the pasta perfectly al dente, and the sauce packed a flavorful punch.

I topped my bowl with some parmesan cheese, curled up on the couch, and enjoyed a leisurely Sunday evening.

Buying food is one of my favorite things to do, right up there with tasting wine and visiting places where wine is made (or where food is made!). Saving money on day-to-day things so that I can do the above is also a favorite of mine, so I am always on the lookup for bargains and often compare prices from store-to-store.

Back in October, the Target in the South Bay Shopping Center in Dorchester got all fancy and became part-grocery store. South Bay is not one of my favorite places; it can be downright chaotic, but it’s close, and as much as I love me a small, local store, I do love Target.

And their grocery section is good! They have a lot of great deals, especially for their Archer’s Farms brand. A favorite this time around? Strawberry Cheesecake yogurt. It really tasted like cheesecake and made for a nice little Monday breakfast with some walnuts.

Target had some of my favorite things, including these addictive sweet peppers.

While I was making dinner, I kept washing and eating them raw. I had to make myself save some for the chicken, which turned out to be skillet chicken with sweet peppers, tomatoes, and goat cheese.

I was happy to see that Target offers some humanely-raised chicken. It was a little more expensive, but this is one of the places I am willing to spend more.

Here you see the chaos of my cooking station. I try to get lunches and dinner done at the same time. And eat olives while I cook.

The chicken was a really simple preparation. I threw it and a lot of olive oil into a pan and got it cooking. I wanted to make sure the outside got golden brown.

When both sides were cooked, I added in grape tomatoes that were getting to that wrinkly point and the chopped sweet peppers. I topped it with a little more olive oil and some garlic powder and let it cook away while I made some spinach with lemon and garlic to go underneath.

It always amazes me how spinach cooks down. An entire bag of fresh baby spinach made two teeny servings. It was good, but I want more spinach!

Once the chicken and vegetables were cooked I put them on top of the spinach and then topped the whole thing with goat cheese which started getting nice and melty with the heat. After feeling icky for days, this bright meal was just the thing to help boost my energy. I am having daily freak-outs about my inability to run, with the marathon coming up more quickly than I would like. I am hoping some good eating and a little more rest will have me back to normal soon!

Busy, busy, busy. The next five to six weeks are going to be full of marathon training workouts, new work, blogging and social events, and travel. Keeping on an eating budget and making healthy meals is still a priority, so on our most recent Market Basket trip, we kept an eye out for some affordable shortcuts. The Market Basket in Woburn was in-freakin-sane on Sunday, I have to tell you. I witnessed one fight and got yelled at by an elderly man because apparently my cart was at an angle he didn’t like.

Don’t mess with me when I am picking out bananas.

As always, my paltry patience somehow prevailed, and we got some great stuff, including a rotisserie chicken that was on super sale. The smell of the chicken was pretty enticing, so it was easy to add one to our overflowing cart.

I already had a giant pot of kale and three bean chili set up to cook for Sunday dinner, so I decided on a Monday night chicken salad for the rotisserie chicken.

Chunky Chicken and Fruit Salad

The ingredients:

1 rotisserie chicken, meat removed and chopped into chunks

2 medium apples, chopped

1 /2 cup each dried cranberries and dried cherries

1/4 medium red onion, chopped

3/4 cup Fage Greek yogurt (I used 0% because it was on sale, but I prefer 2%.)

Assembling this salad was, of course, very simple. I made it during my lunch break, added some salt and pepper, and let it chill until dinner time when I served it on a whole wheat ciabatta, also on sale at Market Basket. I also made a giant batch of simple roasted broccoli, mostly because I wanted to stand next to a 420 degree oven. And also because we needed greens, of course.

Everything about this salad said summer, so it was a nice treat. Lots of crunch and chew from the fruit, and it had a nice zing from the onion. I love Greek yogurt for recipes like this; I planned on adding a few spoons of mayo, but it just didn’t need it.

Healthy, simple, make-ahead, it was just what we needed. I have a dinner out tonight and another tomorrow, so luckily there are chili and chicken salad leftovers for the husband.
