Brunch is, for many of us, the best meal of the week. With the temperatures dipping and the holiday crowds in full force, brunch at home can be just as leisurely as brunch out, if not more so this time of year.

For the Boston blogger potluck last weekend, one of the dishes I made was a simple, delicious tortilla española. This make-ahead dish is easy, and it is ideal to make ahead of time. I was still eating leftovers days later, and it tasted great.

I started by thinly slicing 6 small potatoes. I like this multi-colored medley from Trader Joe’s.

After patting the potatoes dry, I lightly salted them and put them into a pan of hot oil. Most of the recipes I read called for several cups of oil, but I used less than half a cup. This helped me to lightly brown the potatoes on one side, but it didn’t really fry them. Confession: lots of hot oil scares the bejeezus out of me. I am always terrified of a fire or it splashing up in my face.

As the potatoes browned, I laid them in a layer at the bottom of a glass baking dish.

After the potatoes were done cooking, I let them cool while sautéing a medium yellow onion, chopped into small pieces. I cooked the onion until translucent and then let that cool a little before pouring in 6 beaten eggs. I stirred the onion, eggs, and freshly ground black pepper, then poured it in over the potatoes. A traditional tortilla calls for stovetop cooking, but I decided to bake this in the oven, a method that required less of my attention.

I baked it for about 30 minutes at 350 and then put it under the broiler on high for 3 minutes to brown the top.

I served this with a side of sriracha aioli, a simple mix of sriracha and mayonnaise.

Add in some fresh fruit, some great bread, and a couple of mimosas, and you have brunch in your pajamas for a fraction of the price of going out!

My brunch will definitely be spent at home this weekend. Looking at my calendar, life gets crazy starting this week. I am looking forward to lots of fun including:

Despite some of the stress that has creeped in here and there, taking a little hiatus from the rat race does have its perks.

1. It allows you to tackle big household projects that you would just never do while working full time. Just this week I cleaned and almost completely emptied one of our closets, making room for a new set of drawers and a much more organized setup. In the process, 5 bags of clothes went to Goodwill.

I also was able to clean out an entire bookshelf, relocating some, donating others, until I had the perfect shelf for my kitchen.

Instead of being hidden away, my cookbooks, recipes, and some beautiful pieces of glass and handmade doilies from my nana now have a prominent place.

2. Speaking of cookbooks, being home more often definitely gives you more time to cook. Up this week? Shitake polenta, lentil pumpkin burgers, slow-cooker pulled pork tacos, and a few other fun things.

3. You can work out whenever you want. Unless you have lingering pneumonia symptoms that pop up as soon as you try to break a sweat. Friday’s run was a major fail and reminded me how long this dastardly illness is lasting, even if my major symptoms are gone. Still, I got to the Copley Farmer’s Market in record time and got to cool down while enjoying the bounty of local fall produce like mushrooms, Brussels sprouts, shallots, and herbs from Siena Farms and pillowy, fresh pita bread from Sofra.

4. When you spend the whole week at home, you can get everything done, cleaning, laundry, food prep, so that when the weekend rolls around you can actually spend quality time with your loved ones. Photos are from Jamaica Pond yesterday, a gorgeous November afternoon.

5. There’s more time to volunteer. I love getting to walk the dogs and play with the cats at the MSPCA which happens to be FULL of homeless pets right now. It is easily the highlight of my week.

6. Weekend brunch feels more relaxed. Post-Jamaica Pond walk, we had an amazing brunch at the Aquitaine in Chestnut Hill. I forgot to take a pre-brunch photo, and this was all that was left of my Eggs Benedict Provencal. Most definitely one of the best brunches in the Boston area.

7. You have more time to go to great wine tasting events like the La Spinetta winemaker tasting at The Urban Grape. Not only did we taste through a lineup of delicious La Spinetta wines, but they were poured by Giorgio Rivettim the winemaker. And he signed our bottle of Moscato d’Asti, a clean, light, bubbly white that he referred to as breakfast wine.

I won’t get too used to it as I hope to have some fun projects to work on soon, but it certainly has been fun for the most part!

Today I have brunch at East Coast Grill with the Boston Brunchers, a visit to family, and hopefully some sort of light workout. What are you up to this lovely Sunday?

Bloody Mary not required, but highly recommended. Winking smile Last night I was feeling very under the weather and wanted some comfort food which, for me, often ends up being breakfast food. I had eggs in mind as I have really been enjoying a diet higher in protein lately. A little extra meat, beans, dairy, or eggs has been helping me to feel full, and with marathon training around the corner, I need that.

I browsed the interwebs for “easy quiche” recipes and was surprised to find a bunch that involved mixing biscuit mix right in with eggs and other ingredients. I was a bit skeptical, but since I was so tired and hoping for an easy dinner, I gave it a go. As always, I used a variety of recipes as a base, then made my own mixture up.

In my mix:

4 eggs

1 cup multi-grain baking mix

1 cup milk

1/2 cup grated Cabot jalapeno cheddar

2 cups chopped spinach

3 pats butter

garlic powder and black pepper to taste

I mixed the eggs and spinach together with garlic powder and pepper, then separately mixed the baking mix, butter, milk, and cheese. Before I poured them into a lightly greased pie plate, I thoroughly blended the two bowls.

Yes, that’s butter floating around in there, but don’t worry, it ends up being a teeny bit over the whole dish.

I cooked this at 350 for 40 minutes, then used the broil setting on high for a few minutes, until the smoke alarm went off. That tells you it’s done Smile

As you can see, the quiche was nicely browned on top and had that yummy brown butter flavor. And much to my surprise, the baking mix sunk to the bottom and made for a light and buttery crust. Talk about a lazy girl’s brunch dish! I served this with multi-grain toast, and we really did have Bloody Marys.

I mix in tomato juice, lime juice, Ketel One vodka, juice from my Mezzetta pepperoncini jar, horseradish, black pepper, and hot sauce. Delish!

I love the ease of this meal, how delicious and filling it is, and that it gave us leftovers for lunch. I simply can’t get ride of my lingering cold and am feeling super lazy!

Today begins the final countdown. . . one week of work left! Wahooo!

I am also very excited about Blogtoberfest and trying Ginger Park tonight.
