Fresh baked scones anyone? Banana and chocolate together is definitely one of my favorite sweet flavor combinations. In the past, I have enjoyed the two together in banana bread, ice cream, and more recently in my farina cereal in the morning. With a cancelled conference call yesterday afternoon and much of my to-do list done before 11, I decided to search for a recipe for banana chocolate scones, and it was my luck that I came across a recipe from the Culinary Institute of America, Greystone, a place we had lunch last year.

I followed the recipe except for the hazelnut part as we did not have hazelnuts in the house. I am certain they would be amazing in this recipe.

It was very easy to follow. I started by mixing up my dry ingredients. I used whole wheat flour in lieu of all purpose flour as we are out of the all purpose. I am actually pretty surprised I went through an entire bag of flour. The newfound baker in me is on a roll!

When the dry ingredients were mixed, I added in the cold butter. I always dread this part of baking as I just can’t seem to get it right. I don’t have the special tool you can use to integrate the butter, so I got my hands in there, pinching the butter and flour mixture until it was like sand.

After adding the liquid ingredients, vanilla and buttermilk, it was just a quick mix before the dough was ready. My dough was a little bit wet, but I was able to make roughly shaped scones out of it.

Into the oven they went, and in 20 minutes they were done.

These scones are amazing! Flaky and light and dotted with rich, dark chocolate and soft, gooey banana, they are fine on their own and even better topped with a little Kerrygold unsalted butter and a sprinkle of sea salt. As I have mentioned in the past, I am not a huge breakfast fan, especially when it comes to sweet breakfasts, but I am definitely going to enjoy these scones with my morning tea. It’s nice to have a little something to look forward to in the morning!

Banana Chocolate Scones from The Culinary Institute of America

1 ripe banana (4 ounces), quartered lengthwise and diced
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
2 tablespoons sugar
4 ounces (1 stick) cold butter, cut into 1/4-inch cubes
1/2 cup toasted hazelnuts, crushed or chopped
1/2 cup finely chopped semi-sweet chocolate, or semisweet chocolate chips
1/2 teaspoon vanilla extract
3/4 cup buttermilk more as needed to brush the scones
Coarse sugar as needed

  1. Preheat oven to 375° F. Place the diced banana in the freezer until ready to use in step 2.
  2. Place the dry ingredients in a 4-quart mixing bowl and whisk thoroughly to combine. Cut in the cold, cubed butter with a pastry blender, or rub in the butter with your fingers until the ingredients resemble a coarse meal. Add the chopped chocolate, chopped hazelnuts and diced banana, and toss to blend.
  3. Combine the vanilla extract and buttermilk. Make a well in the center of the bowl and pour in the buttermilk. Using a rubber spatula, fold the ingredients together to form a “shaggy mass”. Gently compact the dough into a ball, but do not over-mix.
  4. Transfer the ball to a clean, floured work surface and flatten it into an 8-inch disk, approximately 1-inch thick. Cut the dough into 8 equal wedges, and carefully transfer them to a parchment-lined baking pan, evenly spaced.
  5. Just before baking, brush the scones lightly with buttermilk and sprinkle with coarse sugar. Bake the scones for 15 to 18 minutes, or until browned at the edges. Transfer the scones to a rack and cool for 10 minutes before serving

Tired Food

We’ve all had those nights, the ones where the day (or week, in this case) has really caught up with you. Forget blogging, getting into the kitchen to make something to eat seems to daunting, and going out to eat somewhere requires too much contact with the outside world. All you want to do is flop down on the couch, throw your arms up in the air and stop thinking and doing. This week has been an intense roller coaster of interviews, fun meetings and projects, life decisions, disappointments, fears, and excitement, and I definitely had a couple of nights where I couldn’t do anything else.

One day, we ordered from our local pizza place, Pantry Pizza, and the other day I used fridge staples to try to recreate a sandwich we had at a farmer’s market in Marin.

Not healthy, but oh-so-good, a bacon and egg grilled cheese made with turkey bacon and Kerrygold Killaree cheddar.

It was as easy as it sounds, a few slices of fried bacon, added to a couple of fried eggs.

On top of buttered slices of bread, topped with melted cheddar, heated on both sides until gooey and golden brown.

Simple. My other simple meal was a new favorite sandwich from Pantry Pizza, far too messy to photograph, a vegetable parmesan sub consisting of a whole bunch of vegetables like broccoli, carrots, and peppers, topped with tomato sauce and cheese, then stuffed with pickles, onions, lettuce and raw tomatoes. Amazing.

I am very ready for the weekend; it truly can not get here quickly enough.

Ready for a spring health challenge update? I am having a pretty awesome week, and I have to chalk at least part of that up to the fact that I started making a bunch of little changes as soon as we returned from California last week.

California Mexican Food

More on those changes in a bit. One big change that I have been trying to make for quite some time is eating breakfast. I don’t love eating in the morning, but almost daily I find myself at 11:00 and literally shaking from not eating because I just wasn’t hungry earlier. No bueno.

As the above photo might indicate, we ate quite a bit of Mexican food in California, some healthy, some topped with cheese and sour cream, and some in-between. California Mexican food is SO GOOD, and we actually found ourselves eating it in lieu of big meals and expensive dinners. It was just what we wanted.

One morning, I woke up craving black beans, so we made our way to a little Mexican restaurant near our hotel. I was so hungry that I didn’t even take photos. The hubs had a traditional breakfast burrito, and I ordered a plate of black beans with a side of guacamole. With several types of salsa from the salsa bar, I discovered the perfect breakfast. I love the texture and the spice and the satisfying protein, fiber, and fat in this breakfast, and I have eaten it twice since we returned.

The other days I have been eating coconut mango oats . It’s amazing how much better I feel when I eat in the morning and how much more energy I have. Who would have imagined?! Winking smile 

In other health news, I have been drinking more water, thanks to a new co2 container for our Sodastream and have resumed my twice-daily green tea habit.

I have successfully added more protein to my diet through a few different channels, including Trader Joe’s vanilla whey protein powder. I am having a scoop of this in a glass of milk for part of my afternoon snack, and I am finding it fills me up.

Most of all, I have completely changed up my workouts. As I mentioned earlier in the week, I did Jillian Michael’s Yoga Meltdown on Sunday. In addition to that I have done a two mile speed workout and two 25 minute weights sessions, doing a lot of planks and squats and getting all sorts of sore!

I don’t know if it’s just me, but I start to notice a difference almost immediately when I start strength training, as opposed to focusing more on cardio. The clothes that were not quite fitting fit again, and I feel so much more energetic and strong. That said, I am pondering the idea of entering a few 5k’s just to see if this girl can run fast.
